Family :Zingerberaceae (Ginger family).
Synonym :Amomum melegueta.

Common Names: Grains of paradise, nengrekondre pepre, alligator pepper, guinea grains, graines de paradis, atar, paradies kõrner, grani de Meleguetta, paradijs korrels, Grana paradise, poivre de Guinée, malaguette, Malagettapfeffer, grani de paradiso.

Parts Used: Dried ripe seeds and oil. In commerce the pods and seeds are found whole, shelled, and ground (green or roasted).

Habitat :Alligator pepper is  native to West Africa; brought over to Surinam by the slaves to swampy habitats along the West African coast.

Description:
A herbaceous plant reaching 1-4 m in height. The stem is short and marked with scars of fallen leaves. The leaves are lanceolate and  about 30 cm long and 12 cm wide, with close nerves below. The flowers are handsome, aromatic and with orange-coloured lip and a rich pinkish-orange upper part. The fruits are fleshy and indehiscent, and contains numerous small golden- or red-brown seeds. USES The cardemom-flavored seeds are used as a spice and carminative and the can also be used to spice wine and beer. Fruit, seed, leaf and rhizome have medicinal properties.

The plants which provide alligator pepper are herbaceous perennials  flowering plants  reaching 1-4 m in height.The stem is short and marked with scars of fallen leaves. The leaves are about 30 cm long and 12 cm wide, with close nerves below. The flowers are handsome, aromatic and with orange-coloured lip and a rich pinkish-orange upper part. Once the pod is open and the seeds are revealed the reason for this spice’s common English name becomes apparent as the seeds have a papery skin enclosing them and the bumps of the seeds within this skin is reminiscent of an alligator’s back.

The trumpet-shaped, purple flowers develop into 5 – 7 cm long grayish – brown, wrinkled dried pods (capsules) containing the numerous very small seeds.
These are almost oval in shape, hard, shiny, and have a reddish-brown color.

The important part of this plant is the seed; the small (3-4 mm =1/8″) reddish – brown seeds have a pungent aroma with a pepper – like heat.
This much sought after spice is tempered with, among others, flavors reminiscing of hazelnut, butter and citrus.
The essential oil from grains of paradise consists of two sesquiterpenes, humelene and caryophyllene and the oxides of these.
It has an exotic tropical scent and flavor and is used for the production of beer, wine and spirits, and the flavoring of vinegar.
It is used in the Surinam cuisine to flavor dishes such as vegetables (okra and tomatoes recipes), soups (lentil and chicken) and fish recipes.
The rhizome of the plant is used medicinally and is also is an important part from the diet of Western lowland gorillas in Africa.

As mbongo spice the seeds of alligator pepper is often sold as the grains themselves, isolated from the pod and with the outer skin removed. Mbongo spice is most commonly either Aframomum danielli or Aframomum citratum and has a more floral aroma than Aframomum exscapum (which is the commonest source of the entire pod).

It is a common ingredient in West African cuisine where it imparts both ‘heat’, ‘pungency‘ and a spicy aroma to classic West African ‘soups’ (stews).

Use in cuisine:
Even in West Africa, alligator pepper is an expensive spice and is used sparingly. Often a single whole pod is pounded in a pestle and mortar before half of it is added (along with black pepper) as a flavouring to West African ‘soups’ (stews) or to boiled rice. The spice can also be substituted in any recipe using grains of paradise or black cardamom to provide a hotter and more pungent flavour.

When a baby is born in Yoruba culture, they are given a small taste of alligator pepper shortly after birth as part of the routine baby welcoming process and it is also used as an ingredient at traditional meet-and-greets.

In Igbo land, alligator pepper with kola nuts are used in naming ceremonies, as presentation to visiting guests and for other social events.

Medicinal Uses:
As a purgative, galactogogue (to increase production of breast milk), anthelmintic- and hemostatic agent (purifies the blood). It is also effective against schistosomiasis (bilharzia).
Further is it used against intestinal infections, infestations, to calm indigestion and heartburn.
The seeds of Aframomum melegueta possess potent anti-inflammatory activity with a favorable gastric tolerability profile.
Phytochemical analysis revealed the presence of alkaloids, glycosides, tannins, flavonoids, sterols, triterpenes, and oils, while the methanol fraction contains alkaloids, glycosides, tannins, flavonoids, sterols, and resins.
The pungent, peppery taste of the seeds is caused by aromatic ketones such as (6)-paradol; essential oils occur only in traces.

