Habitat : Valerianella olitoria is native to Europe, including Britain, from Scandanavia south and east to N. Africa and W. Asia. It is  now grows wild in parts of Europe, northern Africa and western Asia. In Europe and Asia it is a common weed in cultivated land and waste spaces. In North America it has escaped cultivation and become naturalized on both the eastern and western seaboards
Description:
Valerianella olitoria is a small, annual, bright-green plant, with succulent stems, 6 to 12 inches high, generally forking from the very base, or at least within the lowest quarter of their height. The first leaves, springing from the root, are 1 to 3 inches long, bluntly lance-shaped scarcely-stalked, generally decaying early. The stem leaves are quite stalkless, often stem-clasping. The flowers are minute and are greenish-white in appearance, arranged in close, rounded, terminal heads, surrounded by narrow bracts, the tiny corolla is pale lilac, but so small that the heads of flowers do not give the appearance of any colour…..CLICK & SEE THE PICTURES

Cultivation & propagation:   When cultivated in gardens, Valerianella olitoria may be sown in rows all through the autumn, winter and early spring, so as to produce a constant succession of crops. A small portion of garden earth sown with the seeds in August, will supply an excellent portion of the salad throughout the winter. The younger the leaves, the better they taste in salad.

Edible Uses: Young leaves  is eaten  raw as salad. A very mild flavour, with a delicate quality that makes them seem to melt in the mouth, they can be added in quantity to salads. The leaves can be available all year round from successional sowings and will only require protection in the colder winters. Flowers and flowering stems  are also  eaten raw.

Nutrition:
Valerianella olitoria  or corn salad has many nutrients, including three times as much vitamin C as lettuce, beta-carotene, B6, iron, and potassium. It is best if gathered before flowers appear

Medicinal Uses:
This herb was in request by country folk in former days as a spring medicine, and a homoeopathic medicinal tincture is made from the fresh root.

Habitat: Jerusalem artichoke is  native to eastern North America, and found from eastern Canada and Maine west to North Dakota, and south to northern Florida and Texas. It is also cultivated widely across the temperate zone for its tuber, which is used as a root vegetable.It grows  on rich and damp thickets.

Description:
Jerusalem artichoke is a herbaceous perennial plant growing to 1.5–3 m (4 ft 11 in–9 ft 10 in) tall with opposite leaves on the upper part of the stem but alternate below. The leaves have a rough, hairy texture and the larger leaves on the lower stem are broad ovoid-acute and can be up to 30 cm (12 in) long, and the higher leaves smaller and narrower.

The flowers are yellow and produced in capitate flowerheads, which are 5–10 cm (2.0–3.9 in) in diameter, with 10–20 ray florets.

The tubers are elongated and uneven, typically 7.5–10 cm (3.0–3.9 in) long and 3–5 cm (1.2–2.0 in) thick, and vaguely resembling ginger root in appearance, with a crisp texture when raw. They vary in colour from pale brown to white, red, or purple.

The artichoke contains about 10% protein, no oil, and a surprising lack of starch. However, it is rich in the carbohydrate inulin (76%), which is a polymer of the monosaccharide fructose. Tubers stored for any length of time will convert their inulin into its component fructose. Jerusalem artichokes have an underlying sweet taste because of the fructose, which is about one and a half times sweeter than sucrose.

Jerusalem artichokes have also been promoted as a healthy choice for type 2 diabetics, because fructose is better tolerated by people who are type 2 diabetic. It has also been reported as a folk remedy for diabetes. Temperature variances have been shown to affect the amount of inulin the Jerusalem artichoke can produce. When not in tropical regions, it has been shown to make less inulin than when it is in a warmer region.

