Description:

Varieties:
Within the species, Allium sativum, there are also two main subspecies or varieties.
Allium sativum var. ophioscorodon (Link) Döll, called Ophioscorodon, or hard necked garlic, includes porcelain garlics, rocambole garlic, and purple stripe garlics. It is sometimes considered to be a separate species, Allium ophioscorodon G.Don.
Allium sativum var. sativum, or soft-necked garlic, includes artichoke garlic, silverskin garlic, and creole garlic.

Bulb garlic is available in many forms, including fresh, frozen, dried, fermented (black garlic) and shelf stable products (in tubes or jars). In addition, see Culinary uses for other edible parts of the garlic plant.

Origin and major types:
According to Zohary and Hopf, “A difficulty in the identification of its wild progenitor is the sterility of the cultivars”, though it is thought to be descended from the species Allium longicuspis, which grows wild in central and southwestern Asia. Allium sativum grows in the wild in areas where it has become naturalized. The “wild garlic”, “crow garlic”, and “field garlic” of Britain are members of the species Allium ursinum, Allium vineale, and Allium oleraceum, respectively. In North America, Allium vineale (known as “wild garlic” or “crow garlic”) and Allium canadense, known as “meadow garlic” or “wild garlic” and “wild onion”, are common weeds in fields.[8] One of the best-known “garlics”, the so-called elephant garlic, is actually a wild leek (Allium ampeloprasum), and not a true garlic. Cultivation:
Garlic is easy to grow and can be grown year-round in mild climates. While sexual propagation of garlic is indeed possible, nearly all of the garlic in cultivation is propagated asexually, by planting individual cloves in the ground In cold climates, cloves are planted in the autumn, about six weeks before the soil freezes, and harvested in late spring. The cloves must be planted at sufficient depth to prevent freeze/thaw which causes mold or white rot[11] Garlic plants are usually very hardy, and are not attacked by many pests or diseases. Garlic plants are said to repel rabbits and moles. Two of the major pathogens that attack garlic are nematodes and white rot disease, which remain in the soil indefinitely after the ground has become infected. Garlic also can suffer from pink root, a typically nonfatal disease that stunts the roots and turns them pink or red.

Garlic plants can be grown closely together, leaving enough space for the bulbs to mature, and are easily grown in containers of sufficient depth. Garlic does well in loose, dry, well drained soils in sunny locations, and is hardy throughout USDA climate zones 4 – 9. When selecting garlic for planting, it is important to pick large heads from which to separate cloves. Large cloves, along with proper spacing in the planting bed, will also improve head size. Garlic plants prefer to grow in a soil with a high organic material content, but are capable of growing in a wide range of soil conditions and pH levels.

There are different types or subspecies of garlic, most notably hardneck garlic and softneck garlic. The latitude where the garlic is grown affects the choice of type as garlic can be day-length sensitive. Hardneck garlic is generally grown in cooler climates; softneck garlic is generally grown closer to the equator.

Garlic scapes are removed to focus all the garlic’s energy into bulb growth. The scapes can be eaten raw or cooked.

Edible Uses:
Garlic is widely used around the world for its pungent flavor as a seasoning or condiment.

The garlic plant’s bulb is the most commonly used part of the plant. With the exception of the single clove types, garlic bulbs are normally divided into numerous fleshy sections called cloves. Garlic cloves are used for consumption (raw or cooked) or for medicinal purposes. They have a characteristic pungent, spicy flavor that mellows and sweetens considerably with cooking.

Other parts of the garlic plant are also edible. The leaves and flowers (bulbils) on the head (spathe) are sometimes eaten. They are milder in flavor than the bulbs, and are most often consumed while immature and still tender. Immature garlic is sometimes pulled, rather like a scallion, and sold as “green garlic”.   When green garlic is allowed to grow past the “scallion” stage, but not permitted to fully mature, it may produce a garlic “round”, a bulb like a boiling onion, but not separated into cloves like a mature bulb. Additionally, the immature flower stalks (scapes) of the hardneck and elephant types are sometimes marketed for uses similar to asparagus in stir-fries.