Cradle Cap

Alternative Names:  Seborrheic eczema; Cradle cap,infantile or neonatal seborrhoeic dermatitis,
crusta lactea, milk crust, honeycomb disease.

Definition:
Cradle cap  is a yellowish, patchy, greasy, scaly and crusty skin rash that occurs on the scalp of recently born babies. It is usually not itchy, and does not bother the baby. Cradle cap most commonly begins sometime in the first 3 months. Similar symptoms in older children are more likely to be dandruff than cradle cap. The rash is often prominent around the ear, the eyebrows or the eyelids. It may appear in other locations as well, where it is called seborrhoeic dermatitis rather than cradle cap. Some countries use the term pityriasis capitis for cradle cap. It is extremely common, with about half of all babies affected. Most of them have a mild version of the disorder. Severe cradle cap is rare.

It’s not due to poor hygiene and isn’t contagious or an allergy. Cradle cap tends to run in families, so there may be a genetic predisposition.

Cradle cap usually resolves on its own within a few months. Self-care measures, such as washing your baby’s scalp daily with a mild shampoo, can help loosen and remove the cradle cap scales. If cradle cap persists or seems severe, your doctor may suggest a medicated shampoo, lotion or other treatment.

Symptoms:-
Common signs of cradle cap include:

Similar scales may also be present on the ears, eyelids, nose and groin.

Cradle cap is most common in newborns. It isn’t contagious and probably won’t bother your baby. In most cases, the condition isn’t itchy for infants.

Causes:
Cradle cap is not caused by a bacterial infection, allergy, nor from poor hygiene. Doctors are not in agreement as to the causes, but the two most common hypotheses include fungal infection and overactive sebaceous glands.

In many cases, what is commonly called cradle cap is actually a fungal infection. This infection may be related to antibiotics given to the mother just before the infant’s birth, or the infection could be related to antibiotics routinely given to infants during the first week of life. Antibiotics kill both harmful bacteria as well as the helpful bacteria that prevent the growth of yeast, which is why people who are prone to fungal infections will often discover a fungal infection after taking a round of antibiotics. In infants, the fungus is mostly likely to appear on the scalp (cradle cap), diaper area (fungal diaper rash, jock itch), ear (fungal ear infection, or an ear infection that does not respond to antibiotics),or in the mouth (thrush).

Another common cause of cradle cap appears to be a common manifestation of biotin insufficiency. This may be due, in part, to the influence of biotin on fatty acid biosynthesis. Possibly it has to do with overactive sebaceous glands in the skin of newborn babies, due to the mother’s hormones still in the baby’s circulation. The glands release a greasy substance that makes old skin cells attach to the scalp instead of falling off as they dry. There may be a relationship with skin yeasts (Pityrosporum ovale, newly renamed Malassezia furfur). Seborrheic dermatitis is the adult version of cradle cap

SOME SIGNS OF WARNING:-
If the condition thickens, turns red and irritated, starts spreading, appears on other body parts, or if the baby develops thrush (fungal mouth infection), fungal ear infection (an ear infection that does not respond to antibiotics) or a persistent diaper rash, medical intervention is recommended.

Severe cases of cradle cap, especially with cracked or bleeding skin, can provide a place for bacteria to grow. If the cradle cap is caused by a fungal infection which has worsened significantly over days or weeks to allow bacterial growth (impetigo, most commonly), a combination treatment of antibiotics and antifungals may be necessary. Since it is difficult for a layperson to distinguish the difference between sebaceous gland cradle cap, fungal cradle cap, or either of these combined with a bacterial infection, medical advice should be sought if the condition appears to worsen.

Cradle cap is occasionally linked to immune disorders. If the baby is not thriving and has other problems (e.g. diarrhoea), a doctor should be consulted.

