Karivepillai in Tamil means black neem as the appearance of the leaves look similar to the neem leaves.

The small and narrow leaves somewhat resemble the leaves of the Neem tree; therefore they are also referred to as Kadhi Patta (Hindi), Mithho Limdo (Gujarati) Kadhielimba (Marathi), (Patta meaning leaf and Kadhi being a popular dish that consists of a thin soup or stew made from yogurt, among dishes this leaf is used to spice) Karivepaku in Telugu (aaku means leaf), Karuveppilai (translated to Black Neem leaf) in Tamil and Malayalam, Karu/Kari meaning black, ilai meaning leaves and veppilai meaning Neem leaf. In the Kannada language it is known as Kari Bevu. Other names include Karivepaku Karuveppilai, noroxingha (Assamese), Bhursunga Patra (Oriya), and Karapincha (Sinhalese).

Habitat: .The curry tree is native to India; today, it is found wild or become wild again, almost everywhere in the Indian subcontinent excluding the higher levels of the Himalayas. In the East, its range extends into Burma.

The name curry plant is often used for Helichrysum italicum (Asteraceae), a relative of immortelle; several subspecies grow in the European Mediterranean countries. The essential oil shows considerable infraspecific variation; its main components are monoterpene hydrocarbons (pinene, camphene, myrcene, limonene) and monoterpene-derived alcohols (linalool, terpinene-4-ol, nerol, geraniol, also their acetates); further important aroma components are nonterpenoid acyclic β-ketones, which give rise to a somewhat disagreeable flavour (e.g., 2,5,7-trimethyldec-2-en-6,8-dione, 2,5,7,9-tetramethyldec-2-en-6,8-dione, 2,5,7,9-tetramethylhendec-2-en-6,8-dione, 3,5-dimethyloctan-4,6-dione, 2,4-dimethylheptan-3,5-dione).

Description:
It is a small tree, growing 4-6 m tall, with a trunk up to 40 cm diameter. The leaves are pinnate, with 11-21 leaflets, each leaflet 2-4 cm long and 1-2 cm broad. They are highly aromatic. The flowers are small white, and fragrant. The small black, shiny berries are edible, but their seeds are poisonous.

The species name commemorates the botanist Johann König.

Propagation:
Seeds must be planted fresh; dried or shriveled fruits are not viable. Plant either the whole fruit (or remove the pulp) in potting mix and keep moist but not wet.
Sensory quality:
Fresh and pleasant, remotely reminiscent of tangerines.

Main constituents:
Fresh leaves are rich in an essential oil, but the exact amount depends besides freshness and genetic strain also on the extraction technique. Typical figures run from 0.5 to 2.7%.

The following aroma components have been identified in curry leaves of Sri Lanka (in parentheses, the content in mg/kg fresh leaves): β-caryophyllene (2.6 ppm), β-gurjunene (1.9), β-elemene (0.6), β-phellandrene (0.5), β-thujene (0.4), α-selinene (0.3), β-bisabolene (0.3), furthermore limonene, β-trans-ocimene and β-cadinene (0.2 ppm). Newer work has shown a large variability of the composition of the essential oil of curry leaves. In North Indian plants, monoterpenes prevail (β-phellandrene, α-pinene, β-pinene), whereas South Indian samples yielded sesquiterpenes: β-caryophyllene, aromadendrene, α-selinene. Uses:
Its leaves are highly aromatic and are used as an herb. Their form is small and narrow and somewhat resemble the leaves of the Neem tree; therefore they are also referred to as Kari Bevu, translated to Black Neem, in the Kannada language and Karivepaku in Telugu again translating to the same meaning. In Tamil and Malayalam it is known as Karuveppilai, ilai meaning leaves. Other names include Kari Patta (Hindi), Kadi Patta (Marathi), Limda(Gujarati) and Karapincha (Sinhalese).

They are commonly used as seasoning in Indian and Sri Lankan cooking, much like bay leaves and especially in curries with fish or coconut milk. In their fresh form, they have a short shelf life and may be stored in a freezer for up to a week; they are also available dried, although the aroma is clearly much inferior.

Curry leaves are extensively used in Southern India and Sri Lanka (and are absolutely necessary for the authentic flavour), but are also of some importance in Northern India. Together with South Indian immigrants, curry leaves reached Malaysia, South Africa and Réunion island. Outside the Indian sphere of influence, they are rarely found.