Inedible or rarely eaten parts of the garlic plant include the “skin” and root cluster. The papery, protective layers of “skin” over various parts of the plant are generally discarded during preparation for most culinary uses, though in Korea immature whole heads are sometimes prepared with the tender skins intact.[22] The root cluster attached to the basal plate of the bulb is the only part not typically considered palatable in any form.

Garlic is a fundamental component in many or most dishes of various regions, including eastern Asia, South Asia, Southeast Asia, the Middle East, northern Africa, southern Europe, and parts of South and Central America. The flavour varies in intensity and aroma with the different cooking methods. It is often paired with onion, tomato, or ginger. The parchment-like skin is much like the skin of an onion, and is typically removed before using in raw or cooked form. An alternative is to cut the top off the bulb, coat the cloves by dribbling olive oil (or other oil-based seasoning) over them, and roast them in an oven. Garlic softens and can be extracted from the cloves by squeezing the (root) end of the bulb, or individually by squeezing one end of the clove. In Korea, heads of garlic are fermented at high temperature; the resulting product, called black garlic, is sweet and syrupy, and is now being sold in the United States, United Kingdom and Australia.

Garlic may be applied to different kinds of bread to create a variety of classic dishes, such as garlic bread, garlic toast, bruschetta, crostini and canapé.

Oils can be flavored with garlic cloves. These infused oils are used to season all categories of vegetables, meats, breads and pasta.

In some cuisines, the young bulbs are pickled for three to six weeks in a mixture of sugar, salt, and spices. In eastern Europe, the shoots are pickled and eaten as an appetizer.

Immature scapes are tender and edible. They are also known as “garlic spears”, “stems”, or “tops”. Scapes generally have a milder taste than the cloves. They are often used in stir frying or braised like asparagus. Garlic leaves are a popular vegetable in many parts of Asia. The leaves are cut, cleaned, and then stir-fried with eggs, meat, or vegetables.

Mixing garlic with egg yolks and olive oil produces aioli. Garlic, oil, and a chunky base produce skordalia. Blending garlic, almond, oil, and soaked bread produces ajoblanco.

Garlic powder has a different taste from fresh garlic. If used as a substitute for fresh garlic, 1/8 teaspoon of garlic powder is equivalent to one clove of garlic.

Medicinal Uses:
Garlic is claimed to help prevent heart disease (including atherosclerosis, high cholesterol, and high blood pressure) and cancer. Animal studies, and some early research studies in humans, have suggested possible cardiovascular benefits of garlic. A Czech study found garlic supplementation reduced accumulation of cholesterol on the vascular walls of animals. Another study had similar results, with garlic supplementation significantly reducing aortic plaque deposits of cholesterol-fed rabbits. Another study showed supplementation with garlic extract inhibited vascular calcification in human patients with high blood cholesterol. The known vasodilative effect of garlic is possibly caused by catabolism of garlic-derived polysulfides to hydrogen sulfide in red blood cells (RBCs), a reaction that is dependent on reduced thiols in or on the RBC membrane. Hydrogen sulfide is an endogenous cardioprotective vascular cell-signaling molecule.

A randomized clinical trial funded by the National Institutes of Health (NIH) in the United States and published in the Archives of Internal Medicine in 2007 found the consumption of garlic in any form did not reduce blood cholesterol levels in patients with moderately high baseline cholesterol levels.

However, a 2012 meta-analysis of randomized, double-blind, placebo-controlled trials looking at the effects of garlic on serum lipid profiles, found garlic was superior to placebo in reducing serum total cholesterol and triglyceride levels. Compared with the placebo groups, serum total cholesterol and triglyceride levels in the garlic groups was reduced by 0.28 (95% CI, ?0.45, ?0.11) mmol L?¹ (P = 0.001) and 0.13 (95% CI, ?0.20, ?0.06) mmol L?¹ (P < 0.001), respectively.

Allium sativum has been found to reduce platelet aggregation and hyperlipidemia.

