Mexican Pepperleaf (Piper auritum Kunth)
Plant family: Piperaceae (pepper family)

Hoja santa (Piper auritum, synonymous with Piper sanctum) is an aromatic herb with a heart-shaped, velvety leaf which grows in tropic Mesoamerica. The name hoja santa means “sacred leaf” in Spanish.A Mexican legend says that Virgin Mary dried diapers of the infant Jesus on the bush of this plant, hence the name. It is also known as yerba santa, hierba santa, Mexican pepperleaf, root beer plant, and sacred pepper.

The hoja santa (sacred leaf), hoja de la estrella (leaf of the star), or Veracruz pepper (Piper auritum Kunth) has a native range from southern Mexico into northern South America. It is a successional plant found in moist forests where gaps in the canopy allow some sunlight to the forest floor. Although it is considered a shade-loving plant, hoja santa will not tolerate deep shade.

Origin:
Tropic Mesoamerica (Southern México, Guatemala, Panamá, Northern Colombia).

Plant Description:
Hoja santa has a knobby herbaceous stem and grows up to six meters in height supporting itself with prop roots near the base of the stem. The large leaves arise alternately along the stem. Hoja santa blooms with a myriad of tiny reduced flowers arranged along a thin arching spike. The leaves can reach up to 30 centimeter (12 in) or more in size. The complex flavor of hoja santa is not so easily described; it has been compared to eucalyptus, licorice, sassafras, anise, nutmeg, mint, tarragon, and black pepper. The flavor is stronger in the young stems and veins The flowers consist of a pistil with a fringed stigma, two anthers, and a small peltate (umbrella-shaped) bract. The flowers are followed by a single-seeded fruit, a drupe. The seeds are dispersed by frugivorous (fruit-eating) bats.

Sensory quality:
Aromatic and pleasant, loosely reminiscent to anise, nutmeg and black pepper. The flavour is strongest in the young stems and veins, which have additionally a pleasant warming pungency.

Main constituents:
The essential oil from the leaves (0.2%) is rich in safrole (up to 80%), a substance with pleasant odour. Furthermore, a large number of mono- and sesquiterpenoids have been found

Uses:
A heart-shaped, dinner plate-sized leaf is making its way onto restaurant tables in downtown Washington.

It is often used in Mexican cuisine for tamales, the fish or meat wrapped in fragrant leaves for cooking, and as an essential ingredient in Mole Verde, the green sauce originated in the Oaxaca region of Mexico. It is also chopped to flavor soups and eggs. In Central Mexico, it is used to flavor chocolate drinks. In southeastern Mexico, a green liquor called Verdín is made from hoja santa. American cheesemaker Paula Lambert created “Hoja santa cheese”, the goat’s milk cheese wrapped with the hoja santa leaves and impregnated with its flavor. While typically used fresh, it is also used in dried form, although drying removes much of the flavor and makes the leaf too brittle to be used as a wrapper.

Like its more famous Old World cousin, black pepper (Piper nigrum), hoja santa is used as a seasoning. In this case, it is the leaves and not the ‘peppercorns’ that flavor foods. The Maya and Aztec made tamales—fish or meat wrapped in fragrant leaves for cooking. And the ancients used many types of leaves, not just corn husks around corn meal dough and seasoned meat. Many of these ancient tamal entrees persist; pescado (fish) en hoja santa is still fine dining especially near the Gulf coast in Veracruz.

The essential oils in the leaf are rich in safrole, a substance also found in sassafras, which has been shown to be carcinogenic in animals. In 1960, the U.S. Food and Drug Administration banned sassafras bark along with sassafras oil and safrole as flavoring agents because of their carcinogenic properties and the Council of Europe imposed the same ban in 1974, so the safety of flavoring food with hoja santa remains questionable.

Botanical Name: Pimenta officinalis
Family: Myrtaceae
Genus: Pimenta
Species: P. dioica
Kingdom: Plantae
Order: Myrtales

Synonyms: Pimento. Jamaica Pepper.