In Burma, however, a completely different definition of “curry” is in use: Burmese “curries” owe their flavour to a fried paste of ground onions and other spices (see onion for details). Lastly, in Indonesia, any spicy food may be termed a curry (kari in Indonesian). Sometimes, one even hears about Ethiopian (see long pepper) or Caribbean “curries”, whatever this may mean (except, perhaps, the least common denominator of all those: Spiciness).

Medicinal Uses:-

Said to be tonic and stomachic.  In India, the young leaves are taken for dysentery and diarrhea.   The leaves and the stem are used as a tonic, stimulant and carminative.   An infusion of the toasted leaves is anti-emetic.  A paste of the bark and roots is applied to bruises and poisonous bites.  The seeds are used to make a medicinal oil called ‘zimbolee oil.’  Fresh juice of the leaves mixed with lemon juice and sugar is prescribed for digestive disorders, and eating 10 curry leaves every morning for 3 months is thought to cure hereditary diabetes.  A few drops of the juice are believed to keep eyes bright.  A liberal intake of curry leaves impedes premature greying of the hair.  The leaves, boiled in coconut oil, are massaged into the scalp to promote hair growth and retain color.  The leaves may also be used as a poultice to help heal burns and wounds.  Juice from the berries may be mixed with lime juice and applied to soothe insect bites and stings.

Curry leaves possess the qualities of herbal tonic.They strengthen the functions of stomach. and promots its action.They are also used as a mild laxative.The leaves may be taken mixed with other mild testing herbs. The juice extracted from 15 grams of leaves may be taken with buttermilk.

Digestive Disorders:
Fresh juice of curry leaves and sugar,is an effective medicine for morning sickness,vomiting and nausea due to indigestion and excessive use of fats.One or two teaspoon of juice leaves mixed with teaspoon of lime juice may be taken in these conditions.The curry leaves ground to a fine paste and mixed with buttermilk can be taken in an empty stomach with beneficial results in case of stomach upsets.

Tender curry leaves are used in diarrhoea,dysentry and piles.They should be taken mixed with honey.The bark of the tree is also useful in bilious vomiting.A teaspoon of powder or decoction of the dry bark should be given with cold water in this condition.

Diabetes: Eating 10 fresh fully grown curry leaves every morning for three months is said to prevent diabetes due to heredity factors. It can cure diabetes due to obesity as the leaves have weight reducing properities.

Kidney Disorders:The root of the curry plant also has medicinal properities.The juice of the root can be taken to relieve pain associated with kindeys.

Premature Greying of Hair: Liberal intake of curry leaves is considered beneficial in preventing premature greying of hairs.These leaves have the properity of naurishing the hair roots.New hair roots that grow are healther with normal pigments.The leaves can be used in the form of CUTNEY or the juice may be squeezed and taken in buttermilk or lassi.

Burns and Bruises:
Curry leaves can be effectively used to treat burns,bruises and skin eruptions.They should be applied as a poultice over the affected areas.

Eye Disorders:
Fresh juice of curry leaves suffused in the eyes makes them look bright.It also prevents the early development of cataract.

Insect Bites: Fruits of tree,which are berries,are edible,They are green when raw but purple when ripe.Juice of these barries, mixed with equal proportion of lime juice is an effective fluid for external application in insect stings and bites of poisonous creatures.

Hair Tonic: When leaves are boiled with coconut oil till they are reduced to blackened residue, the oil forms an excellent hair tonic to stimulate hair growth and in retaining the natural pigmentation.

Habitat: Celery occurs wild in Europe, the Mediterranean region and in Asia west of the Himalayas. The ancient Greeks and Egyptians already cultivated celery. It was probably first grown as a medicinal plant, later for the leaves as flavouring. Celery has a long history in China, dating back to at least the 6th century AD. Chinese celery most resembles leaf celery. Cultivated celery was recorded in 1623 in France, where plants with a milder taste were selected from wild plants for use as a vegetable. This was the so-called stalk celery with large, swollen petioles. At the same time celeriac with its large edible tuber was selected, probably in Italy. These two types became most important in Western temperate areas. Various types of celery are now grown all over the world. Celery is reported as being cultivated in several African countries, more commonly in highland regions than in lowlands. In Africa it is occasionally found as an escape or relic of cultivation, e.g. in Eritrea, Ethiopia, Mozambique and Réunion, and more commonly in South Africa.
Description:
Celery is a biennial plant, it grows to 1 m (3.3 ft) tall. The leaves are are pinnate to bipinnate with rhombic leaflets 3–6 cm long and 2–4 cm broad., shiny top, bottom mat. Stems erect, grooved, silnovetvisty. Umbrellas are small, numerous. The flowers are small,, 2–3 mm in diameter, and are produced in dense compound umbels, white or yellowish in color. Fruits are round, small (1.5-2 mm in diameter.), Gray or brownish. In leaf and petioles of celery root system is fibrous, branched, the Root — the root fleshy, round-flat or nearly spherical.