In 2007, the BBC reported Allium sativum may have other beneficial properties, such as preventing and fighting the common cold. This assertion has the backing of long tradition in herbal medicine, which has used garlic for hoarseness and coughs. The Cherokee also used it as an expectorant for coughs and croup. However, in contrast to these earlier claims concerning the cold-preventing properties of garlic, a 2012 report in the Cochrane Database of Systematic Reviews concludes that “there is insufficient clinical trial evidence regarding the effects of garlic in preventing or treating the common cold. A single trial suggested that garlic may prevent occurrences of the common cold but more studies are needed to validate this finding. Claims of effectiveness appear to rely largely on poor-quality evidence.”

Garlic is also alleged to help regulate blood sugar levels. Regular and prolonged use of therapeutic amounts of aged garlic extracts lower blood homocysteine levels and has been shown to prevent some complications of diabetes mellitus. People taking insulin should not consume medicinal amounts of garlic without consulting a physician.

Garlic was used as an antiseptic to prevent gangrene during World War I and World War II. More recently, it has been found from a clinical trial that a mouthwash containing 2.5% fresh garlic shows good antimicrobial activity, although the majority of the participants reported an unpleasant taste and halitosis.

Garlic cloves are used as a remedy for infections (especially chest problems), digestive disorders, and fungal infections such as thrush. Garlic can be used as a disinfectant because of its bacteriostatic and bacteriocidal properties.

Garlic has been found to enhance thiamin absorption, and therefore reduces the likelihood for developing the thiamin deficiency beriberi.

In 1924, it was found to be an effective way to prevent scurvy, because of its high vitamin C content.

Garlic has been used reasonably successfully in AIDS patients to treat Cryptosporidium in an uncontrolled study in China. It has also been used by at least one AIDS patient to treat toxoplasmosis, another protozoal disease.

Garlic supplementation has been shown to boost testosterone levels in rats fed a high protein diet.

A 2010 double-blind, parallel, randomised, placebo-controlled trial, involving 50 patients whose routine clinical records in general practice documented treated but uncontrolled hypertension, concluded, “Our trial suggests that aged garlic extract is superior to placebo in lowering systolic blood pressure similarly to current first line medications in patients with treated but uncontrolled hypertension.”

Other uses:
The sticky juice within the bulb cloves is used as an adhesive in mending glass and porcelain. An environmentally benign garlic-derived polysulfide product is approved for use in the European Union  and the UK as a nematicide and insecticide, including for use for control of cabbage root fly and red mite in poultry

Spiritual and religious uses:
Garlic has been regarded as a force for both good and evil. According to Cassell’s Dictionary of Superstitions, there is an Islamic myth that considers that after Satan left the Garden of Eden, garlic arose in his left footprint and onion in the right. In Europe, many cultures have used garlic for protection or white magic, perhaps owing to its reputation as a potent preventative medicine. Central European folk beliefs considered garlic a powerful ward against demons, werewolves, and vampires. To ward off vampires, garlic could be worn, hung in windows, or rubbed on chimneys and keyholes.

In both Hinduism and Jainism, garlic is considered to stimulate and warm the body and to increase one’s desires. Some devout Hindus generally avoid using garlic and the related onion in the preparation of foods for religious festivities and events. Followers of the Jain religion avoid eating garlic and onion on a daily basis.

A belief among some Hindus is that when Devas and Asuras fought for nectar during churning of the ocean of milk (Samudramathan) in the other world, two Asuras were able to get access to nectar and had some quantity in their mouths in stealthy ways. Knowing the Asuras’ foul play the God cuffed the heads of those Asuras before they could swallow it and as a result nectar fell down on the earth from their mouths in drops which later grew as garlic; that is why the vegetable has such wonderful medicinal properties.

In some Buddhist traditions, garlic – along with the other five “pungent spices” – is understood to stimulate sexual and aggressive drives to the detriment of meditation practice.

In the Philippine folklore garlic is used to drive away monsters.