Cultivation:     
A very easily grown plant, it grows best in a loose circumneutral loam but succeeds in most soils and conditions in a sunny position. Plants are more productive when grown in a rich soil. Heavy soils produce the highest yields, but the tubers are easily damaged at harvest-time so lighter well-drained sandy loams are more suitable. Dislikes shade. Likes some lime in the soil. Jerusalem artichoke is reported to tolerate an annual precipitation of 31 to 282cm, an average annual temperature of 6.3 to 26.6°C and a pH in the range of 4.5 to 8.2. Jerusalem artichokes were cultivated as a food plant by the N. American Indians and they are today often grown in temperate areas for their edible tubers. There are some named varieties. The plant is a suitable crop in any soil and climate where corn (Zea mays) will grow. It survives in poor soil and in areas as cold as Alaska. It also tolerates hot to sub-zero temperatures. The first frost kills the stems and leaves, but the tubers can withstand freezing for months. The plants are particularly suited to dry regions and poor soils where they will out-yield potatoes. Tuber production occurs in response to decreasing day-length in late summer. Yields range from 1 – 2kg per square metre. The tubers are very cold-tolerant and can be safely left in the ground in the winter to be harvested as required. They can be attacked by slugs, however, and in sites prone to slug damage it is probably best to harvest the tubers in late autumn and store them over the winter. It is almost impossible to find all the tubers at harvest time, any left in the soil will grow away vigorously in the spring. Plants do not flower in northern Europe. They are sensitive to day-length hours, requiring longer periods of light from seedling to maturation of plant, and shorter periods for tuber formation. They do not grow where day-lengths vary little. The plant is good weed eradicator, it makes so dense a shade that few other plants can compete. The young growth is extremely attractive to slugs, plants can be totally destroyed by them. Members of this genus are rarely if ever troubled by browsing deer or rabbits. Plants only produce flowers in Britain after a long hot summer and seed is rarely formed. Grows well with corn. Plants can be invasive.

Propagation:     
Seed – sow spring in a cold frame. When they are large enough to handle, prick the seedlings out into individual pots and grow them on in the greenhouse for their first winter. Plant them out into their permanent positions in late spring or early summer, after the last expected frosts. Division in spring or autumn[200]. Harvest the tubers in late autumn or the winter and either replant the tubers immediately or store them in a cool but frost-free place and plant them out in early spring. Jerusalem artichoke is propagated by tubers, which should be planted as early as possible in the spring when the soil can be satisfactorily worked. Late planting usually reduces tuber yields and size seriously. Whole tubers or pieces about 50 g (2 oz.) should be planted like potatoes and covered to a depth of 10 cm. Pieces larger than 50 g do not increase the yield, though those smaller will decrease it. Deeper planting may delay emergence, weaken the sprouts, and cause the tubers to develop deeper, making harvest more difficult[269]. Basal cuttings in spring. Harvest the shoots when they are about 10 – 15cm long with plenty of underground stem. Pot them up into individual pots and keep them in light shade in a cold frame or greenhouse until they are rooting well. Plant them out in the summer.

Edible Uses: Coffee;  Sweetener.
Tubers – raw or cooked. The tuber develops a pleasant sweetness during the winter, especially if subjected to frosts, and is then reasonably acceptable raw. Otherwise it is generally best cooked, and can be used in all the ways that potatoes are used. The tubers are rich in inulin, a starch which the body cannot digest, so Jerusalem artichokes provide a bulk of food without many calories. Some people are not very tolerant of inulin, it tends to ferment in their guts and can cause quite severe wind. The tubers are fairly large, up to 10cm long and 6cm in diameter. The tubers bruise easily and lose moisture rapidly so are best left in the ground and harvested as required. Other Uses:
Biomass.:  The plants are a good source of biomass. The tubers are used in industry to make alcohol etc. The alcohol fermented from the tubers is said to be of better quality than that from sugar beets. A fast-growing plant, Jerusalem artichokes can be grown as a temporary summer screen. Very temporary, it is July before they reach a reasonable height and by October they are dying down.

Description:
Sichuan pepper is a deciduous shrub that grows 2 feet high by about 1 meter wide.Stem with rough colored bark, branched and covered with spines.
The leaves are pinnate, with an odd number of leaflets oval opposite (5 to 19), alternate and dark green. In fall, the leaves becom yellow stained.

It flowers from April to June in the northern hemisphere. The Japanese pepper tree is a dioecious species, that’s to say, it has male plants and female plants. The variety to provide fruits must have both sexes.

The flowers are yellowish green, small and aromatic, fruity . They are formed on old wood, in the axils of the new branches.

The fruit is a capsule-sized sessile like peppercorns (3 to 5 mm in diameter), which grow in groups of 4 in the stem end, but only 1 or 2 fruits fail to develop.

Cultivation:
Easily grown in loamy soils in most positions, but prefers a good deep well-drained moisture retentive soil in full sun or semi-shade. A plant has been growing well for many years in deep woodland shade at Cambridge Botanical gardens, it was fruiting heavily in autumn 1996. Cultivated for its seed, which is used as a condiment in China. Flowers are formed on the old wood. The bruised leaves are strongly aromatic. Dioecious. Male and female plants must be grown if seed is required. Special Features:Inconspicuous flowers or blooms, Blooms appear periodically throughout the year.
Propagation:
Seed – best sown in a greenhouse as soon as it is ripe in the autumn. Stored seed may requires up to 3 months cold stratification, though scarification may also help. Sow stored seed in a cold frame as early in the year as possible. Germination should take place in late spring, though it might take another 12 months. Prick out the seedlings into individual pots when they are large enough to handle and grow them on in a cold frame for their first winter. Plant them out in early summer. Cuttings of half-ripe wood, July/August in a frame. Root cuttings, 3cm long, planted horizontally in pots in a greenhouse. Good percentage. Suckers, removed in late winter and planted into their permanent positions.