Common Names  :Jamaica pepper, Pepper, Myrtle pepper, Pimenta, Pimento, English pepper or Newspice

Allspice takes its name from its aroma, which smells like a combination of spices, especially cinnamon, cloves, ginger and nutmeg. In much of the world, allspice is called pimento because the Spanish mistook the fruit for black pepper, which the Spanish called pimienta. This is especially confusing since the Spanish had already called chillies pimientos.

Various Different Names
English Spice, Jamaica Pepper, Clove Pepper, Myrtle Pepper, Pimenta, Pimento
French: pimenta, tout-épice
German: Jamikapfefer
Italian: pimento
Spanish: pimiento de Jamaica
Indian: kabab cheene, seetful  (Bengali name : Kabab chini)

Habitat : Pimento officinalis or allspice is indigenous to the West Indian Islands and South America, and extensively grown in Jamaica, where it flourishes best on limestone hills near the sea. In this country, it only grows as a stove plant.

It is also cultivated in Central America and surrounding states, but more than half the supply of the spice found in commerce comes from Jamaica, where the tree is so abundant as to form in the mountainous districts whole forests, which require little attention beyond clearing out undergrowth

Description:
The allspice tree, classified as an evergreen shrub, reaches heights between 10 and 18 m (32 and 60 ft). Allspice can be a small, scrubby tree, quite similar to the bay laurel in size and form. It can also be a tall, canopy tree, sometimes grown to provide shade for coffee trees planted underneath it.The tree begins to fruit when three years old and is in full bearing after four years. The flowers appear in June, July and August and are quickly succeeded by the berries.

The special qualities of the fruit reside in the rind of the berries. It loses its aroma on ripening, owing to loss of volatile oil, and the berries are therefore collected as soon as they have attained their full size, in July and August, but while unripe and green.

Gathering is performed by breaking off the small twigs bearing the bunches; these are then spread out and exposed to the sun and air for some days, after which the stalks are removed and the berries are ready for packing into bags and casks for exportation.

The spice is sometimes dried in ovens (Kiln-dried Allspice), but the method by evaporation from sun-heat produces the best article, though it is tedious and somewhat hazardous, requiring about twelve days, during which the fruit must be carefully guarded against moisture, being housed at night and during rainy and damp weather.

The green colour of the fresh fruit changes on drying to reddish brown. If the fruit is allowed to ripen, it loses almost the whole of its aromatic properties, becoming fleshy sweet and of a purple-black colour. Such pimento, to render it more attractive, is then often artificially coloured with bole or brown ochre, a sophistication which may be detected by boiling for a few seconds with diluted hydrochloric acid, filtering and testing with potassium ferrocyanide; the liquid should assume at most a bluish-green colour.

Edible Uses:
Allspice is one of the most important ingredients of Caribbean cuisine. It is used in Caribbean jerk seasoning (the wood is used to smoke jerk in Jamaica, although the spice is a good substitute), in moles, and in pickling; it is also an ingredient in commercial sausage preparations and curry powders. Allspice is also indispensable in Middle Eastern cuisine, particularly in the Levant, where it is used to flavour a variety of stews and meat dishes. In Palestinian cuisine, for example, many main dishes call for allspice as the sole spice added for flavouring. In the U.S., it is used mostly in desserts, but it is also responsible for giving Cincinnati-style chili its distinctive aroma and flavour. Allspice is commonly used in Great Britain, and appears in many dishes, including cakes. Even in many countries where allspice is not very popular in the household, as in Germany, it is used in large amounts by commercial sausage makers. It is a main flavour used in barbecue sauces. In the West Indies, an allspice liqueur called “pimento dram” is produced.