Known Hazards:
Garlic is known for causing bad breath (halitosis), as well as causing sweat to have a pungent “garlicky” smell, which is caused by allyl methyl sulfide (AMS). AMS is a volatile liquid which is absorbed into the blood during the metabolism of garlic-derived sulfur compounds; from the blood it travels to the lungs (and from there to the mouth, causing bad breath; see garlic breath) and skin, where it is exuded through skin pores. Washing the skin with soap is only a partial and imperfect solution to the smell. Studies have shown sipping milk at the same time as consuming garlic can significantly neutralize bad breath.  Mixing garlic with milk in the mouth before swallowing reduced the odor better than drinking milk afterward. Plain water, mushrooms and basil may also reduce the odor; the mix of fat and water found in milk, however, was the most effective.

The green, dry “folds” in the center of the garlic clove are especially pungent. The sulfur compound allicin, produced by crushing or chewing fresh garlic, produces other sulfur compounds: ajoene, allyl polysulfides, and vinyldithiins. Aged garlic lacks allicin, but may have some activity due to the presence of S-allylcysteine.

In a rat study allicin was found to be an activator of TRPA1. The neurons released neurotransmitters in the spinal cord to generate pain signals and released neuropeptides at the site of sensory nerve activation, resulting in vasodilation, as well as inflammation. Allicin is released only by crushing or chewing raw garlic and cannot be formed from cooked garlic.

Some people suffer from allergies to garlic and other plants in the allium genus. Symptoms can include irritable bowel, diarrhea, mouth and throat ulcerations, nausea, breathing difficulties, and, in rare cases, anaphylaxis. Garlic-sensitive patients show positive tests to diallyl disulfide, allylpropyldisulfide, allylmercaptan and allicin, all of which are present in garlic. People who suffer from garlic allergies will often be sensitive to many plants, including onions, garlic, chives, leeks, shallots, garden lilies, ginger, and bananas.

Garlic reduces platelet aggregation (as does aspirin); this had caused very high quantities of garlic and garlic supplements to be linked with an increased risk of bleeding, particularly during pregnancy and after surgery and childbirth, although culinary quantities are safe for consumption.

Several reports of serious burns resulting from garlic being applied topically for various purposes, including naturopathic uses and acne treatment, indicate care must be taken for these uses, usually testing a small area of skin using a very low concentration of garlic. On the basis of numerous reports of such burns, including burns to children, topical use of raw garlic, as well as insertion of raw garlic into body cavities, is discouraged. In particular, topical application of raw garlic to young children is not advisable. The side effects of long-term garlic supplementation, if any exist, are largely unknown, and no FDA-approved study has been performed. Possible side effects include gastrointestinal discomfort, sweating, dizziness, allergic reactions, bleeding, and menstrual irregularities. The safety of garlic supplements has not been determined for children; some breastfeeding mothers have found their babies slow to feed and have noted a garlic odour coming from their baby when they have consumed garlic.

Garlic may interact with warfarin, antiplatelets, saquinavir, antihypertensives, calcium channel blockers, quinolone family of antibiotics such as Cipro,and hypoglycemic drugs, as well as other medications. Members of the alium family might be toxic to cats or dogs. Some degree of liver toxicity has been demonstrated in rats, particularly in extremely large quantities exceeding those that a rat would consume under normal situations

Description:
The clove is an evergreen tree, 15 to 30 feet tall. It has opposite, ovate leaves more than 5 inches long; and its flowers, when allowed to develop, are red and white, bell-shaped, and grow in terminal clusters. The familiar clove used in the kitchen is the dried flower bud. The fruit is a one- or two-seeded berry.

The clove tree is endemic in the North Moluccas (Indonesia) and was of old cultivated on the islands of Ternate, Tidore, Bacan and the West coast of Halmahera. Uses:
Cloves can be used in cooking either whole or in a ground form, but as they are extremely strong, they are used sparingly.

