Scientists warn against the dangers of frying food in sunflower oil and corn oil over claims they release toxic chemicals linked to cancer

Cooking with vegetable oils releases toxic chemicals linked to cancer and other diseases, according to leading scientists, who are now recommending food be fried in olive oil, coconut oil, butter or even lard.
The results of a series of experiments threaten to turn on its head official advice that oils rich in polyunsaturated fats – such as corn oil and sunflower oil – are better for the health than the saturated fats in animal products.
Scientists found that heating up vegetable oils led to the release of high concentrations of chemicals called aldehydes, which have been linked to illnesses including cancer, heart disease and dementia.

Habitat: Chondrus crispus is common all around the shores of Ireland and Great Britain and can also be found along the coast of Europe including Iceland, the Faroe Islands western Baltic Sea to southern Spain. It is found on the Atlantic coasts of Canada and recorded from California in the United States to Japan. However, any distribution outside the Northern Atlantic needs to be verified. There are also other species of the same genus in the Pacific Ocean, for example, C. ocellatus Holmes, C. nipponicus Yendo, C. yendoi Yamada et Mikami, C. pinnulatus (Harvey) Okamura and C. armatus (Harvey) Yamada et Mikami

Description:
Chondrus crispus is a relatively small red alga, reaching up to a little over than 20 cm in length. It grows from a discoid holdfast and branches four or five times in a dichotomous, fan-like manner. The morphology is highly variable, especially the broadness of the thalli. The branches are 2–15 mm broad, firm in texture and dark reddish brown in color bleaching to yellowish in sunlight. The gametophytes (see below) often show a blue iridescence at the tip of the fronds and fertile sporophytes show a spotty pattern. Mastocarpus stellatus (Stackhouse) Guiry is a similar species which can be readily distinguished by its strongly channelled and often somewhat twisted thallus. The cystocarpic plants of Mastocarpus show reproductive papillae[clarification needed] quite distinctively different from Chondrus. When washed and sun-dried for preservation, it has a yellowish, translucent, horn-like aspect and consistency.

Medicinal Uses:
Because of its mucus forming properties, carrageenan has been used in lung diseases and to improve bitter drug taste. Carrageenan has also been used in cases of digestive tract irritations and in diarrhea and dysentery. In France and Great Britain, carrageenan has been used to treat stomach ulcers due to its mucous properties. When used against ulcers, the body has no necessity to gastrointestinally absorb carrageenan, so that carrageenan acts directly on the mucous surface. Codfish liver oil emulsions have been prepared with carrageenans. Cotton-wood soaked in carrageenan decoction has been used as cataplasm.

Medicinally it is useful in chest and bronchial infections, as well as in the treatment of stomach ulcers and diseases of the bladder and kidneys. A syrup to combat coughs and colds can be made by adding ? cup of rinsed carragheen moss and the thinly pared rind and juice of 2 lemons to 6 cups of water. Boil the mixture for 10 minutes, add a dessertspoonful of honey and simmer for a further 10 minutes before straining. Serve the syrup hot or cold.

It is collected in Ireland and Scotland, together with Chondrus crispus as Irish moss, dried, and sold for cooking and as the basis for a drink reputed to ward off colds and flu.

Although the soft, orange sweet potato is often called a “yam” in parts of North America, the sweet potato is botanically very distinct from a genuine yam (Dioscorea), which is native to Africa and Asia and belongs to the monocot family Dioscoreaceae. To add to the confusion, a different crop plant, the oca, Oxalis tuberosa (a species of wood sorrel), is called a “yam” in many parts of Polynesia, including New Zealand. To prevent confusion, the United States Department of Agriculture requires sweet potatoes to be labeled as “sweet potatoes” and not as “yams”

The Portuguese took the Taino name batata directly, while the Spanish also combined it with the Quechua word for potato, papa, to create the word patata for the common potato. In Argentina, Venezuela, Puerto Rico and the Dominican Republic it is called batata. In Mexico, Peru, Chile, Central America, and the Philippines, the sweet potato is known as camote (alternatively spelled kamote in the Philippines), derived from the Nahuatl word camotli. Boniato is another name widely used in mainland Spain and in Uruguay.