Allspice has also been used as a deodorant. Volatile oils found in the plant contain eugenol, a weak antimicrobial agent
Jerked meats like pork, chicken and kid reflect the Spanish/Jamaican background of Allspice. It is a particularly popular spice in European cooking, an important ingredient in many marinades, pickling and mulling spices. Many patés, terrines, smoked and canned meats include allspice. A few allspice berries are added to Scandinavian pickled herring, to Sauerkraut , pickles, soups, game dishes and English spiced beef. Traditionally, allspice has been used in cakes, fruit pies, puddings ice cream and pumpkin pie. Some Indian curries and pilaus contain allspice and in the Middle East it is used in meat and rice dishes. It is also used in liqueurs, notably Benedictine and Chartreuse.
Allspice can be used as a substitute, measure, for measure, for cinnamon, cloves or nutmeg. Conversely to make a substitution for allspice, combine one part nutmeg with two parts each of cinnamon and cloves.

Constituents:

The chief constituent of allspice is from 3 to 4.5 per cent of a volatile oil, contained in glands in the pericarp of the seeds and obtained by distillation from the fruit.

It occurs as a yellow or yellowish-red liquid, becoming gradually darker on keeping and having a pleasant aromatic odour, somewhat similar to that of oil of cloves, and a pungent, spicy taste. It has a slightly acid reaction. It is soluble in all proportions of alcohol. The specific gravity is 1.030 to 1.050. Its chief constituent is the phenol Eugenol, which is present to the extent of 60 to 75 per cent, and a sesquiterpene, the exact nature of which has not yet been ascertained. The specific gravity to some extent indicates the amount present; if lower than 1.030, it may be assumed that some eugenol has been removed, or that the oil has been adulterated with substitutes having a lower specific gravity than that of eugenol. The eugenol can be determined by shaking the oil with a solution of potassium hydroxide and measuring the residual oily layer. The United States Pharmacopoeia specifies that at least 65 per cent by volume of eugenol should be present. On shaking the oil with an equal volume of strong solution of ammonia, it should be converted into a semisolid mass of eugenol-ammonium.

The clove-like odour of the oil is doubtless due to the eugenol, but the characteristic odour is due to some other substance or substances as yet unknown. A certain amount of resin is also present, but the oil has not yet been fully investigated.

Bonastre obtained from the fruit, a volatile oil, a green fixed oil, a fatty substance in yellowish flakes, tannin, gum, resin, uncrystallizable sugar, colouring matter, malic and gallic acids, saline matter and lignin. The green fixed oil has a burning, aromatic taste of Pimento and is supposed to be the acrid principle. Upon this, together with the volatile oil, the medicinal properties of the berries depend, and as these two principles exist most in the shell, this part is the most efficient. According to Bonastre, the shell contains 1O per cent of the volatile and 8 per cent of the fixed oil; the seeds only 5 per cent of the former and 2.5 of the latter. Berzelius considered the green fixed oil of Bonastre to be a mixture of the volatile oil, resin, fixed oil and perhaps a little chlorophyll.

On incineration, the fruits yield from 2.5 to 5 per cent of ash.

They impart their flavour to water and all their virtues to alcohol. The infusion is of a brown colour and reddens litmus paper.

The leaves and bark abound in inflammable particles.

Medicinal Properties
Because of its eugenol content, allspice has attributes similar to clove. It is a digestive and carminative. The oil is classed as rubefacient, meaning that it irritates the skin and expands the blood vessels, increasing the flow of blood to make the skin feel warmer. The tannins in allspice provide a mild anesthetic that, with its warming effect, make it a popular home remedy for arthritis and sore muscles, used either as a poultice or in hot baths.

Medicinal Uses:
The chief use of Pimento is as a spice and condiment: the berries are added to curry powder and also to mulled wine. It is popular as a warming cordial, of a sweet odour and grateful aromatic taste.

The oil inaction resembles that of cloves, and is occasionally used in medicine and is also employed in perfuming soaps.

It was formerly official in both the British and United States Pharmacopoeias. Both Pimento Oil and Pimento Water were official in the British Pharmacopoeia of 1898, but Oil of Pimento was deleted from the British Pharmacopceia of 1914, though the Water still has a place in the British Pharmacopceia Codex.