Cloves have historically been used in Indian cuisine (both North Indian and South Indian). In North Indian cuisine, it is used in almost all rich or spicy dishes as an ingredient of a mix named garam masala, along with other spices, although it is not an everyday ingredient for home cuisine, nor is it used in summer very often. In the Maharashtra region of India it is used sparingly for sweet or spicy dishes, but rarely in everyday cuisine. In Ayurvedic medicine it is considered to have the effect of increasing heat in system, hence the difference of usage by region and season. In south Indian cuisine, it is used extensively in biryani along with “cloves dish” (similar to pilaf, but with the addition of other spices), and it is normally added whole to enhance the presentation and flavor of the rice.

Dried cloves are also a key ingredient in Indian masala chai, spiced tea, a special variation of tea popular in some regions, notably Gujarat. In the US, it is often sold under the name of “chai” or “chai tea”, as a way of differentiating it from other types of teas sold in the US.

In Mexican cuisine, cloves are best known as ‘clavos de olor’, and often used together with cumin and cinnamon.

In Vietnamese cuisine, cloves are often used to season the broth of Pho.

Due to the Indonesian influence, the use of cloves is widespread in the Netherlands. Cloves are used in cheeses, often in combination with cumin. Cloves are an essential ingredient for making Dutch speculaas. Furthermore, cloves are used in traditional Dutch stews like hachee.

Non-culinary uses:
The spice is used in a type of cigarette called kretek in Indonesia. Kreteks have been smoked throughout Europe, Asia and the United States. In 2009, clove cigarettes (as well as fruit and candy flavored cigarettes) were outlawed in the US. However, they are still sold in similar form, re-labeled as “filtered clove cigars.”

Cloves are also an important incense material in Chinese and Japanese culture. And clove essence is commonly used in the production of many perfumes.

During Christmas, it is a tradition in some European countries to make pomanders from cloves and oranges to hang around the house. This spreads a nice scent throughout the house and acts as holiday decorations.

Clove oil anesthesia and overdose is considered a humane method for euthanizing fish.

Constituents:
Eugenol comprises 72-90% of the essential oil extracted from cloves, and is the compound most responsible for the cloves’ aroma. Other important essential oil constituents of clove oil include acetyl eugenol, beta-caryophyllene and vanillin; crategolic acid; tannins, gallotannic acid, methyl salicylate (painkiller); the flavonoids eugenin, kaempferol, rhamnetin, and eugenitin; triterpenoids like oleanolic acid, stigmasterol and campesterol; and several sesquiterpenes.

Eugenol has pronounced antiseptic and anaesthetic properties. Of the dried buds, 15 – 20 percent is essential oils, and the majority of this is eugenol. A kilogram (2.2 lbs) of dried buds yields approximately 150 ml (1/4 of pint) of eugenol.

Eugenol can be toxic in relatively small quantities—as low as 5 ml.

Medicinal Uses:
Traditional Chinese physicians have long used the herb to treat indigestion, diarrhea, hernia, and ringworm, as well as athlete’s foot and other fungal infections.  India’s traditional Ayurvedic healers have used clove since ancient times to treat respiratory and digestive ailments.  America’s 19th century Eclectic physicians used clove to treat digestive complaints and added it to bitter herb-medicine preparations to make them more palatable.  The Eclectics were also the first to extract clove oil from the herbal buds. It has antiseptic, stimulant, stomachic and digestive properties.  As an anti-infectant, cloves are effective against coli bacilli, streptococci, staphylococci, pneumococci and as an antimycotic.  The oil, too, is used in dentistry for its antiseptic and analgesic properties, and, like the whole cloves and powdered cloves, for local pain-relieving purposes.  Eugenol is a local anesthetic used in dental fillings and cements; a rubifacient and a carminative.  It is also an irritant and an allergic sensitizer.      Besides all their other uses, cloves can be used to treat acne, skin ulcers, sores, and styes.  They also make a potent mosquito and moth repellent which is where the clove studded orange pomander comes from.