In Peru, the Quechua name for a type of sweet potato is kumar, strikingly similar to the Polynesian name kumara and its regional Oceanic cognates (kumala, umala, ‘uala, etc.), which has led some scholars to suspect an instance of Pre-Columbian trans-oceanic contact.

In New Zealand, the most common variety is the Red (purple) cultivar, and is called kumara, though orange (Beauregard) and gold varieties are also available. Kumara is particularly popular as a roasted food or in contemporary cuisine, as kumara chips, often served with sour cream and sweet chili sauce. Occasionally shops in Australia will label the purple variety “purple sweet potato” to denote its difference to the other varieties. About 95% of Australia’s production is of the orange variety named “Beauregard”, originally from North America, known simply as “sweet potato”. A reddish-purple variety, Northern Star, is 4% of production and is sold as kumara.

In Papua New Guinea, sweet potatoes are known as kaukau in Tok Pisin. In South Korea, sweet potatoes are known as ‘goguma’

Habitat: The origin and domestication of sweet potato is thought to be in either Central America or South America. In Central America, sweet potatoes were domesticated at least 5,000 years ago. In South America, Peruvian sweet potato remnants dating as far back as 8000 BC have been found. Now sweet potato is grown all over the world.

Description:

Cultivation & Propagation:
Sweet potatoes grow very well in tropical and subtropical climates and they are very sensitive to cold weather.
The plant does not tolerate frost. It grows best at an average temperature of 24 °C (75 °F), abundant sunshine and warm nights. in well-draining, loamy soil with a pH of 5.6–6.6. Sweet potatoes should be planted in full sun and require plenty of space as the vines will spread over large areas. Annual rainfalls of 750–1,000 mm (30–39 in) are considered most suitable, with a minimum of 500 mm (20 in) in the growing season. The crop is sensitive to drought at the tuber initiation stage 50–60 days after planting, and it is not tolerant to water-logging, as it may cause tuber rots and reduce growth of storage roots if aeration is poor.

Sweet potato tubers are eaten cooked as a vegetable or may be processed into flour or starch. The leaves can be eaten fresh or after cooking. Sweet potatoes pack a powerful nutritional punch. Possible health benefits of consuming sweet potatoes:
Consuming fruits and vegetables of all kinds has long been associated with a reduced risk of many adverse health conditions. Many studies have suggested that increasing consumption of plant foods like sweet potatoes decreases the risk of obesity, diabetes, heart disease and overall mortality while promoting a healthy complexion, increased energy, and overall lower weight.

Diabetes:
Sweet potatoes are considered low on the glycemic index scale, and recent research suggests they may reduce episodes of low blood sugar and insulin resistance in people with diabetes. The fiber in sweet potatoes makes a big difference too. Studies have shown that type 1 diabetics who consume high-fiber diets have lower blood glucose levels and type 2 diabetics may have improved blood sugar, lipids and insulin levels. One medium sweet potato provides about 6 grams of fiber (skin on).

The Dietary Guidelines for Americans recommends 21-25 grams of fiber per day for women and 30-38 grams per day for men, which most people do not reach.

Blood pressure:
Maintaining a low sodium intake is essential to lowering blood pressure, however increasing potassium intake may be just as important. According to the National Health and Nutrition Examination Survey, fewer than 2% of US adults are meeting the daily 4,700 mg recommendation for potassium.3 One medium sweet potato provides about 542 milligrams.

Also of note, high potassium intake is associated with a 20% decreased risk of dying from all causes.

Cancer:
Among younger men, diets rich in beta-carotene may play a protective role against prostate cancer, according to a study conducted by the Harvard School of Public Health’s Department of Nutrition.4 Beta-carotene has also been shown to have an inverse association with the development of colon cancer in the Japanese population.

