Habitat : Aspalathus linearis is naturally distributed in the winter rainfall area from about Vanrhynsdorp in the north to the Cape Peninsula and the Betty’s Bay area in the south. The area experiences cold wet winters and hot dry summers with about 300-350 mm of rain per annum. Rooibos tea is made from selected forms of the species found mainly on the Cederberg Mountains. It is cultivated on sandy soils in the valleys of the Olifants, Breede and Hex Rivers (Dahlgren 1988).

Derivation of name and historical aspects :
The genus name Aspalathus is derived from the Greek aspalathos, which was the name of a scented bush that grew in Greece. The epithet linearis is derived from the Latin word for linear, which in this case refers to the shape of the leaves.

Description
Aspalathus linearis is an erect to spreading, highly variable shrub or shrublet up to 2 m high. Its young branches are often reddish. The leaves are green and needle-like, 15-60 mm long and up to about 1 mm thick. They are without stalks and stipules and may be densely clustered. The yellow flowers, which appear in spring to early summer, are solitary or arranged in dense groups at the tips of branches. The fruit is a small lance-shaped pod usually containing one or two hard seeds.

Although many of the plants in the genus Aspalanthus are attractive, they have apparently seldom been grown in gardens. This is thought to be due to the difficulty in propagation by seed or root cuttings and in providing the optimal growing conditions for the plants. In order to grow Aspalathus linearis successfully, seeds must first be scarified and then planted in acid, sandy soils.

There are commercial plants of rooibos at the Cape. According to Mr S de Beer of Lambertshoek farm, Clanwillian, seeds which are obtained from the local rooibos tea management board have been treated and germinate easily. They are planted in seedbeds in March to a depth of 5-10cm and are ready for planting out by July. Plants are generally rainfall dependent and the plants prefer not to be too wet. No fertilizing is required and the plants grow quite well in nutrient poor conditions. The most common pest is Loopers or “Landmeter wurmpies” (the larvae of the family Geometridae and of the order Lepidoptera)

Cultivation:Aspalathus  Linearis  grows in sandy hills and on the sides of mountains. Well-drained, sandy but moisture-retaining, non-acidic soils. Generally farmers plant seeds in February and March and then transfer the seedlings to plantations. It takes 12- 18 months before the shrubs are ready to be harvested. The plants are harvested once each year, from December through April. They are harvested up to period of five years and then pulled out and new plants are planted.

Propagation:
Seed – sow late spring in a greenhouse covering the seed with about 10mm of soil. It will probably be beneficial to pre-soak the seed for 12 hours in warm water prior to sowing. Prick out the seedlings into individual pots of well-drained sandy soil as soon as they are large enough to handle. Grow them on in the greenhouse for at least their first winter and plant them out in late spring or early summer after the last expected frosts. It will probably be wise to give the plants protection from the cold and from excessive rain for at least their first winter outdoors. Cuttings of half-ripe wood in a closed frame in early summer

Hervesting:

The basic method of rooibos harvesting has remained largely the same as the process used centuries ago. An environmentally friendly way of harvesting tea is used that involves cutting only the young branches. Once they are cut, they are neatly bound and transported to the process yards. The older branches are left on the tree and the bushes get slightly taller every year. The tea cuttings are chopped very fine and then bruised to ensure that the important chemical reaction which develops the characteristic colour and flavour of the tea can take place. After watering and airing, the tea is left to “sweat” in heaps and it at this point that the tea acquires its typical reddish brown colour and develops its sweet flavour. After the sweating process has been completed, it is spread out in a large drying yard to dry in the sun.
The rest of the process involves sorting and grading the tea according to length, colour and flavour. The finished Rooibos is finally weighed, bagged, and sold to companies who pack the product in either teabags or in loose leaf form under their own brand names.

Main constituents:Rooibos contains Magnesium, zinc and iron which are all essential to a healthy nervous system. Zinc and iron in particular are important for brain functioning and concentration. It also contains Vitamin C, Alphahydroxy Acid, potassium, copper, calcium, iron, manganese and fluoride.