The seeds are broad ovoid to globose, 1.5–2 mm long and wide. Modern cultivars have been selected for solid petioles, leaf stalks. A celery stalk readily separates into “strings” which are bundles of angular collenchyma cells exterior to the vascular bundles.

Cultivation: 

In North America, commercial production of celery is dominated by a variety called Pascal celery. Gardeners can grow a range of cultivars, many of which differ little from the wild species, mainly in having stouter leaf stems. They are ranged under two classes, white and red; the white cultivars being generally the best flavoured, and the most crisp and tender.

The wild form of celery is known as smallage. It has a furrowed stalk with wedge-shaped leaves, the whole plant having a coarse, rank taste, and a peculiar smell. With cultivation and blanching, the stalks lose their acidic qualities and assume the mild, sweetish, aromatic taste particular to celery as a salad plant.

The plants are raised from seed, sown either in a hot bed or in the open garden according to the season of the year, and after one or two thinnings out and transplantings they are, on attaining a height of 15-20 cm, planted out in deep trenches for convenience of blanching, which is affected by earthing up to exclude light from the stems.

In the past, celery was grown as a vegetable for winter and early spring; because of its antitoxic properties, it was perceived as a cleansing tonic, welcomed after the stagnation of winter.

There is a common belief that celery is so difficult for humans to digest, that it has ‘negative calories‘ because human digestion burns more calories than can be extracted.

Benefits of eating Clery: Celery is a wonderful low-calorie and low-fat vegetable, consisting of about 95% water. When looking at its nutrients, celery contains adequate amounts of potassium, folate and fiber. One cup of diced celery provides 344.4 milligrams of potassium, 34 micrograms of folate, 2 grams of fiber, 19 calories, and less than 0.16 grams of fat!

Celery is a great guilt-free snack item, especially if you want to lose weight. You get to chew on something that makes you think you are eating a lot, but is actually providing you with more water (which contains no calories) than calories. It is much healthier to munch on celery while watching TV, movies or videos than popcorn or chips. You will feel satisfied because you are not depriving yourself of food, but your waistline will not suffer from eating too much of it. Potassium helps control our nerves and muscles, and aids in the transmission of nerve impulses. It also helps reduce blood pressure and reduces the risk of stroke. Because lack of potassium is rare, there is no RDA for this mineral. However, it is thought that 1,600 to 2,000 milligrams a day is adequate for adults. Some research suggests getting 3,000 milligrams of potassium daily, preferably from food.

Folate is essential for the production and maintenance of new cells. It may help reduce the development of cardiovascular disease and help protect against certain cancers (like colon and rectal). Folate is also recommended for women of childbearing years to reduce the risk of birth defects. The RDA for folate is 400 micrograms a day.

The use of celery seed in pills for relieving pain was described by Aulus Cornelius Celsus ca. 30 AD Celery seed aids in the elimination of uric acid and is often used for the relief of symptoms of arthritis, rheumatism and inflammation of the joints. Its diuretic properties assist in relieving fluid retention. Celery seed also relieves pain. Celery has several applications in traditional medicine, particularly as a diuretic and emmenagogue, and against dengue fever and rheumatism.. Treatment of inflammatory complaints with celery or other Umbelliferae or extracts thereof is regulated under world patent WO 1995 00000157 A1.

The whole plant is gently stimulant, nourishing, and restorative; it can be liquefied, with the juice taken for joint and urinary tract inflammations, such as rheumatoid arthritis, cystitis, or urethritis, for weak conditions, and for nervous exhaustion.

The seeds, harvested after the plant flowers in its second year, are the basis for a homeopathic extract used as a diuretic. The extract is believed to help clear toxins from the system, so are especially good for gout, where uric acid crystals collect in the joints, and arthritis. They are also used as a mild digestive stimulant. The extract can be combined with almond or sunflower oil, and massaged into arthritic joints or for painful gout in the feet or toes.