Digestion and regularity:
Because of its high fiber content, sweet potatoes help to prevent constipation and promote regularity for a healthy digestive tract.

Fertility:
For women of childbearing age, consuming more iron from plant sources appears to promote fertility, according Harvard Medical School‘s Harvard Health Publications. The vitamin A in sweet potatoes (consumed as beta-carotene then converted to vitamin A in the body) is also essential during pregnancy and lactation for hormone synthesis.

Immunity:
Plant foods like sweet potatoes that are high in both vitamin C and beta-carotene offer an immunity boost from their powerful combination of nutrients.

Inflammation:
Choline is a very important and versatile nutrient in sweet potatoes that helps with sleep, muscle movement, learning and memory. Choline also helps to maintain the structure of cellular membranes, aids in the transmission of nerve impulses, assists in the absorption of fat and reduces chronic inflammation.6

In a study published by the Journal of Medicinal Food, purple sweet potato extract was found to have positive anti-inflammatory and antilipogenic effects as well as free radical scavenging and reducing activity.

Vision:
According to Duke ophthalmologist Jill Koury, MD, vitamin A deficiency causes the outer segments of the eye’s photoreceptors to deteriorate, damaging normal vision. Correcting vitamin A deficiencies with foods high in beta-carotene will restore vision.

Also of note, the antioxidant vitamins C and E in sweet potatoes have been shown to support eye health and prevent degenerative damage.

A higher intake of all fruits (3 or more servings per day) has also been shown to decrease the risk of and progression of age-related macular degeneration.
Other Uses:
In South America, the juice of red sweet potatoes is combined with lime juice to make a dye for cloth. By varying the proportions of the juices, every shade from pink to black can be obtained.

All parts of the plant are used for animal fodder.

Sweet potatoes or camotes are often found in Moche ceramics.

Several selections are cultivated in gardens as ornamental plants for their attractive foliage, including the dark-leafed cultivars ‘Blackie’ and ‘Ace of Spades’ and the chartreuse-foliaged ‘Margarita’.

Cuttings of sweet potato vine, either edible or ornamental varieties, will rapidly form roots in water and will grow in it, indefinitely, in good lighting with a steady supply of nutrients. For this reason, sweet potato vine is ideal for use in home aquariums, trailing out of the water with its roots submerged, as its rapid growth is fueled by toxic ammonia and nitrates, a waste product of aquatic life, which it removes from the water. This improves the living conditions for fish, which also find refuge in the vast root systems.

Researchers at North Carolina State University are breeding sweet potato varieties that would be grown primarily for biofuel production.

Description:
Chickpea is an annuak plant. It grows to between 20–50 cm (8–20 inches) high and has small feathery leaves on either side of the stem. Chickpeas are a type of pulse, with one seedpod containing two or three peas. It has white flowers with blue, violet or pink veins. It is not frost tender. It is in flower from Jun to July, and the seeds ripen from Aug to September. The flowers are hermaphrodite (have both male and female organs)It can fix Nitrogen.

Types:
There are three main kinds of chickpea.
Desi has small, darker seeds and a rough coat. It is grown mostly in India and other parts of the Indian subcontinent, as well as in Ethiopia, Mexico, and Iran. Desi means ‘country’ or ‘local’ in Hindustani; its other names include Bengal gram or kala chana (“black chickpea” in both Hindi and Urdu) or chhola boot. Desi is probably the earliest variety because it closely resembles seeds found both on archaeological sites and the wild plant ancestor Cicer reticulatum of domesticated chickpeas, which only grows in southeast Turkey, where it is believed to have originated. Desi chickpeas have a markedly higher fibre content than other varieties, and hence a very low glycemic index, which may make them suitable for people with blood sugar problems. The desi type is used to make chana dal, which is a split chickpea with the skin removed.

Bombay chickpeas (Bambai) are also dark but slightly larger than desi. They too are popular in the Indian subcontinent.