Traditional medicinal uses:
Cloves are used in Indian Ayurvedic medicine, Chinese medicine, and western herbalism and dentistry, where the essential oil is used as an anodyne (painkiller) for dental emergencies. Cloves are used as a carminative, to increase hydrochloric acid in the stomach and to improve peristalsis. Cloves are also said to be a natural anthelmintic. The essential oil is used in aromatherapy when stimulation and warming are needed, especially for digestive problems. Topical application over the stomach or abdomen are said to warm the digestive tract. Clove oil, applied to a cavity in a decayed tooth, also relieves toothache. It also helps to decrease infection in the teeth due to its antiseptic properties.

In Chinese medicine cloves or ding xiang are considered acrid, warm and aromatic, entering the kidney, spleen and stomach meridians, and are notable in their ability to warm the middle, direct stomach qi downward, to treat hiccough and to fortify the kidney yang. Because the herb is so warming it is contraindicated in any persons with fire symptoms and according to classical sources should not be used for anything except cold from yang deficiency. As such it is used in formulas for impotence or clear vaginal discharge from yang deficiency, for morning sickness together with ginseng and patchouli, or for vomiting and diarrhea due to spleen and stomach coldness. This would translate to hypochlorhydria. Clove oil is used in various skin disorders like acne, pimples etc. It is also used in severe burns, skin irritations and to reduce the sensitiveness of skin.

Cloves may be used internally as a tea and topically as an oil for hypotonic muscles, including for multiple sclerosis. This is also found in Tibetan medicine. Some recommend avoiding more than occasional use of cloves internally in the presence of pitta inflammation such as is found in acute flares of autoimmune diseases.

Star anise is the unusual fruit of a small oriental tree. It is, as the name suggests, star shaped, radiating between five and ten pointed boat-shaped sections, about eight on average. These hard sections are seed pods. Tough skinned and rust coloured, they measure up to 3cm (1-1/4”) long. The fruit is picked before it can ripen, and dried. Flavour: Evocative of a bitter aniseed, of which flavour star anise is a harsher version. Nervertheless, the use of star anise ensures an authentic touch in the preparation of certain Chinese dishes.

Star anise is a spice that closely resembles anise in flavor, obtained from the star-shaped pericarp of Illicium verum, a small native evergreen tree of southwest China. The star shaped fruits are harvested just before ripening. It is widely used in Chinese cuisine, in Indian cuisine where it is a major component of garam masala, and in Malay/Indonesian cuisine. It is widely grown for commercial use in China, India, and most other countries in Asia. Star anise is an ingredient of the traditional five-spice powder of Chinese cooking. It is also one of the ingredients used to make the broth for the Vietnamese noodle soup called ph?. It is used as a spice in preparation of Biryani in Andhra Pradesh, a south Indian State.

Medicinal Properties:
Like anise, star anise has carminative, stomachic, stimulant and diuretic properties. In the East it is used to combat colic and rheumatism. It is a common flavouring for medicinal teas, cough mixtures and pastilles.

Star anise has been used in a tea as a remedy for colic and rheumatism, and the seeds are sometimes chewed after meals to aid digestion.

Shikimic acid, a primary feedstock used to create the anti-flu drug Tamiflu, is produced by most autotrophic organisms, but star anise is the industrial source. In 2005, there was a temporary shortage of star anise due to its use in making Tamiflu. Late in that year, a way was found of making shikimic acid artificially. A drug company named Roche now derives some of the raw material it needs from fermenting E. coli bacteria. There is no longer any shortage of star anise and it is readily available and is relatively cheap.

Star anise is grown in four provinces in China and harvested between March and May. The shikimic acid is extracted from the seeds in a ten-stage manufacturing process which takes a year. Reports say 90% of the harvest is already used by the Swiss pharmaceutical manufacturer Roche in making Tamiflu, but other reports say there is an abundance of the spice in the main regions – Fujian, Guangdong, Guangxi and Yunnan.

Japanese star anise (Illicium anisatum), a similar tree, is not edible because it is highly toxic; instead, it has been burned as incense in Japan. Cases of illness, including “serious neurological effects, such as seizures”, reported after using star anise tea may be a result of using this species. Japanese star anise contains anisatin, which causes severe inflammation of the kidneys, urinary tract and digestive organs.