The root is an effective diuretic and has been taken for urinary stones and gravel. It also acts as a bitter digestive remedy and liver stimulant. A tincture can be used as a diuretic in hypertension and urinary disorders, as a component in arthritic remedies, or as a kidney energy stimulant and cleanser.

Celery roots, fruits (seeds), and aerial parts, are used ethnomedically to treat mild anxiety and agitation, loss of appetite, fatigue, cough, and as a anthelmintics (vermifuge).

Nervous affictions: An abudant use of celery juice combined with carrot juice is beneficial in the treatment of nervous affictions resulting from the protective cover of the nerves.

Arthritis: Celery is useful in the treatment of arthritis due to it’s high sodium content.Its organic sodium tends to prevent and relieve the arthritic joint deposits by keeping lime and magnesia in the solution form.For optimum results , it should be taken in the form fresh extracted juice, using its leave as well as stem.

Rheumatism and gout: Celery is very effective in diseases arising from acidity and toxemia, rheumatism and gout.A fluid extract of the seeds is more powerful than the raw vegetable.

General debility: The power of the dried root extracted from the herb is an effective tonic for general debility or weakness and malnutrition.One teaspoon of this powder mixed with a teaspoon of honey is taken twice daily in such conditions.

Insomnia: Celery is also useful in the treatment of sleeplessness.Celery juice mixed with a table spoon of honey make a delightful drink. The mixture taken at night before sleeping will help one relax into a soothing and restful sleep.

Blood disorders: The herb is valuable in disease related to blood such as anaemia, leukaemia, Hodgkin’s disease, purpura and hemophilia. This plant is very high in magnesium and iron content, a combination which is valuable as a food for blood cells. The juice of celery in combination with carrot juice should be taken in the treatment of blood related diseases.

Respiratory disorders:Celery is known to have antispasmodic properties and is useful in the treatment of asthma,bronchitis, pleurisy and tuberculosis.Its seeds serves the same purpose in such diseases.

Indigestion: The seeds of celery are an effective remedy for indigestion. A teaspoon of the seeds soaked in a glass of butter milk for a night should be ground in the same buttermilk mixture and administered to relieve indigestion.

Kidney and gall stones: Celery is valuable food for those who are prone to stone formation in the gall bladder and kidneys. Its regular use prevents stone formation.

Other Different Uses:

Aroma and Flavour: Celery seeds should be used with discretion as they have a fairly strong, and sometimes rather bitter, flavour. There is no mistaking their distinctive, celery aroma.

Culinary Use: Whole celery seeds can be added to bread dough or when making cheese biscuits, and savoury dishes. A few seeds can be sprinkled over lightly boiled carrots, grilled tomatoes or salads and they are especially complementary to egg and fish dishes. Celery salt and celery pepper are both made by grinding the seeds with either salt or peppercorns in the required proportions. Use these seasonings judiciously as their flavours are strong. Celery salt or pepper is best made when required.

Medicinal and Other Use: The oil from the seeds is used medically to treat asthma, flatulence and bronchitic conditions.

Until the 19th century the essential oils was recommended as a cure for rheumatism.  It is believed to be a tonic for asthma and herbalists use it to treat liver diseases, bronchitis, fever and flatulence. It is also recommended as a diuretic, tranquilizer, sedative and menstruation promoter and as treatment for gout, arthritis, obesity, anxiety and lack of appetite.  Celery seed tea is said to promote rest and sleep.  It is good for nervous disorders and enjoys aphrodisiac qualities.  India’s traditional Ayurvedic physicians have prescribed celery seed as a diuretic and as a treatment for colds, flu, indigestion, arthritis and diseases of the liver and spleen.

Other uses: Celery can alway be eaten raw as salads or in the cooked form.Soup and juice can also be made. It is also used in flavour stews and sauces.

Caution
Cross-section of a Pascal celery stalk.Bergapten in the seeds could increase photosensitivity, so do not apply the essential oil externally in bright sunshine.
Avoid the oil and large doses of the seeds during pregnancy: they can act as a uterine stimulant.

Seeds intended for cultivation are not suitable for eating as they are often treated with fungicides.

Allergic responses
Although many people enjoy foods made with celery, a small minority of people can have severe allergic reactions. For people with celery allergy, exposure can cause potentially fatal anaphylactic shock. The allergen does not appear to be destroyed at cooking temperatures. Celery root – commonly eaten as celeriac, or put into drinks – is known to contain more allergen than the stalk. Celery is amongst a small group of foods (headed by peanuts) that appear to provoke the most severe allergic reactions (anaphylaxis). An allergic reaction also may be triggered by eating foods that have been processed with machines that have previously processed celery, making avoiding such foods difficult. In contrast with peanut allergy being most prevalent in the US, celery allergy is most prevalent in Central Europe.