Kabuli are lighter-coloured, larger and with a smoother coat, and are mainly grown in the Mediterranean, Southern Europe, Northern Africa, South America and Indian subcontinent. The name means “from Kabul” in Hindi and Urdu, and this variety was thought to come from Kabul, Afghanistan when it was introduced to India in the 18th century. It is called Kabuli chana in Marathi and safed chana in India.

An uncommon black chickpea, ceci neri, is grown only in Apulia, in southeastern Italy. It is larger and darker than the desi variety.

Green chickpeas are common in the state of Maharastra, India. In Marathi, they are called harbhara. Chana dal is also called harbara dal . Tender, immature harbara roasted on coal before the skin is removed is called hula in Marathi.
Cultivation:
Requires a hot sunny position, tolerating drought once established. Prefers a light well-drained fertile soil. Tolerates a pH in the range 5.5 to 8.6. Plants are hardy to about -25°c when covered by snow. This suggests that plants can be autumn sown – some trials are called for, especially of some of the hardier cultivars. The chickpea is widely cultivated in warm temperate and tropical areas for its edible seed. There are many named varieties, some of which should be suitable for cultivation in Britain. Plants only succeed outdoors in Britain in hot summers. Plants are about as hardy as broad beans but they often do not succeed in mild moist maritime climates because the seedpods are hairy and this holds moisture. The moisture then encourages fungal growth and the seed usually rots before it is fully mature. Plants require 4 – 6 months with moderately warm dry conditions if they are to crop well. This species has a symbiotic relationship with certain soil bacteria, these bacteria form nodules on the roots and fix atmospheric nitrogen. Some of this nitrogen is utilized by the growing plant but some can also be used by other plants growing nearby. When removing plant remains at the end of the growing season, it is best to only remove the aerial parts of the plant, leaving the roots in the ground to decay and release their nitrogen.

Propagation:
Seed – sow April/May in situ under cloches. Chick peas can germinate at lower temperatures than broad beans. Could an early spring or even autumn sowing outdoors be successful

Seed – raw or cooked. The fresh or dried seed is cooked in soups, stews etc. It has a somewhat sweet flavour and a floury texture somewhat reminiscent of sweet chestnuts. The mature seed can also be sprouted and eaten raw. Parched seeds can be eaten as a snack. The seed can also be ground into a meal and used with cereal flours for making bread, cakes etc. The seed is a good source of carbohydrates and protein. The roasted seed is a coffee substitute. The roasted root can also be used. Both the young seedpods and the young shoots are said to be edible but some caution is advised. See the notes above on toxicity. A refreshing drink can be made from the acid dew that collects on the hairy seedpods overnight.

Nutrition:
Chickpeas are a nutrient-dense food, providing rich content (> 20% of the Daily Value, DV) of protein, dietary fibre, folate, and certain dietary minerals such as iron and phosphorus. Thiamin, vitamin B6, magnesium and zinc contents are moderate, providing 10-16 percent of the DV (right table). Chickpeas have a Protein Digestibility Corrected Amino Acid Score of about 76 percent, which is higher than fruits, vegetables, many other legumes, and cereals.

Compared to reference levels established by the United Nations Food and Agricultural Organization and World Health Organization,[20] proteins in cooked and germinated chickpeas are rich in essential amino acids like lysine, isoleucine, tryptophan and total aromatic amino acids.