Uses:
Rooibos tea is a most popular drink for health-conscious people, as it contains no colourants, additives or preservatives and is free of caffeine.Aspalathus linearis is of great economic value. It was first used by the indigenous people of the Cederberg area and is currently a very popular tea.
A tea made from the dried fermented leaves tastes similar to oriental tea made from Camellia sinensis. It is less astringent, however, due to the lower tannin content. It is caffeine-free, but has a higher content of fluoride which might help to protect against tooth decay. Recent research has shown that this tea contains a substance similar to superoxide dismutase, an antioxidant compound that is thought to retard the ageing process. The leaves and stems are harvested in the summer, fermented and sun dried for later use. The leaves are sometimes used as a flavouring in foods and in baking.

Medicinal Uses:
It is considered healthy as it is caffeine-free, low in tannins and rich in anti-oxidants. It is not only enjoyed as a herbal tea, but is also used as an ingredient in cosmetics, in slimming products, as a flavouring agent in baking, cooking and cocktails and even as a treatment for infants who are prone to colic.

Habitat:Originally Asia. Today also cultivated in the Ivory Coast and Reggio di Calabria in southern Italy. Italian Bergamot is preferred. Extensively cultivated in southern France and Italy for a long time, it is believed the orange blossom as a symbol for marriage originated there.

Description:
A tree of the citrus family which is similar in appearance to Bitter Orange aka Seville Orange (C. aurantium), but with wider leaves and a more aromatic rind on the fruit. Both Neroli oil from the flowers, and Bergamot oil from the rinds, are obtained by distillation.Bergamot grows on small evergreen trees which blossom during the spring.

Leaves – The bergamot tree has an evergreen and a relatively light-green foliage, close to the one of the lemon tree. (Citrus limon)
Flowers – Flowers are white, star-shaped, and strongly fragrant. Branches are often thorny.
Fruits – The bergamot, or orange bergamot, is a citrus fruit that looks like a slightly flattened and small lemon. Its skin is yellow to orange-yellow. The bergamot is seldom eaten raw, but is rather candied or processed to get the essential oils it contains
Fragrance: Subtle orangey, citrus scent. Somewhat spicy.

Companion plant
Bergamot’s aromatic roots are thought to mask other nearby plants from pests that attack their roots, and so are sometimes grown as a companion in vegetable gardens.

Religious importance
It is believed that this herb is used in the rituals and spells for money and success.


USES:

In food
An essence extracted from the aromatic skin of this sour fruit is used to flavour Earl Grey tea and confectionery. One Italian food manufacturer produces a commercial marmalade using the fruit as its principal ingredient. It is also popular in Greece as a preserve, made with bergamot peel boiled in sugar syrup.

As a scent
Bergamot peel is used in perfumery for its ability to combine with an array of scents to form a bouquet of aromas which complement each other. Approximately one third of all men’s and about half of women’s perfumes contain bergamot essential oil. Bergamot was a component of the original Eau de Cologne developed in 17th century Germany – in 1704 the bergamot was first used to make the now famous “Eau de toilette” from the bergamot fruit by scooping out the pulp and squeezing the peel into sponges. 100 bergamot oranges will yield about 3 ounces of bergamot oil.

Medicinal Uses:
The strongly acidic fruit of the bitter orange stimulates the digestion and relieves flatulence. An infusion of the fruit is thought to soothe headaches, calm palpitations and lower fevers. The juice helps the body eliminate waste products, and, being rich in vitamin C, helps the immune system ward off infection. If taken to excess, however, its acid content can exacerbate arthritis. In Chinese herbal medicine, the unripe fruit, known as zhi shi, is thought to regulate the quick helping to relieve flatulence and abdominal bloating, and to open the bowels. The distilled flower water is antispasmodic and sedative.

In sunscreens:

In the past psoralen – extracted from bergamot oil – has been used in tanning accelerators and sunscreens. Psoralens penetrate the skin, where they increase the amount of direct DNA damage. This damage is responsible for sunburn and for an increased melanin production.

These substances were known to be photocarcinogenic since 1959, but they were only banned from sunscreens in 1995. These photocarcinogenic substances were banned years after they had caused many cases of malignant melanoma and deaths. Psoralen is now used only in the treatment of certain skin disorders, as part of PUVA therapy.

Witchcraft
Bergamot was said to be used by Italian calabrian wiccas that used the fruit in potions to make women fertile, men impotent, or to get rid of warts or blemishes. Today there is a well-known pagan cult that worship the god given name of the Bergamot. On their talismans is a bergamot orange.

In hoodoo rootwork, bergamot is used to control or command, and for this reason is used in a variety of spells and formulas in which a practitioner might wish to subdue another person.