Habitat :The laurel tree grows all over the Mediterranean region, with Turkey one of the main exporters. Due to poor frost-resistance, laurel is not generally native to more Northern regions, although cultivars are frequently found in cities and other warmer locations.

Etymology: The botanical genus name laurus and English laurel are derived from the Latin name of the tree, laurus. Almost all languages of Europe have related names, e.g. German lorbeer, Swedish lager, Italian alloro and Portuguese louro. The origin of laurus is not known with certainty but it is neither related to Latin laus “praise” nor loaned from Greek.
In the Ancient Greek tongue, the plant was named daphn? after the nymph Daphne who turned into a laurel shrub to escape the persecution of Apollo. Bay leaves are called dafin in Romanian, dafni in Modern Greek and defne in Turkish. There are also names meaning “leaves of Daphne”, such as Hebrew aley Daphna and Bulgarian Dafinov list.
Species name nobilis is Latin for “noble”. The English term bay leaf (Middle English baye, Old French baie) derives from the Latin bacca “berry”, referring to the fruits.

The bay tree is indigenous to Asia Minor, from where it spread to the Mediterranean and then to other countries with similar climates. According to legend the Delphi oracle chewed bay leaves, or sniffed the smoke of burning leaves to promote her visionary trances. Bay, or laurel, was famed in ancient Greece and Rome. Emperors, heroes and poets wore wreaths of laurel leaves. The Greek word for laurel is dhafni, named for the myth of the nymph Daphne, who was changed into a laurel tree by Gaea, who transformed her to help her escape Apollo’s attempted rape.

Description
The bay leaf is oval, pointed and smooth, 2.5 – 8 cm (1 to 3 in) long. When fresh, the leaves are shiny and dark green on top with lighter undersides. When dried the bay leaf is a matte olive green.
Bouquet: Warm and quite pungent when broken and the aromatic oils are released.
Flavour: Slightly bitter and strongly aromatic.
Hotness : Mild

Preparation and Storage:    Dried leaves should be whole and olive green. Brown leaves will have lost their flavour. Whole leaves are often used in cooking and crushed or ground leaves can be used for extra strength. Kept out of light in airtight containers the whole leave will retain flavour for over two years.

Uses:  Bay leaves are widely used throughout the world. It may be best known in bouquets garnis or used similarly in soups, sauces, stews, daubes and courts-bouillon’s, an appropriate seasoning for fish, meat and poultry. Bay leaf is often included as a pickling spice.

Bay leaves were considered holy and were associated with Apollo in Ancient Greece. Winners of the Olympic Games were originally decorated with a wreath of olive twigs, but this changed to laurel after the Pythian Games, conducted in honour of Apollo. Roman Emperors made use of laurel wreaths as a symbol of Apollo and bay leaves were a popular spice in Roman cookery.
Today, bay leaves are a common flavouring in all Western countries and are used for soups, stews, sauces, pickles and sausages. In addition, several fish dishes profit greatly from bay leaves. In contrast to the majority of leaf spices, bay leaves can be cooked for prolonged time without much loss of aroma. Fresh or dried bay leaves frequently appear in bouquet garni.
Fresh bay leaves are very strongly aromatic but also bitter. The bitterness is significantly reduced and flavour improved by quick drying, after plucking and sorting without exposure to sunlight. High-quality bay leaves are recognised by their strong aroma and their bright green colour. Bay leaves can be stored for a year, after which they lose their fragrance, turn brown and taste bitter.
The laurel fruits are less known, although they appear as part of commercial spice mixtures. Because of their robust taste, they fit best to strong sauces and gravies and are excellent with venison (together with juniper). Because of the popularity of bay leaves in the West, many exotic leaf spices are commonly known as “bay leaves” although not botanically or culinarily related. In Asia, the Indian bay leaf comes from a relative of cinnamon native to the Himalayas and Indonesian bay leaves stem from a tree of the myrtle family.
There are other “bay leaves” in the West including the aromatic Californian bay leaf, which is rarely found because of potential health hazards, and Mexican bay leaf which has little commercial value. West Indian bay leaves, which stem from a close relative of allspice, yield West Indian bay oil.

