FAMILY CHARACTERISTICS .
The cucurbit family includes species such as the gourd, watermelons, cantaloupes, squash and pumpkins. Cucurbits are known as the vine crops due to their growth, habit, and culture. Most plants in this species have a spreading growth habit with tendrils at the leaf axils. These plants are warm season, tender annuals, that require hot weather to develop fruit.

History
The cucumber has been cultivated for at least 3,000 years in Western Asia, and was probably introduced to other parts of Europe by the Romans. Records of cucumber cultivation appear in France in the 9th Century, England in the 14th Century, and in North America by the mid-16th Century.

The cucumber was mentioned in the Bible, and was being grown in North Africa, Italy, Greece, Asia Minor, and other areas at the beginning of the Christian era. In England the crop was first introduced in the 1300s, but not cultivated until 250 years later. Columbus planted seeds in Haiti, and by 1539 cucumbers were grown in Florida by the natives, reaching Virginia by 1584. Today cucumbers are grown all over the world for pickling (picklers) and fresh markets (slicers). Cucumbers grown in greenhouses have traditionally been grown near cities, mostly in the northeastern U.S. The southwest has become an ideal place for greenhouse cucumber production because of high light intensities there.

Botany
The cucumber is a creeping vine that roots in the ground and grows up trellises or other supporting frames, wrapping around ribbing with thin, spiraling tendrils. The plant has large leaves that form a canopy over the fruit.

The fruit is roughly cylindrical, elongated, with tapered ends, and may be as large as 60 cm long and 10 cm in diameter. Cucumbers grown to be eaten fresh (called slicers) and those intended for pickling (called picklers) are similar.

Varieties
English cucumbers can grow as long as 2 feet. They are nearly seedless and are sometimes marketed as “Burpless,” as the seeds give some people gas.

Japanese cucumbers (kyūri) are mild, slender, deep green, and have a bumpy, ridged skin. They can be used for slicing, salads, pickling, etc., and are available year-round.
Mediterranean cucumbers are small, smooth-skinned and mild. Like the English cucumber, Mediterranean cucumbers are nearly seedless.

Cucumbers are fruit
Having an enclosed seed and developing from a flower, cucumbers are scientifically classified as a fruit. Much like tomatoes and squash, however, their sour-bitter flavor contributes to cucumbers being perceived, prepared and eaten as vegetables, despite the scientific classification.

As a food
The fruit is commonly harvested while still green, though generally after the fruits outgrow their spines. They are eaten as a vegetable, either raw, cooked, or made into pickled cucumbers. Although less nutritious than most fruit, the fresh cucumber is still a source of vitamin C, vitamin K, and potassium, also providing dietary fiber, vitamin A, vitamin B6, thiamin, folate, pantothenic acid, magnesium, phosphorus, copper, and manganese. Cucumbers are used in the decorative food art, garde manger.

Pickling

Some people think cucumbers taste better pickled. Cucumbers can be pickled for flavour and longer shelf life. As compared to eating cucumbers, pickling cucumbers tend to be shorter, thicker, less regularly-shaped, and have bumpy skin with tiny white- or black-dotted spines. They are never waxed. Color can vary from creamy yellow to pale or dark green. Pickling cucumbers are sometimes sold fresh as “Kirby” or “Liberty” cucumbers. The pickling process removes or degrades much of the nutrient content, especially that of vitamin C. Pickled cucumbers are soaked in vinegar or brine or a combination, often along with various spices.

Cucumbers grown for pickling (picklers) and those grown for fresh market (slicers) are the same species. Fruit of fresh market cucumbers are longer, smooth rather than bumpy, have a more uniform green skin color and a tougher, glossier skin than fruit of picklers.

Chemical constituents
The dietary value of Cucumber is negligible, there being upwards of 96 per cent water in its composition. The oil in the cucumber contains 22.3% linoleic acid, 58.5% oleic acid, 6.8% palmitic acid and 3.7% stearic acid.