Possible Complications:
•Psychological distress, low self esteem, embarrassment
•Secondary bacterial or fungal infections

Treatment:
Treatment other than gentle washing is not necessary in most mild cases (flaking, with or without small patches of yellow crusting), as the problem often resolves itself whether the cause is sebaceous-gland-related or fungal, but since many patients (and/or parents) are concerned about cosmetic issues, the following options are often considered:

-For all ages: Home remedies include the application of various oils, lotions, or petroleum jelly. There is little adequate or controlled research to support or negate the usefulness of most common home remedies at any age, but there is anecdotal evidence to support either position. When cradle cap is related to fungal infection, treatment for other fungal infections can also work. Tinea capitis is one example of a fungal cause. Doctors may prescribe a seven-day daily application of clotrim (commonly prescribed for jock itch or athlete’s foot) or miconazol nitrate (commonly prescribed for vaginal yeast infections).

-For infants: in cases that are related to fungal infection, doctors may recommend once-daily application of clotrim (1%) or miconozal nitrate (2%) for seven to fourteen days.

-Application of  lavender oil may be helpful for fungal infection.

-For toddlers: doctors may recommend a treatment with a mild dandruff shampoo such as Selsun Blue or Neutrogena T-gel, even though the treatment may cause initial additional scalp irritation. A doctor may instead prescribe an antifungal soap such as ketoconazole (2%) shampoo, which can work in a single treatment and shows significantly less irritation than over-the-counter shampoos such as selenium sulfide shampoos, but no adequate and controlled study has been conducted for pediatric use as of 2010.

-For adults: Seborrheic dermatitis (the adult version of cradle cap) usually requires the use of an antifungal shampoo, possibly along with the nightly application of an antifungal cream or an anti-itch cream/gel like Scalpicin. Some doctors also recommend the supplementation of a B-vitamin complex to improve fatty acid metabolism..

Scalp, behind ears, eyebrows:
The common home remedy of applying oil (vegetable, particularly olive oil, or mineral oil) liberally to the scalp and letting it soak in overnight or for lesser periods of time seems to conflict with the fact that Malassezia yeasts thrive in oily environments preferring saturated fats, although anecdotal reports suggest it may be effective. This may be because olive oil is primarily unsaturated fat and does not promote fungal growth. If the cradle cap is not severe, you may try to comb it out gently after bathing. The softened scales can then be brushed away with a soft brush, comb or cloth, but if not done very gently, this can worsen the condition and bring about temporary hair loss. There has been no studies done on these recommendations. Applying petroleum jelly (e.g., Vaseline) liberally overnight is another popular treatment. The softened scales either fall off during the night, or can be brushed off in the morning. Making a paste from sodium bicarbonate (baking soda) and leaving it on the affected area for 10 minutes can also help lift the scales.

There is broad disagreement regarding the role of shampoos. Some sources warn against frequent shampooing, others recommend it. Mild baby shampoo is often recommended, while never specifying what “mild” actually means. Baby shampoos often contain detergent surfactants, perfumes, quaternium-15 and other eczemagenic irritants. Again, no studies have been performed on non-prescription shampoos.

Keratolytic (dandruff) shampoos (e.g. with sulfur, selenium, zinc pyrithione, or salicylic acid) are generally not recommended as they sting eyes and may worsen the dermatitis. In stubborn cases some doctors do recommend them while others warn against the use of medicated shampoos in newborns due to systemic absorption. Dandruff shampoos often contain sodium dodecyl sulfate, a noted skin irritant.

Steroid and tar preparations have also been used but have significant drawbacks. Immunomodulators (tacrolimus/Protopic, pimecrolimus/Elidel) have not been approved for babies under two years.

Ketoconazole shampoos and creams are taking first place in medical treatment of moderate to serious cradle cap. Research so far indicates that this anti-fungal medication is not absorbed into the bloodstream. Ketoconazole shampoo is currently made with a number of problematic irritants and allergens.

A Swedish study   found good results from massaging the scalp with small amounts of borage oil twice a day.

Other home remedies recommended in various alternative sources and parent forums are herbal washes (e.g. burdock or chamomile), aloe gel, and tea tree oil (Melaleuca oil) shampoo. Tea tree oil and aloe can be sensitizers; any worsening should be an occasion to discontinue the remedy in question. Both remedies have been tested in medical trials and found useful.