Edible Uses:
The plant (fruit) is used as a spice . Its leaves are also edible.

Sichuan pepper’s unique aroma and flavour is not hot or pungent like black, white, or chili peppers. Instead, it has slight lemony overtones and creates a tingly numbness in the mouth (caused by its 3% of hydroxy alpha sanshool) that sets the stage for hot spices. According to Harold McGee in On Food and Cooking, they are not simply pungent; “they produce a strange, tingling, buzzing, numbing sensation that is something like the effect of carbonated drinks or of a mild electrical current (touching the terminals of a nine-volt battery to the tongue). Sanshools appear to act on several different kinds of nerve endings at once, induce sensitivity to touch and cold in nerves that are ordinarily nonsensitive, and so perhaps cause a kind of general neurological confusion.”

Recipes often suggest lightly toasting the tiny seed pods, then crushing them before adding them to food. Only the husks are used; the shiny black seeds are discarded or ignored as they have a very gritty sand-like texture. The spice is generally added at the last moment. Star anise and ginger are often used with it in spicy Sichuan cuisine. It has an alkaline pH and a numbing effect on the lips when eaten in larger doses. Ma la (Chinese: ??; pinyin: málà; literally “numbing and spicy”), common in Sichuan cooking, is a combination of Sichuan pepper and chili pepper, and it is a key ingredient in má là hot pot, the Sichuan version of the traditional Chinese dish. It is also a common flavouring in Sichuan baked goods such as sweetened cakes and biscuits.

Sichuan pepper is also available as an oil. In this form, it is best used in stir-fry noodle dishes without hot spices. The recipe may include ginger oil and brown sugar cooked with a base of noodles and vegetables, then rice vinegar and Sichuan pepper oil are added after cooking.

Hua jiao yan is a mixture of salt and Sichuan pepper, toasted and browned in a wok and served as a condiment to accompany chicken, duck, and pork dishes. The peppercorns can also be lightly fried to make a spicy oil with various uses.

In Indonesian Batak cuisine, andaliman (a relative of Sichuan pepper) is ground and mixed with chilies and seasonings into a green sambal tinombur or chili paste, to accompany grilled pork, carp, and other regional specialties. Arsik, a Batak dish from the Tapanuli region, uses andaliman as spice.

Sichuan pepper is one of the few spices important for Nepali (Gurkha), Tibetan and Bhutanese cookery of the Himalayas, because few spices can be grown there. One Himalayan specialty is the momo, a dumpling stuffed with vegetables, cottage cheese or minced yak meat, water buffalo meat, or pork and flavoured with Sichuan pepper, garlic, ginger, and onion, served with tomato and Sichuan pepper-based gravy. Nepalese-style noodles are steamed and served dry, together with a fiery Sichuan pepper sauce.

In Korean cuisine, two species are used: Z. piperitum and Z. schinifolium.

Medicinal uses:
Native North Americans use the ground bark of Szechuan plant as a remedy for toothache.
Like in anise, these peppercorns too found application in traditional medicines as stomachic, anti-septic, anti-spasmodic, carminative, digestive, expectorant, stimulant and tonic. It is used in the treatment of gastralgia and dyspepsia due to cold with vomiting, diarrhoea, abdominal pain, ascariasis and dermal diseases. It has a local anaesthetic action and is parasiticide against the pork tapeworm (Taenia solium). The pericarp contains geraniol. In small doses this has a mild diuretic action, though large doses will inhibit the excretion of urine. There is a persistent increase in peristalsis at low concentration, but inhibition at high concentration. The leaves are carminative, stimulant and sudorific. The fruit is carminative, diuretic, stimulant, stomachic and tonic. The seed is antiphlogistic and diuretic. A decoction of the root is digestive and also used in the treatment of snakebites. The resin contained in the bark, and especially in that of the roots, is powerfully stimulant and tonic.

Description:
Copaifera Langsdorffii is a medium-sized tree usually reaching 12 meters in height, with white flowers and small, oily fruits. The wood is light due to its porosity. And, it is honeycombed with capillaries filled with oil. Tapping the tree involves cutting a well into which the oil seeps and where it can be easily collected. Despite its vigorous production of oil, the tree does not grow well outside of the tropics, and does not show promise as a reliable source of biodiesel in temperate climates.