A 100 g serving of cooked chickpeas provides 164 kilocalories (690 kJ) (see table). Carbohydrates make up 68 percent of calories, most of which (84 percent) is starch, followed by total sugars and dietary fibre. Lipid content is 3 percent, 75 percent of which is unsaturated fatty acids for which linoleic acid comprises 43 percent of total fat

Medicinal Uses: An acid exudation from the seedpods is astringent. It has been used in the treatment of dyspepsia, constipation and snakebite

Habitat:Dicentra Canadensis is native to Eastern N. America – S. Quebec, Minnesota, N. Carolina, Tennessee. It grows in rich woods. Deciduous woods, often among rock outcrops, in rich loam soils from sea level to 1500 metres.
Description:
Dicentra canadensis is a perennial plant, growing 6 to 10 inches high, with a tuberous root, flowering in early spring (often in March) having from six to nineteen nodding, greenish-white, purple-tinged flowers, the root or tuber small and round. It should be collected only when the plant is in flower and it is in flower in May. The flowers are hermaphrodite (have both male and female organs) The tubers are tawny yellow-coloured, the colour being a distinctive character. The plant must not be confounded with Corydalis (Dicentra) Cuccularia (Dutchman’s Breeches), which flowers at the same time and very much resembles it (though smaller), except in the root, the rind of which is black with a white inside, and when dried, turns brownish-yellow, and under the microscope is full of pores. It has also a peculiar faint odour, the taste at first slightly bitter, then followed by a penetrating taste, which influences the bowels and increases the saliva; the differences in the colour after drying may be caused by the age of the root. Under the microscope, it is porous, spongy, resinous, with a glistening fracture. Another Corydalis also somewhat like Turkey Corn is C. Formosa, the fresh root of which is darkish yellow throughout and has a fracture much resembling honeycomb. The true Turkey Corn is much used by American eclectic practitioners. It is slightly bitter in taste and almost odourless. Tannic acid and all vegetable astringents are incompatible with preparations containing Turkey Corn, or with its alkaloid, Corydalin..

Cultivation: Easily grown in a rich light soil, preferably neutral to slightly acid. Prefers light shade and a sheltered position according to one report whilst another says that it prefers heavier shade. Grows well in a sheltered corner of the rock garden. The seed is very difficult to harvest, it ripens and falls from the plant very quickly. This species is closely related to D. cucullaria. After fruit set, the bulblets of Dicentra canadensis remain dormant until autumn, when stored starch is converted to sugar. At this time also, flower buds and leaf primordia are produced below ground; these then remain dormant until spring. Members of this genus are rarely if ever troubled by browsing deer.
Propagation : Seed – best sown as soon as it is ripe in a cold frame. Stored seed should be sown in early spring. Germination usually takes place within 1 – 6 months at 15°c. Two weeks warm stratification at 18°c followed by six weeks at 2°c can shorten up the germination time. When they are large enough to handle, prick the seedlings out into individual pots and grow them on in the greenhouse for their first winter. Plant them out into their permanent positions in late spring or early summer, after the last expected frosts. Division in early spring. Larger clumps can be replanted direct into their permanent positions, though it is best to pot up smaller clumps and grow them on in a cold frame until they are rooting well. Plant them out in the spring. Root cuttings 7 – 10cm long in sandy soil in a cold frame
Edible Uses: The root is known to be edible.

Part Used: Dried tubers.
Constituents: The amount of alkaloids in the dried tubers is about 5 per cent; they have been found to contain corydalin, fumaric acid, yellow bitter extractive, an acrid resin and starch. The constituents of the drug have not been exactly determined, but several species of the closely allied genus Corydalis have been carefully studied and C. tuberosa, cava and bulbosa have been found to yield the following alkaloids: Corycavine, Bulbocapnine and Corydine; Corydaline is a tertiary base, Corycavine is a difficult soluble base; Bulbocapnine is present in largest amount and was originally called Corydaline. Corydine is a strong base found in the mother liquor of Bulbocapnine and several amorphous unnamed bases have been found in it. All these alkaloids have narcotic action. Protopine, first isolated from opium, has been found in several species of Dicentra and in C. vernyim, ambigua and tuberosa.

The dried tubers are alterative, diuretic and tonic. The tubers are useful in the treatment of chronic cutaneous affections, syphilis, scrofula and some menstrual complaints. Turkey Corn is often combined with other remedies, such as Stillingia, Burdock or Prickly Ash.

Known Hazards : The plant is potentially poisonous and can also cause skin rashes.