Culinary Uses:
Star anise is used in the East as aniseed is in the West. Apart from its use in sweetmeats and confectionery, where sweeteners must be added, it contributes to meat and poultry dishes, combining especially well with pork and duck. In Chinese red cooking, where the ingredients are simmered for a lengthy period in dark soy sauce, star anise is nearly always added to beef and chicken dishes. Chinese stocks and soups very often contain the spice.. It flavours marbled eggs, a decorative Chinese hors d’oeuvre or snack. Mandarins with jaded palates chew the whole dried fruit habitually as a post-prandial digestant and breath sweetener – an oriental comfit. In the West, star anise is added in fruit compotes and jams, and in the manufacture of anise-flavoured liqueurs, the best known being anisette. It is an ingredient of the mixture known as “Chinese Five Spices”.

Star anise contains anethole, the same ingredient which gives the unrelated anise its flavor. Recently, star anise has come into use in the West as a less expensive substitute for anise in baking as well as in liquor production, most distinctively in the production of the liquor Galliano. It is also used in the production of Sambuca, pastis, and many types of absinthe.

Description:
Berberis is a deciduous shrub growing up to 4 m high. The leaves are small oval, 2–5 cm long and 1–2 cm broad, with a serrated margin; they are borne in clusters of 2-5 together, subtended by a three-branched spine 3–8 mm long. The flowers are yellow, 4–6 mm across, produced on 3–6 cm long panicles in late spring. The fruit is an oblong red berry 7–10 mm long and 3–5 mm broad, ripening in late summer or autumn; they are edible but very sour, and rich in Vitamin C.
Flowers: The flowers are small, pale yellow, arranged in pendulous racemes, 10 to 20 per raceme, towards the ends of the branches. Petals are not notched. Flowers: April – June
Berries: About 1/2 inch long, the bright red, oblong and slightly curved berries ripen in August and September. Bark: Has a slight odor and a bitter taste; colors the saliva yellow when chewed.

History: Barberry has been used in herbal healing for more than 2,500 years. The ancient Egyptians used it to prevent plagues. India‘s Ayurveda healers used it for dysentery.
During the middle ages, European herbalists used Barberry to treat liver and gallbladder ailments, infections, stomach problems and skin conditions. Russian healers used it for inflammations, high blood pressure, and for abnormal uterine bleeding.
Native American Indians made a bitter brew from the yellow root. Used in small doses, Barberry tonic was used as an effective treatment for heartburn, stomach upset and ulcers. It was also used to stimulate appetite.

Edible Uses:
The berries are edible and rich in vitamin C, though with a very sharp flavor; the thorny shrubs make harvesting them difficult, so in most places, they are not widely consumed. They are an important food for many small birds, which disperse the seeds in their droppings.

A widely available Russian candy called  Barberis is made using extract from the berries, which are pictured on the wrapper.

In Europe, the berries have been traditionally used as an ingredient in making jam. The berries are high in pectin which makes the jam congeal as it cools after having been boiled. In southwestern Asia, especially Iran, the berries are used for cooking, as well as for jam-making. In Iran, barberries are commonly used as a currant in rice pilaf.

Constituents: Berberine (a yellow crystalline, bitter alkaloid), oxyacanthine, berbamine (another bitter alkaloid), tannin, wax, resin, fat, albumin, gum, and starch.

Medicinal Properties and Uses :- Barberry is believed to be an excellent remedy for correcting liver function and promoting the flow of bile. Indicated for inflammation of the gall bladder, gall stones and jaundice (when due to a congested state of the liver). As a bitter tonic with mild laxative effects, it is believed to strengthen and cleanse the system. Also said to be effective in reducing an enlarged spleen The root-bark contains berberine, a bitter alkaloid, that aids in the secretion of bile and is good for liver problems, acts as a mild purgative, and helps regulate the digestive processes. The antibacterial properties of the alkaloid berbamine have shown activity against Staphylococcus, Streptococcus, Salmonella, Shigella and Eschorichia Coli. It has anti-microbial properties that are especially beneficial for the skin and intestinal tract. Barberry has a beneficial effect on the blood pressure by causing a dilatation of the blood vessels. This herb is also good for hepatitis, colic, diabetes and consumption. Historically, Barberry was used as a bitter tonic to stimulate digestion, and in the treatment of inflammatory arthritic, sciatica, and rheumatic complaints. Use of this botanical decreases heart rate, depresses the breathing, stimulates intestinal movement, reduces bronchial constriction, and kills bacteria on the skin. External applications have included use for sores, burns, ulcers, acne, itch, tetters, ringworm, cuts, bruises. Berberine is highly bactericidal, amoeboidal and trypanocidal. Bitter tonic, cholagogue, hepatic, laxative, antibilious, anti-emetic.