Bergamot Oil (Citrus bergamia) – A light greenish-yellow liquid with a fresh sweet-fruity, slightly spicy-balsamic undertone. Blends well with lavender, neroli, jasmine, cypress, geranium, lemon, chamomile, juniper, coriander and violet. Contains 0.2-0.5% furocoumarin (as bergaptene). If used straight, it has severe phototoxicity. Avoid sunlight after use on skin. To avoid phototoxicity use in dilutions of less than 1%. Otherwise non-toxic and relatively non-irritating.
Extraction: Cold pressed from the peels.

MEDICINAL USES:

*Bitter, aromatic; relieves tension; antispasmodic; digestive aid.

*Formerly, the dried flowers were used in infusion form as a mild nervous stimulant.

This herb also known as Oswego tea and Bee Balm is good for the treatment of nausea, vomiting, cold and flu. If used in oil form is an effective treatment for Gingivitis, lost appetite, acne, coughs, fevers, tension, stress, and depression.


AROMATHERAPY:

Bergamot oil is considered sedative and healing and used for stress related problems, depression and anxiety. Neroli oil is considered stimulant and aphrodisiac. Both are used for skin conditions.

COSMETIC:
Increases tanning (do NOT apply directly to skin – photosensitivity)
Oil used in perfumery, diffuser (aromatherapy), massage, bath.

CULINARY:

Bergamot oil is used to flavor Earl Grey tea; also hard candy, tobacco, some chewing gum, baked goods and desserts.
Orange blossom water is used in desserts such as blancmange and in pastries.

Toxicology:
In one study, oil of bergamot has been linked to certain phototoxic effects (due to the chemical bergaptene) and blocking the absorption of potassium in the intestines.

Bergamot is also a source of bergamottin which, along with the chemically related compound 6’,7’-dihydroxybergamottin, is believed to be responsible for the grapefruit juice effect in which the consumption of the juice affects the metabolism of a variety of pharmaceutical drugs.

BITTER ORANGE (Citrus aurantium ssp amara): The peel is CONTRAINDICATED with stomach or intestinal ulcers; NOT given to children (possible toxic effects); NOT with ultraviolet or sun therapy (increased photosensitivity).

CAUTION:Because bergamot EO contains bergaptene and bergamotine, it needs to be used with care when applied to the skin. These two chemicals can produce over pigmentation of the skin when exposed to the sun or even just light. Do not apply bergamot oil to skin in greater than .5 to 1% diluted form in a base oil. It increases PHOTOSENSITIVITY.

Habitat :Through the 17th and 18th centuries, European travellers and botanists visiting the Cederberg region in South Africa commented on the profusion of “good plants” for curative purposes. In 1772, Swedish botanist Carl Thunberg noted that “the country people made tea” from a plant related to rooibos or redbush. Since then, rooibos has grown in popularity in South Africa, and has also gained considerable momentum in the worldwide market. A growing number of brand-name tea companies sell this tea, either by itself or as a component in an increasing variety of blends.

Description:

Technically, Rooibos is not a true tea. It comes from the plant Aspalathus linearis, rather than the Camellia plants that produce traditional teas. The name Rooibos comes from the Afrikaans word for ‘red bush’.
The Rooibos plant is a small shrubby bush that only grows in South Africa. The bush grows anywhere from 1/2 to 1 metre in height, with very thin, needle-like leaves. The leaves are green, but turn the characteristic red after fermentation.

The Rooibos seeds are precious, because the plants produce few of them. The seeds also pop out of the fruits as soon as they are ripe, making harvest difficult. Many farmers still raid anthills looking for Rooibos seeds.

It is a rather delicate plant, and the cultivation has not changed much over the years. The plants thrive best when left along in their natural soil. The farming of Rooibos has always been very close to nature and remains so today.

The locals have known that Rooibos can be used to make a delicious beverage for a very long time, but it was only ‘discovered’ in 1904 by a Russian immigrant named Benjamin Ginsberg. He was a settler in the area and thought that the tea was so enjoyable that it should be available to people everywhere. He was the first to market Rooibos tea.

Rooibos tea is a distinctive red colour and its taste is also unique with a very sweet and slightly nutty flavour. Its delicious taste and numerous healthful qualities has helped Rooibos become a popular tea all over the world. It is still fairly ‘new’ but more and more people are coming to love this unique red tea.