Pimento has also been dropped from the United States Pharmacopoeia, but admitted to the National Formulary IV. Pimento is one of the ingredients in the Compound Tincture of Guaic of the National Formulary IV.

Pimento is an aromatic stimulant and carminative to the gastro-intestinal tract, resembling cloves in its action. It is employed chiefly as an addition to tonics and purgatives and as a flavouring agent.

The Essential Oil, as well as the Spirit and the distilled Water of Pimento are useful for flatulent indigestion and for hysterical paroxysms. Two or three drops of the oil on sugar are given to correct flatulence. The oil is also given on sugar and in pills to correct the griping tendencies of purgatives: it was formerly added to Syrup of Buckthorn to prevent griping.

Botanical Name: Rhus coriaria
Family:    Anacardiaceae
Subfamily:Anacardioideae
Kingdom:Plantae
Order:Sapindales

Common Names: Sumac.

Arabic:Summaaq, Summaq
English:    Shumac, Sicilian sumac
Farsi:Somagh
French:    Sumac
German:    Sumach, Gewürzsumach, Färberbaum, Gerbersumach, Essigbaum
Nepali:Bhakmilo, Amilo (Rh. chinensis)
Turkish:Sumak, Somak

Habitat : Sumac is native to Middle East and Mediterian countries. It grows several places in the Euperian Continent.

Description:
Sumacs are shrubs and small trees that can reach a height of 1–10 m (3.3–32.8 ft). The leaves are spirally arranged; they are usually pinnately compound, though some species have trifoliate or simple leaves. The flowers are in dense panicles or spikes 5–30 cm (2.0–11.8 in) long, each flower very small, greenish, creamy white or red, with five petals. The fruits form dense clusters of reddish drupes called sumac bobs. The dried drupes of some species are ground to produce a tangy crimson spice.
CLICK & SEE THE PICTURES

Propagation: Sumacs propagate both by seed (spread by birds and other animals through their droppings), and by new shoots from rhizomes, forming large clonal colonies.

Edible Uses:
The fruits (drupes) of the genus Rhus are ground into a reddish-purple powder used as a spice in Middle Eastern cuisine to add a lemony taste to salads or meat. In Arab cuisine, it is used as a garnish on meze dishes such as hummus and is added to salads in the Levant. In Iranian (Persian and Kurdish) cuisines, sumac is added to rice or kebab. In Jordanian and Turkish cuisines, it is added to salad-servings of kebab and lahmacun. Rhus coriaria is used in the spice mixture za’atar.

In North America, the smooth sumac (R. glabra) and the staghorn sumac (R. typhina) are sometimes used to make a beverage termed “sumac-ade”, “Indian lemonade”, or “rhus juice”. This drink is made by soaking the drupes in cool water, rubbing them to extract the essence, straining the liquid through a cotton cloth, and sweetening it. Native Americans also use the leaves and drupes of the smooth and staghorn sumacs combined with tobacco in traditional smoking mixtures.

Sumac is a very popular condiment in Turkey and Iran, where the ground fruits are liberally sprinkled over rice. Mixed with freshly cut onions, it is frequently eaten as an appetizer. The well-known Turkish fast food specialty döner kebap is sometimes flavoured with sumac powder.

In Jordan, a spice mixture called zahtar  is extremely popular; it took its name from a local species of marjoram which is one of its main ingredients. Since this West Asian marjoram is hardly available outside of the region, it must be substituted by a mixture of marjoram with some thyme or oregano. Zahtar is, then, made by combining the dried marjoram herb with nutty sesame seeds, acidic sumac, salt and optionally some pepper. Similar mixtures are reported from Syria and Israel. Zahtar is mostly used to spice up fried and barbecued meat up to taste; combined with olive oil, it can also be used as a bread dip like the closely related Egypt spice mixture dukka.