Medicinal Properties
In the Middle Ages it was believed to induce abortions and to have many magical qualities. It was once used to keep moths away, owing to the leafs lauric acid content which gives it insecticidal properties. Bay leaf has many properties which make it useful for treating high blood sugar, migraine headaches, bacterial and fungal infections, and gastric ulcers. Bay leaves and berries have been used for their astringent, carminative, diaphoretic, digestive, diuretic, emetic and stomachic properties. Bay Oil, or Oil of Bays (Oleum Lauri) is used in liniments for bruising and sprains. Bay leaf has been used as an herbal remedy for headaches. It contains compounds called parthenolides, which have proven useful in the treatment of migraines. Bay leaf has also been shown to help the body process insulin more efficiently, which leads to lower blood sugar levels.It has also been used to reduce the effects of stomach ulcers. Bay Leaf contains eugenol, which has anti-inflammatory and anti-oxidant properties. Bay leaf is also an anti-fungal and anti-bacterial. Bay Leaf has also been used to treat rheumatism, amenorrhea, and colic.

Bay LeafAqueous extracts of bay laurel can also be used as astringents and even as a reasonable salve for open wounds.

In massage therapy, the essential oil of bay laurel is reputed to alleviate arthritis and rheumatism, while in aromatherapy, it is used to treat earaches and high blood pressure. A traditional folk remedy for rashes caused by poison ivy, poison oak, and stinging nettle is a poultice soaked in boiled bay leaves.

The chemical compound lauroside B isolated from Laurus nobilis is an inhibitor of human melanoma (skin cancer) cell proliferation at high concentrations.

Description Of Plant :   Grown successfully in Mediterranean-like climates, the Bay is a hardy evergreen shrub that grows wild or cultivated. In warm areas it can grow as high as 18 m (60 ft). Inconspicuous white flowers arrive in clusters, in May. The fruits are small, red-blue single-seeded berries that later turn black about 12 mm (1/2 in) in size. Clean your produce

You can’t be too careful when it comes to food handling and preparation. Wash fruits and vegetables in a pot of cold water with 2-3 table-spoons baking soda; the baking soda will remove some of the impurities tap water leaves behind. Or put a small amount of baking soda on a wet sponge or vegetable brush and scrub your produce. Give everything a thorough rinsing before serving.

Tenderize meat

Got a tough cut of meat on your hands? Soften it up by giving it a rubdown in baking soda. Let it sit (in the refrigerator, of course) for three to five hours, then rinse it off well before cooking.

Soak out fish smells

Get rid of that fishy smell from your store-bought flounder filets and fish steaks by soaking the raw fish for about an hour (inside your refrigerator) in 1 quart (1 liter) water with 2 tablespoons baking soda. Rinse the fish well and pat dry before cooking.

Reduce acids in recipes

If you or someone in your family is sensitive to the high-acid content of tomato-based sauces or coffee, you can lower the overall acidity by sprinkling in a pinch of baking soda while cooking (or, in the case of coffee, before brewing). To get off annoying exterior stains, wash your pots with a plastic scouring pad in a solution of 1/4 cup baking soda in 1 quart (1 liter) warm water. Follow up with a cold-water rinse.

Remove stains from nonstick cookware

It may be called nonstick cookware, but a few of those stains seem to be stuck on pretty well. Blast them away by boiling 1 cup water mixed with 2 tablespoons baking soda and 1/2 cup vinegar for 10 minutes. Then wash in hot, soapy water. Rinse well and let dry, then season with a bit of salad oil.

Clean cast-iron cookware

Although it’s more prone to stains and rust than the nonstick variety, many folks swear by their iron cookware. You can remove even the toughest burned-on food remnants in your iron pots by boiling 1 quart (1 liter) water with 2 tablespoons baking soda for five minutes. Pour off most of the liquid, then lightly scrub it with a plastic scrub pad. Rinse well, dry, and season with a few drops of peanut oil.

Clean burned or scorched pots and pans

It usually takes heavy-duty scrubbing to get scorched-on food off the bottom of a pot or pan. But you can make life much easier for yourself by simply boiling a few cups of water (enough to get the pan about 1/4 full) and adding 5 tablespoons baking soda. Turn off the heat, and let the soda settle in for a few hours or overnight. When you’re ready, that burned-on gunk will practically slip right off.

So, be sure to give your kitchen garbage pail an occasional cleaning with a wet paper towel dipped in baking soda (you may want to wear rubber gloves for this).