Its main Properties are Anti-emetic, Antiseptic, Astringent, Bitter, Cholagogue, Hepatic, Laxative, Purgative, Refrigerant, Stomachic, and Tonic.

Barberry acts on the gallbladder to improve bile flow and ameliorate conditions such as gallbladder pain, gallstones, and jaundice.  Barberry’s strongly antiseptic property is of value in cases of amebic dysentery, cholera and other similar gastrointestinal infections.  Barberry is one of the mildest and best liver tonics known, good for jaundice, hepatitis and diabetes.
The berberine in barberry has remarkable infection-fighting properties.  Studies around the world show it kills microorganisms that cause wound infections (Staphylococci, Streptococci), diarrhea (Salmonella, Shigella), dysentery (Endamoeba histolytica), cholera (Vibrio cholerae), giardiasis Giardia lamblia), urinary tract infections (Escherichia coli) and vaginal yeast infections (Candida albicans).  Berberine may also fight infection by stimulating the immune system.  Studies show that it activates the macrophages, white blood cells that devour harmful microorganisms.  In Germany, a berberine preparation, Ophthiole, is used to treat sensitive eyes, inflamed lids, and pinkeye (conjunctivitis).  Barberry contains chemicals that may help reduce elevated blood pressure by enlarging blood vessels.
The bark is astringent, antidiarrheal, and healing to the intestinal wall—in short, barberry has a strong, highly beneficial effect on the digestive system as a whole.  It helps in the treatment of chronic skin conditions such as eczema and psoriasis. The decoction makes a gentle and effective wash for the eyes, although it must be diluted sufficiently before use.  Liquid of the chewed root was placed on injuries and on wounds, while cuts and bruises were washed with a root decoction.  A preparation of the bark or berries will be useful as a gargle for sore mouth and chronic opthalmia.    It has been successfully used to treat Leishmaniasis (infections transmitted by sandflies).  It has the ability to reduce an enlarged spleen and acts against malaria.

Main Uses: Barberry is mainly used today as a tonic to improve the flow of bile in such conditions as gallbladder pain, gallstones and jaundice. Barberry tinctures are used as a treatment for liver problems such as hepatitis and jaundice. It is also considered effective in lowering blood pressure, reducing heart rate and respiration, reducing bronchial constriction, and for menstrual irregularities.
Berberine has strong anti-microbial and fungicidal properties. It is also astringent and anti-inflammatory. It is said to make a good eyewash. Inflamed eyelids or conjunctivitis can benefit from the application of a compress.

Preparation And Dosages:
Tincture: [1:5, 50% alcohol] 3 to 7 drops, 3 to 4 times a day.

Decoction: Use 1/2 to 1 teaspoon root bark with 1 cup water. Boil briefly, then steep for 5 minutes. Take 1/2 to 1 cup during the day, a mouthful at a time.
Ointment: An ointment made from a 10% extract of Barberry can be applied to the skin three times a day.

Combinations: In gall-bladder diseases Barberry combines well with Fringe Tree Bark and Culver’s Root.

Caution! Avoid during pregnancy; Barberry may stimulate the uterus. In high doses, it can cause nausea, vomiting, convulsions, drop in blood pressure, and lowered heart rate and breathing. If you suffer from heart disease or chronic respiratory problems, do not take large doses of this herb and use only with the approval of your physician.