Another use of sumac is recorded from Lebanon, Syria and Egypt: The fruits are cooked with water to a thick, very sour essence, which is, then, added to meat and vegetable dishes; this method was also common as early as in Roman times (see silphion for details of Roman cookery) and finds a close parallel in the usage of tamarind in contemporary Indian and Indonesian cuisines.

Outside of the Middle East, the true sumac spice is not known; yet, there are sumac species with culinary merit also further in the East. For example, Rh. chinensis (Chinese Sumac) grows in the Himalayas, in China and South East Asia. In Nepal, it is used to prepare a delicious sour and fruity pickle (amilo achar by some Himalayan ethnicities like the Thakali. In the North East Indian states Nagaland and Mizoram, sumac fruits are dried, coarsely ground and used as table condiment, or (often mixed with salt and chile powder) just enjoyed between meals.

Medicinal Uses:
It is said to have diuretic and antipyretic properties.Sumac was used as a treatment for half a dozen different ailments in medieval medicine, primarily in Middle-Eastern countries (where sumac was more readily available than in Europe). An 11th-century shipwreck off the coast of Rhodes, excavated by archeologists in the 1970s, contained commercial quantities of sumac drupes. These could have been intended for use as medicine, as a culinary spice, or as a dye. Staghorn sumac is a powerful antioxidant.Medical uses have included digestion and bowel problems.

You may click to see:  The Benefits Of Sumac  :

Other Uses:
Dye and tanning agent:
The leaves of certain sumacs yield tannin (mostly pyrogallol-type), a substance used in vegetable tanning. Notable sources include the leaves of R. coriaria, Chinese gall on R. chinensis, and wood and roots of R. pentaphylla. Leather tanned with sumac is flexible, light in weight, and light in color. One type of leather made with sumac tannins is morocco leather.

Some beekeepers use dried sumac bobs as a source of fuel for their smokers.

Sumac stems also have a soft pith in the center that is useful in traditional native American pipemaking. They were commonly used as pipe stems in the northern United States.

Dried sumac wood fluoresces under long-wave ultraviolet radiation

Known Hazards: Some species formerly recognized in Rhus, such as poison ivy (Toxicodendron radicans, syn.Rhus toxicodendron), poison oak (Toxicodendron diversilobum, syn. Rhus diversiloba) and poison sumac (Toxicodendron vernix, syn. Rhus vernix), have the allergen urushiol and can cause severe allergic reactions. Poison sumac may be identified by its white drupes, which are quite different from the red drupes of true Rhus species.

Mowing of sumac is not a good control measure, since the wood is springy, resulting in jagged, sharp-pointed stumps when mowed. The plant will quickly recover with new growth after mowing. Goats have long been considered an efficient and quick removal method, as they eat the bark, which helps prevent new shoots.

Baking Soda Is A Super Item

[amazon_link asins=’B002SKVZIQ,B00LO1Y1AO,B0005ZXPY8,B00K1JFC0S,B00RN77S58,B00CVY459K,B006X1BQWG,B000VK3RPY’ template=’ProductCarousel’ store=’finmeacur-20′ marketplace=’US’ link_id=’5179ecc4-2719-11e7-adb0-31d081bd02e8′]

Here are dozens of reasons why baking soda is a super item.In the Kitchen
Clean your produce

You can’t be too careful when it comes to food handling and preparation. Wash fruits and vegetables in a pot of cold water with 2-3 table-spoons baking soda; the baking soda will remove some of the impurities tap water leaves behind. Or put a small amount of baking soda on a wet sponge or vegetable brush and scrub your produce. Give everything a thorough rinsing before serving.

Tenderize meat

Got a tough cut of meat on your hands? Soften it up by giving it a rubdown in baking soda. Let it sit (in the refrigerator, of course) for three to five hours, then rinse it off well before cooking.