Rooibos has increased in popularity not only because of its wonderful colour and taste, but because of all the great things it can do for your health.
Rooibos has no caffeine and is low in tannin, so it can be enjoyed all day long without any unpleasant side effects. This also makes it a great tea for pregnant women and nursing mothers.

Nutritional and health benefits:
Rooibos is becoming more popular in Western countries particularly among health-conscious consumers, due to its high level of antioxidants such as aspalathin   and nothofagin, its lack of caffeine, and its low tannin levels compared to fully oxidized black tea or unoxidized green tea leaves.[citation needed] Rooibos also contains a number of phenolic compounds, including flavanols, flavones, flavanones, and dihydrochalcones.

Rooibos is purported to assist with nervous tension, allergies and digestive problems.

Traditional medicinal uses of rooibos in South Africa include alleviating infantile colic, allergies, asthma and dermatological problems.

Scientific study:
Although human studies of rooibos are scarce in the scientific literature, animal studies suggest it has potent antioxidant, immune-modulating and chemopreventive effects. In addition, rooibos tea has not been found to have any adverse effects.

It is often claimed that “Green” rooibos (see above) has a higher antioxidant capacity than fully oxidized rooibos. However, one study, using two different ways of measuring antioxidant activity, found conflicting data, with green rooibos showing more activity under one measure, and less activity using the other. The study also found conflicting data when comparing both forms of rooibos to black, green, and oolong tea, although it consistently found both forms to have less activity than green tea.

In 2010, eleven poison dart frogs were raised at WWT Slimbridge by amphibian keepers in pint glasses of water, topped up with shop-bought Rooibos tea. Rooibos was used because it contains antioxidants with anti-fungal properties. This successfully protected the frogs against infection by chytridiomycosis.

A recent study performed by Japanese scientists also suggests that Rooibos tea is beneficial in the treatment of acne. This is due to levels of alpha hydroxy acid, zinc and superoxide dismutase present in the herb.

Biology of kombucha
The culture contains a symbiosis of Acetobacter (acetic acid bacteria) and yeast, mostly Brettanomyces bruxellensis, Candida stellata, Schizosaccharomyces pombe, Torulaspora delbrueckii and Zygosaccharomyces bailii. The culture itself looks somewhat like a large pancake, and though often called a mushroom, or by the acronym SCOBY (for “Symbiotic Colony of Bacteria and Yeast“), it is clinically known as a fungus.

The Kombucha Culture, sometimes mistakenly referred to as a mushroom, is a symbiotic, probiotic colony of yeast and bacteria (the friendly type). Kombucha Tea is made by combining the culture, with a mixture of black tea, and sugar. The ingredients are allowed to “ferment“, usually from 7-10 days. The resulting beverage contains dozens of elements, many of which are known to promote healing for a variety of conditions.

History
The recorded history of this drink dates back to the Qin Dynasty in China (around 250 BC). The Chinese called it the “Immortal Health Elixir,” because they believed Kombucha balanced the Middle Qi (Spleen and Stomach) and aided in digestion, allowing the body to focus on healing. Knowledge of kombucha eventually reached Russia and then Eastern Europe around the Early Modern Age, when tea first became affordable by the populace

Traditionally, Kombucha use has spread (for over 2000 years) by the passing of Kombucha Cultures from family to family, and friend to friend.

Russian “tea mushroom”
The process of brewing kombucha was introduced in Russia and Ukraine at the end of the 1800s, and became popular in the early 1900s. The kombucha culture is known locally as chayniy grib, (?????? ???? – ‘tea mushroom’), and the drink itself is referred to as grib (???? – ‘mushroom’), “tea kvass” or simply “kvass”, although it differs from regular “kvass” which is not made from tea and is generally fermented only with yeast and not the other bacteria which ferment tea to form kombucha.

Components:
Kombucha contains many different cultures along with several organic acids, active enzymes, amino acids, and polyphenols.For the home brewer, there is no way to know the amounts of the components unless a sample is sent to a laboratory. The US Food and Drug Administration has no findings on the effects of kombucha. Final kombucha may contain some of the following components depending on the source of the culture: Acetic acid, which provides much anti-microbial activity; butyric acid, gluconic acid, glucuronic acid, lactic acid, malic acid, oxalic acid, usnic acid, as well as some B-vitamins.