It produces a large amount of terpene hydrocarbons in its wood and leaves. One tree can produce 30 to 53 liters of hydrocarbons per year, en masse producing 10,000 – 12,000 litres/hectare/year which is incredibly high. The oil is collected by tree tapping.

The first yield is clear, colourless and very thin, but in contact with the air its consistency soon becomes thicker and yellower. It is most largely collected from Para and Maranhao in Brazil, and is brought to this country in small casks and barrels; large quantities also come from Maracaibo in Venezuela, and it is also exported from Angostura, Cayenne, Rio Janeiro and some of the West Indian Islands. The variety that comes from Venezuela is more viscid and darker in colour.

Medicinal Uses:
Part Used: Oleoresin.

Chemical Constituents: Volatile oil, resin. Amorphous resin acids and resenes.

Copaiba is a clear transparent liquid of the consistency of olive oil, pale yellow with a peculiar but not unpleasant odour, taste bitterish, hot and nauseous; the substance it most closely resembles is turpentine. As it contains no benzoic acid, it cannot properly be called a resin.

Stimulant, diuretic, carminative, laxative; in large doses purgative, causing nausea, vomiting, strangury, bloody urine and fever. A good remedy for chronic catarrh and bronchitis, as it assists expectoration and is antiseptic; is given with advantage in leucorrhoea, chronic cystitis, diarrhoea and haemorrhoids. It is chiefly used in gonorrhoea (though not advocated for chronic cases), often combined with cubebs and sandal. It has also been recommended externally for chilblains. Both the volatile oil and resin are greatly altered when expelled in the urine, and when precipitated by nitric acid might be mistaken for albumen; it is considered a valuable hydragogue diuretic in obstinate dropsy.

It creates an irritant action on the whole mucous membrane, imparts a peculiar odour to the urine and breath, causes an eruption resembling measles attended with irritation and tingling; it is the resin, not the oleoresin, that is used as a diuretic.

Other Uses:
1.The main compound in the oil is copaiba, an oleoresin which is useful in the production of oil products such as lacquers and can be used as biodiesel. The tree is also the main source of copaene, another terpene.

2.Bees utilize the tree for pollen collection.

3.The wood can be burned for firewood or used in carpentry  work.

Description:
The olive tree, Olea europaea, is an evergreen tree or shrub.  It is short and squat, and rarely exceeds 8–15 metres (26–49 ft) in height. However, the Pisciottana, a unique variety comprising 40,000 trees found only in the area around Pisciotta in the Campania region of southern Italy often exceeds 8–15 metres (26–49 ft) with correspondingly large trunk diameters. The silvery green leaves are oblong, measuring 4–10 centimetres (1.6–3.9 in) long and 1–3 centimetres (0.39–1.2 in) wide. The trunk is typically gnarled and twisted.

The small white, feathery flowers, with ten-cleft calyx and corolla, two stamens and bifid stigma, are borne generally on the previous year’s wood, in racemes springing from the axils of the leaves.

The fruit is a small drupe 1–2.5 centimetres (0.39–0.98 in) long, thinner-fleshed and smaller in wild plants than in orchard cultivars. Olives are harvested in the green to purple stage. Canned black olives may contain chemicals (usually ferrous sulfate) that turn them black artificially.

Olea europaea contains a seed commonly referred to in American English as a pit or a rock, and in British English as a stone.
There are dozens of ancient olive trees throughout Israel and Palestine whose age has earlier been estimated to be 1,600–2,000 years old; however, these estimates could not be supported by current scientific practices. Ancient trees include two giant olive trees in Arraba and five trees in Deir Hanna, both in the Galilee region, which have been determined to be over 3,000 years old,[35] although there is no available data to support the credibility of the study that produced these age estimates and as such the 3000 years age estimate can not be considered valid. All seven trees continue to produce olives. Several trees in the Garden of Gethsemane (from the Hebrew words “gat shemanim” or olive press) in Jerusalem are claimed to date back to the purported time of Jesus.