Soak out fish smells

Get rid of that fishy smell from your store-bought flounder filets and fish steaks by soaking the raw fish for about an hour (inside your refrigerator) in 1 quart (1 liter) water with 2 tablespoons baking soda. Rinse the fish well and pat dry before cooking.

Reduce acids in recipes

If you or someone in your family is sensitive to the high-acid content of tomato-based sauces or coffee, you can lower the overall acidity by sprinkling in a pinch of baking soda while cooking (or, in the case of coffee, before brewing). A bit of baking soda can also counteract the taste of vinegar if you happen to pour in a bit too much. Be careful not to overdo it with the soda, though — if you add too much, the vinegar-baking soda combination will start foaming.

Bake better beans

Do you love baked beans but not their aftereffects? Adding a pinch of baking soda to baked beans as they’re cooking will significantly reduce their gas-producing properties.

Fluff up your omelets

Want to know the secret to making fluffier omelets? For every three eggs used, add 1/2 teaspoon baking soda. Shhhh! Don’t let it get around.

Use as yeast substitute

Need a stand-in for yeast when making dough? If you have some powdered vitamin C (or citric acid) and baking soda on hand, you can use a mixture of the two instead. Just mix in equal parts to equal the quantity of yeast required. What’s more, the dough you add it to won’t have to rise before baking.

Rid hands of food odors

Chopping garlic or cleaning a fish can leave their “essence” on your fingers long after the chore is done. Get those nasty food smells off your hands by simply wetting them and vigorously rubbing with about 2 teaspoons baking soda instead of soap. The smell should wash off with the soda.

Clean baby bottles and accessories

Here’s some great advice for new parents: Keep all your baby bottles, nipples, caps, and brushes “baby fresh” by soaking them overnight in a container filled with hot water and half a box of baking soda. Be sure to give everything a good rinsing afterward, and to dry thoroughly before using. Baby bottles can also be boiled in a full pot of water and 3 tablespoons baking soda for three minutes.

Clean a cutting board

Keep your wooden or plastic cutting board clean by occasionally scrubbing it with a paste made from 1 tablespoon each baking soda, salt, and water. Rinse thoroughly with hot water.

Clear a clogged drain

Most kitchen drains can be unclogged by pouring in 1 cup baking soda followed by 1 cup hot vinegar (simply heat it up in the microwave for 1 minute). Give it several minutes to work, then add 1 quart (1 liter) boiling water. Repeat if necessary. If you know your drain is clogged with grease, use 1/2 cup each of baking soda and salt followed by 1 cup boiling water. Let the mixture work overnight; then rinse with hot tap water in the morning.

Boost potency of dishwashing liquid

Looking for a more powerful dishwashing liquid? Try adding 2 tablespoons baking soda to the usual amount of liquid you use, and watch it cut through grease like a hot knife!

Make your own dishwashing detergent

The dishwasher is fully loaded when you discover that you’re out of your usual powdered dishwashing detergent. What do you do? Make your own: Combine 2 tablespoons baking soda with 2 tablespoons borax. You may be so pleased with the results you’ll switch for good.

Deodorize your dishwasher

Eliminate odors inside your automatic dishwasher by sprinkling 1/2 cup baking soda on the bottom of the dishwasher between loads. Or pour in half a box of baking soda and run the empty machine through its rinse cycle.

Clean your refrigerator

To get rid of smells and dried-up spills inside your refrigerator, remove the contents, then sprinkle some baking soda on a damp sponge and scrub the sides, shelves, and compartments. Rinse with a clean, wet sponge. Don’t forget to place a fresh box of soda inside when you’re done.

Clean your microwave

To clean those splatters off the inside of your microwave, put a solution of 2 tablespoons baking soda in 1 cup water in a microwave-safe container and cook on High for 2-3 minutes. Remove the container, then wipe down the microwave’s moist interior with a damp paper towel.

Remove coffee and tea stains from china

Don’t let those annoying coffee and/or tea stains on your good china spoil another special occasion. Remove them by dip-ping a moist cloth in baking soda to form a stiff paste and gently rubbing your cups and saucers. Rinse clean and dry, then set your table with pride.