Health effects:
A review of the published literature on the safety of kombucha suggests no specific oral toxicity in rats, although other reports suggest that care should be taken when taking medical drugs or hormone replacement therapy while regularly drinking kombucha. It may also cause allergic reactions. It is common for urinary samples to obtain a chemical like scent due to the fermenting process of kombucha which releases into the liver. If this is the case, take another urine sample. If it continues to smell, consult a local physician to be checked for liver complications.

Kombucha is also low in calories, and thus a good alternative to other (fermented and non fermented) beverages such as beer, lemonade, and fruit juice . Because of this, home production of kombucha is increasing in popularity.

Claims:
Advocates believe that kombucha helps by competing with endogenous microbes without toxic constituents, when it is cultivated carefully. Increased glucuronic acid conjugates in the urine after kombucha consumption may support this hypothesis.

Early chemical analysis of kombucha brew suggested that glucuronic acid was a key component of it, perhaps assisting the liver by supplying more of the substance during detoxification. But more recent analysis of kombucha offer a different explanation, as outlined in the book in Analysis of Kombucha Ferments by Michael Roussin. Roussin reports on an extensive chemical analysis of a variety of commercial and homebrew versions of kombucha, and finds no evidence of glucuronic acid at any concentration.

But Roussin suggests that another component may have health benefits:
D – glucaro -1,4 lactone, also known as glucaric acid. It serves as an inhibitor of the beta-glucuronidase enzyme, a bacterial product from the gut microbiota that can cleave the glucuronic acid conjugates and send bodily wastes back into circulation, thus increasing the exposure time before the waste is ultimately excreted. Therefore, the active component of kombucha likely exerts its effect by preventing bacterial disruption of glucuronic acid conjugates and increasing the detoxification efficiency of the liver. Glucaric acid is being explored independently as a cancer preventive agent.

Reports of adverse reactions may be related to unsanitary fermentation conditions, leaching of compounds from the fermentation vessels, or “sickly” kombucha cultures that cannot acidify the brew. Cleanliness is important during preparation, and in most cases, the acidity of the fermented drink prevents growth of unwanted contaminants. If a culture becomes contaminated, it will most likely be seen as common mold, green or brown in color.

Safety and contamination
As with all foods, care must be taken during preparation and storage to prevent contamination. Keeping the kombucha brew safe and contamination-free is a concern to many home brewers. Key components of food safety when brewing kombucha include clean environment, proper temperature, and low pH.

In every step of the preparation process, it is important that hands and utensils (anything that is going to come into contact with the culture) are dish soap clean so as not to contaminate the kombucha. For safety reasons, Kombucha should be brewed in food-grade glass containers only. Kombucha should not be brewed in lead crystal, ceramic, plastic, painted, or metallic containers including stainless steel, as the acidic solution can leach by-products into the finished product.  Keeping cultures covered and in a clean environment also reduces the risk of introducing contaminants and bacteria.

Mold contamination on the culture surface.Maintaining a correct pH is an important factor in a home-brew. Acidic conditions are favorable for the growth of the kombucha culture, and inhibit the growth of molds and bacteria. The pH of the kombucha batch should be between 2.5 and 4.5. A pH of less than 2.5 makes the drink too acidic for human consumption, while a pH greater than 4.5 increases the risk of contamination. Use of fresh “starter tea” and/or vinegar can be used to control pH. Some brewers test the pH at the beginning and the end of the brewing cycle to ensure that the correct pH is achieved.

If mold does grow on the surface of the kombucha pellicle, or “mushroom,” it is best to throw out the batch and start over.

Aside from any possible health benefits, it can be intoxicating. It is generally characterized by mild euphoria, relaxation, and an overall sense of physical and mental well-being. Kombucha contains variable amounts of alcohol and caffeine, though the effects felt in drinking the beverage are disproportionately profound in comparison with the amount ingested, suggesting something more at work. Alcohol amounts vary from 0.5% to 1.5%, depending on anaerobic brewing time and proportions of microbe. Pasteur said that alkaline fermentation increases alcohol content. Commercial preparations are typically 0.5% for distribution and safety reasons.

Another possible cause of these effects is the psychoactive amino acid L-theanine, which is naturally present in tea. Stimulation of the circulatory and immune systems, and associated glandular releases, may also account for some of these effects. Some reports of more intense effects could be explained by toxins resulting from contamination of the culture