Eyelids:…….click & see
Typical medical advice is to use diluted baby shampoo on a cotton swab to cleanse the eyelid. There is no agreement on the dilution, which ranges from a few drops to a half cup warm water, to a 50/50 mix. No studies have been performed on the efficacy or safety of this treatment. (Please note the problems with baby shampoo noted above.) In adults, a study comparing soap and baby shampoo to commercial eyelid scrubs found that patients strongly preferred not to put soap or shampoo on their eyelids. Baking soda has also been recommended (a teaspoonful in a cup of boiled water) and is well accepted by adults. Boiled warm water wash may help.


Prognosis:
As the baby matures this conditions will be cleared.However, studies have shown that the condition occasionally persists into the toddler years, and less commonly into later childhood. It tends to recur in adolescence and persists into adulthood. In an Australian study, about 15 percent of previously diagnosed children still had eczema 10 years later. Sometimes, cradle cap turns into atopic dermatitis. Rarely, it turns out to be misdiagnosed psoriasis.

Prevention:
Shampooing your baby’s hair every few days can help prevent cradle cap. Stick with a mild baby shampoo unless your baby’s doctor recommends something stronger.

The severity of cardle cap can be lessened by controlling the risk factors and by paying careful attention to skin care.

Polyunsaturated fats are the absolute WORST oils to use when cooking because these omega-6-rich oils are highly susceptible to heat damage.

Damaged omega-6 fats are disastrous to your health, and are responsible for far more health problems than saturated fats ever were.

Trans fat is the artery-clogging, highly damaged omega-6 polyunsaturated fat that is formed when vegetable oils are hardened into margarine or shortening.

Dr. Mercola says :”I  strongly recommend never using margarine or shortening when cooking. I guarantee you you’re already getting far too much of this damaging fat if you consume any kind of processed foods, whether it be potato chips, pre-made cookies, or microwave dinners”..

Trans fat is the most consumed type of fat in the US, despite the fact that there is no safe level of trans fat consumption, according to a report from the Institute of Medicine.

Trans fat raises your LDL (bad cholesterol) levels while lowering your HDL (good cholesterol) levels, which of course is the complete opposite of what you want. In fact, trans fats — as opposed to saturated fats — have been repeatedly linked to heart disease. They can also cause major clogging of your arteries, type 2 diabetes and other serious health problems.

Personally I don’t cook very much but when I do I use our Pure Virgin Coconut Oil as it is the most resistant to heating damage, but also a great source of medium chained triglycerides and lauric acid.

So, cleaning these oils out of your kitchen cupboard is definitely recommended if you value your health.

The mushroom is commonly known among English speakers as Hen-of-the-Woods, Ram’s Head and Sheep’s Head. In the United States‘ supplement market, as well as in Asian grocery stores, the mushroom is known by its Japanese name “Maitake”, which means “dancing mushroom”. G. frondosa should not be confused with Laetiporus sulphureus, another edible bracket fungus that is commonly called chicken of the woods or “sulphur shelf“. The fungus becomes inedible like all polypores when they are older, because it is too tough to eat.


Habitat
: The fungus is native to the northeastern part of Japan and North America, and is prized in traditional Chinese and Japanese herbology as a medicinal mushroom, an aid to balance out altered body systems to a normal level. Grifola frondosa is a polypore mushroom that grows in clusters at the base of  old trees, particularly oaks.

Description:
Like the sulphur shelf mushroom, G. frondosa is a perennial fungus that often grows in the same place for a number of years in succession. It occurs most prolifically in the northeastern regions of the United States, but has been found as far west as Idaho.

Fruit: The fruiting body rises up from a underground tuber-like structure, about the size of a potato. Maitake mushrooms are very large, can grow up to over 50 pounds, occurring as large as 60 cm. In Japan, the Maitake can grow to more than 50 pounds (20 kilograms), earning this giant mushroom the title “King of Mushrooms.” Maitake is one of the major culinary mushrooms used in Japan, the others being shiitake, shimeji and enoki. They are used in a wide variety of dishes, often being a key ingredient in nabemono or cooked in foil with butter.

Most Japanese people find its taste and texture enormously appealing,  though the mushroom has been alleged to cause allergic reactions in rare cases.