Some Italian olive trees are believed to date back to Roman times, although identifying progenitor trees in ancient sources is difficult. A tree located in Santu Baltolu di Carana (municipality of Luras) in Sardinia, Italy, named with respect as the Ozzastru by the inhabitants of the region, is claimed to be 3,000 to 4,000 years old according to different studies.[citation needed] There are several other trees of about 1,000 years old within the same garden. Subspecies:
There are six natural subspecies of Olea europaea distributed over a wide range:
*Olea europaea subsp. europaea (Mediterranean Basin)
*Olea europaea subsp. cuspidata (from South Africa throughout East Africa, Arabia to South West China)
*Olea europaea subsp. guanchica (Canaries)
*Olea europaea subsp. cerasiformis (Madeira)
*Olea europaea subsp. maroccana Morocco
*Olea europaea subsp. laperrinei (Algeria, Sudan, Niger)

The subspecies maroccana and cerasiformis are respectively hexaploid and tetraploid

Cultivation: The earliest evidence for the domestication of olives comes from the Chalcolithic Period archaeological site of Teleilat Ghassul in what is today modern Jordan.

Farmers in ancient times believed that olive trees would not grow well if planted more than a certain distance from the sea; Theophrastus gives 300 stadia (55.6 km or 34.5 mi) as the limit. Modern experience does not always confirm this, and, though showing a preference for the coast, they have long been grown further inland in some areas with suitable climates, particularly in the southwestern Mediterranean (Iberia, northwest Africa) where winters are mild.

Olives are now cultivated in many regions of the world with Mediterranean climates, such as South Africa, Chile, Peru, Australia, and California and in areas with temperate climates such as New Zealand, under irrigation in the Cuyo region in Argentina which has a desert climate. They are also grown in the Córdoba Province, Argentina, which has a temperate climate with rainy summers and dry winters (Cwa). The climate in Argentina changes the external characteristics of the plant but the fruit keeps its original features. The northernmost olive grove is placed in Anglesey, an island off the north west coast of Wales, in the United Kingdom: but it is too early to say if the growing will be successful, having been planted in 2006.

Olive oil for heart healthy foods is a monounsaturated oil that is widely used in healthy cooking, and as a salad dressing. Even the extremely conservative FDA allows suppliers of virgin olive oil to carry heart health claims on there consumer packaging. Some care must be taken to not expose virgin olive oil to high heat when cooking, as this can cause heat damage that break down the oil. Traditional fermentation and curing:-
Green olives and black olives are typically washed thoroughly in water to remove oleuropein, a bitter glycoside.

Green olives are allowed to ferment before being packed in a brine solution. American black (“California”) olives are not fermented, which is why they taste milder than green olives.

In addition to oleuropein, freshly picked olives are not palatable because of phenolic compounds. (One exception is the throubes olive, which can be eaten fresh.) Traditional cures use the natural microflora on the fruit to aid in fermentation, which leads to three important outcomes: the leaching out and breakdown of oleuropein and phenolic compounds; the creation of lactic acid, which is a natural preservative; and a complex of flavoursome fermentation products. The result is a product which will store with or without refrigeration.

Curing can employ lye, salt, brine, or fresh water. Salt cured olives (also known as dry cured) are packed in plain salt for at least a month, which produces a salty and wrinkled olive. Brine cured olives are kept in a salt water solution for a few days or more. Fresh water cured olives are soaked in a succession of baths, changed daily.  Green olives are usually firmer than black olives.

Olives can also be flavoured by soaking in a marinade or pitted and stuffed. Popular flavourings include herbs, spices, olive oil, chili, lemon zest, lemon juice, wine, vinegar, and juniper berries; popular stuffings include feta cheese, blue cheese, pimento, garlic cloves, jalapeños, almonds, and anchovies. Sometimes, the olives are lightly cracked with a hammer or a stone to trigger fermentation. This method of curing adds a slightly bitter taste

Olive oil is very stable in comparison with many other nut and vegetable oils and is often used to make medicinal  herbal oils using herbs such as comfrey, arnica, garlic and many others. Olive is more than just a stable base oil for making these oil infusions, it adds its own analgesic and antibacterial properties to the mix as well. 19

With evidence mounting about the damage of diets high saturated fats, and conversely the heart healthy benefits of monounsaturated oils like olive, it becomes abundantly clear which oils to choose for healthy cooking and salad dressings. If you cannot afford olive oil use canola or safflower oils, both of which are much better than the lower grade corn oils. 20

Extracts from the leaf of the olive tree are also used to lower fevers, and olive leaf poultices are among the oldest therapies for infections of the skin. The slender, feather shaped leaves have antimicrobial and antioxidant medicinal properties that kill germs and disinfect wounds. 21 Olive leaf extracts have also been studied for use in diabetes, and cancer prevention.

Other Uses:
The olive tree, Olea europaea, has been cultivated for olive oil, fine wood, olive leaf, and the olive fruit.