Clean a thermos

To remove residue on the inside of a thermos, mix 1/4 cup baking soda in 1 quart (1 liter) water. Fill the thermos with the solution — if necessary, give it a going-over with a bottle brush to loosen things up — and let it soak overnight. Rinse clean before using.

Freshen a sponge or towel

When a kitchen sponge or dish towel gets that distinctly sour smell, soak it overnight in 2 tablespoons baking soda and a couple of drops of antibacterial dish soap dissolved in 1 pint (450 milliliters) warm water. The following morning, squeeze out the remaining solution and rinse with cold water. It should smell as good as new.

Remove stains and scratches on countertops

Is your kitchen countertop covered with stains or small knife cuts? Use a paste of 2 parts baking soda to 1 part water to “rub out” most of them. For stubborn stains, add a drop of chlorine bleach to the paste. Immediately wash the area with hot, soapy water to pre-vent the bleach from causing fading.

Shine up stainless steel and chrome trim

To put the shine back in your stainless steel sink, sprinkle it with baking soda, then give it a rubdown — moving in the direction of the grain — with a moist cloth. To polish dull chrome trim on your appliances, pour a little baking soda onto a damp sponge and rub over the chrome. Let it dry for an hour or so, then wipe down with warm water and dry with a clean cloth.

Get rid of grease stains on stovetops

Say good-bye to cooked-on grease stains on your stovetop or backsplash. First wet them with a little water and cover them with a bit of baking soda. Then rub them off with a damp sponge or towel.

Clean an automatic coffeemaker

Properly caring for your automatic coffeemaker means never having to worry about bitter or weak coffee. Every two weeks or so, brew a pot of 1 quart (1 liter) water mixed with 1/4 cup baking soda, followed by a pot of clean water. Also, sweeten your coffeemaker’s plastic basket by using an old toothbrush to give it an occasional scrubbing with a paste of 2 tablespoons baking soda and 1 tablespoon water. Rinse thoroughly with cold water when done.

Care for your coffeepots and teapots

Remove mineral deposits in metal coffeepots and teapots by filling them with a solution of 1 cup vinegar and 4 tablespoons baking soda. Bring the mixture to a boil, then let simmer for five minutes. Or try boiling 5 cups water with 2 tablespoons soda and the juice of half a lemon. Rinse with cold water when done. To get off annoying exterior stains, wash your pots with a plastic scouring pad in a solution of 1/4 cup baking soda in 1 quart (1 liter) warm water. Follow up with a cold-water rinse.

Remove stains from nonstick cookware

It may be called nonstick cookware, but a few of those stains seem to be stuck on pretty well. Blast them away by boiling 1 cup water mixed with 2 tablespoons baking soda and 1/2 cup vinegar for 10 minutes. Then wash in hot, soapy water. Rinse well and let dry, then season with a bit of salad oil.

Clean cast-iron cookware

Although it’s more prone to stains and rust than the nonstick variety, many folks swear by their iron cookware. You can remove even the toughest burned-on food remnants in your iron pots by boiling 1 quart (1 liter) water with 2 tablespoons baking soda for five minutes. Pour off most of the liquid, then lightly scrub it with a plastic scrub pad. Rinse well, dry, and season with a few drops of peanut oil.

Clean burned or scorched pots and pans

It usually takes heavy-duty scrubbing to get scorched-on food off the bottom of a pot or pan. But you can make life much easier for yourself by simply boiling a few cups of water (enough to get the pan about 1/4 full) and adding 5 tablespoons baking soda. Turn off the heat, and let the soda settle in for a few hours or overnight. When you’re ready, that burned-on gunk will practically slip right off.

Deodorize your garbage pail

Does something smell “off” in your kitchen? Most likely, it’s emanating from your trash can. But some smells linger even after you dispose of the offending garbage bag.