The underground tubers from which hen of the woods arises have been used in traditional Chinese and Japanese medicine to enhance the immune system. Maitake is a proven cancer fighter. In laboratory tests, powdered maitake increased the activity of three types of immune cell–macrophages, natural killer (NK) cells, and T cells–by 140, 186, and 160 percent, respectively. The anticancer compound in maitake, sold commercially as the maitake D-fraction, has shown positive results in American studies on breast and colorectal cancer.

Maitake research:
In 2009, a phase I/II human trial, conducted by Memorial Sloan–Kettering Cancer Center, showed Maitake could stimulate the immune systems of breast cancer patients. Small experiments with human cancer patients, have shown Maitake can stimulate immune system cells, like NK cells.In vitro research has also shown Maitake can stimulate immune system cells. An in vivo experiment showed that Maitake could stimulate both the innate immune system and adaptive immune system.

In vitro research has shown Maitake can induce apoptosis in cancer cell lines (human prostatic cancer cells, Hep 3B cells, SGC-7901 cells, murine skin carcinoma cells) as well as inhibit the growth of various types of cancer cells (canine cancer cells, bladder cancer cells).Small studies with human cancer patients, revealed a portion of the Maitake mushroom, known as the “Maitake D-fraction”, possess anti-cancer activity. In vitro research demonstrated the mushroom has potential anti-metastatic properties. In 1997, the U.S. Food and Drug Administration (FDA) approved an Investigational New Drug Application for a portion of the mushroom.

Research has shown Maitake has a hypoglycemic effect, and may be beneficial for the management of diabetes. The reason Maitake lowers blood sugar is due to the fact the mushroom naturally contains a alpha glucosidase inhibitor.

Maitake contains antioxidants and may partially inhibit the enzyme cyclooxygenase. An experiment showed that an extract of Maitake inhibited angiogenesis via inhibition of the vascular endothelial growth factor (VEGF).

Lys-N is a unique protease found in Maike. Lys-N is used for proteomics experiments due to its protein cleavage specifity.

Olive Oil Protection Against Breast Cancer

Researchers have decoded a complete cascade of signals within breast tumor cells activated by virgin olive oil, and concluded that benefits include decrease in the activity of the oncogene p21Ras, changes in protein signaling pathways, stimulation of tumor cell death and prevention of DNA damage. The study was carried out in an experimental model and researchers have already begun a new study with human cell lines.

Breast cancer is the most common type of cancer in Western countries. Research carried out with animal models demonstrate that a diet rich in fats is directly related to the incidence of cancer. Some types of fats however can play a protective role against the development of these tumors. Such is the case of virgin olive oil, rich in oleic acid, a mono-unsaturated fatty acid, and containing several bioactive compounds such as antioxidants. A moderate and regular intake of virgin olive oil, characteristic of the Mediterranean diet, is associated with low incidences of specific types of cancer, including breast cancer, as well as with having a protective role against coronary diseases and other health problems.

The study decoded the mechanisms operating within the tumor cell and induced by the intake of olive oil, in comparison to those activated by corn oil, rich in n-6 polyunsaturated fatty acids, which increase the aggressiveness of tumors.

Scientists demonstrated that virgin olive oil is associated with higher incidences of benign breast tumors and at the same time with a decrease in the activity of the p21Ras oncogene, which spurs uncontrolled cell proliferation and stimulates the growth of tumors. In addition, olive oil suppresses the activity of some proteins, such as the AKT, essential for the survival of cells since they prevent apoptosis, the cell’s “suicide” program. Between proliferation and apoptosis in tumor cells, these effects tip the balance towards cell death, thereby slowing the growth of tumors.

Another result obtained by researchers is the protection of DNA in the cell nucleus. Cells from animals fed a diet rich in virgin olive oil contained less DNA lesions than those fed a control diet.

Scientists of the UAB Breast Cancer Study Multidisciplinary Group (GMECM) have spent over twenty years working to determine the effects fats have on breast cancer, and in particular the effects of virgin olive oil. Previous studies of the group revealed the beneficial effects of this component of the human diet on the clinical conduct of mammary tumors and on their histological grade (malignancy). Scientists also described several molecular mechanisms producing these effects and in 2004 the same group was the one to identify the four genes involved in the effects dietary fats have on experimental breast cancer.