The fresh cucumber is a very good source of vitamin C, vitamin K, and potassium. It also contains vitamin A, vitamin B6, thiamin, folate, pantothenic acid, magnesium, phosphorus, potassium, copper, and manganese.

Culinary Uses
They are eaten as a vegetable, raw or cooked, or made into pickled cucumbers.
The cucumber is a common ingredient of salads, being valued mainly for its crisp texture and juiciness.
The fruit is said to be indigestible due to the high cellulose content.

Medicinal Uses
The leaf juice is emetic; it is used to treat dyspepsia in children.
The seed is cooling, diuretic, tonic and vermifuge. The emulsion made by bruising Cucumber seeds and rubbing them up with water is much used in catarrhal infections and diseases of the bowels and urinary passages.
The fruit is depurative, diuretic, emollient, purgative and resolvent. The fresh fruit is used internally in the treatment of blemished skin, heat rash etc, and also used externally as a medicine for burns, sores.
A decoction of the root is diuretic.

Other Uses
The cucumber juice is the base of many beauty products.
The peculiarly refreshing odour of Cucumber has found application in perfumery.
Cucumber skins have been shown to repel cockroaches in laboratory experiments.
The fruit is applied to the skin as a cleansing cosmetic to soften and whiten it.

Pomegranate – A Delicious Fruit

Habitat: Pomegranate is native to Western Asia. Now grows widely in Mediterranean countries, China and Japan. Today, it is widely cultivated throughout the Middle East and Caucasus region, north Africa and tropical Africa, the Indian subcontinent, Central Asia, and the drier parts of southeast Asia. It is also cultivated in parts of California and Arizona. In recent years, it has become more common in the commercial markets of Europe and the Western Hemisphere. It grows on the dry limestone soils to 2700 metres in the Himalayas.

ADAPTATION:Pomegranates prefer a semi-arid mild-temperate to subtropical climate and are naturally adapted to regions with cool winters and hot summers. A humid climate adversely affects the formation of fruit. The tree can be severely injured by temperatures below 12° F. In the U. S. pomegranates can be grown outside as far north as southern Utah and Washington, D.C. but seldom set fruit in these areas. The tree adapts well to container culture and will sometimes fruit in a greenhouse.

DESCRIPTION:
The Pomegranate (Punica granatum) is a fruit-bearing deciduous shrub or small tree growing to 5–8 m tall. The pomegranate is native from Iran to the Himalayas in northern India and has been cultivated and naturalized over the whole Mediterranean region including Armenia since ancient times. It is widely cultivated throughout Iran, India and the drier parts of southeast Asia, Malaya, the East Indies and tropical Africa. The tree was introduced into California by Spanish settlers in 1769. In the United States, it is grown for its fruits mainly in the drier parts of California and Arizona.

The leaves are opposite or sub-opposite, glossy, narrow oblong, entire, 3–7 cm long and 2 cm broad. The flowers are bright red, 3 cm in diameter, with five petals (often more on cultivated plants). The fruit is between an orange and a grapefruit in size, 7–12 cm in diameter with a rounded hexagonal shape, and has thick reddish skin and around 600 seeds. The edible parts are the seeds and the red seed pulp surrounding them. There are some cultivars which have been introduced that have a range of pulp colours like purple.

The only other species in the genus Punica, Socotra Pomegranate (Punica protopunica), is endemic to the island of Socotra. It differs in having pink (not red) flowers and smaller, less sweet fruit. Pomegranates are drought tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they are prone to root decay from fungal diseases. They are tolerant of moderate frost, down to about −10°C.

GROWTH HABIT:The pomegranate is a neat, rounded shrub or small tree that can grow to 20 or 30 ft., but more typically to 12 to 16 ft. in height. Dwarf varieties are also known. It is usually deciduous, but in certain areas the leaves will persist on the tree. The trunk is covered by a red-brown bark which later becomes gray. The branches are stiff, angular and often spiny. There is a strong tendency to sucker from the base. Pomegranates are also long-lived. There are specimens in Europe that are known to be over 200 years of age. The vigor of a pomegranate declines after about 15 years, however.
FOILAGE: The pomegranate has glossy, leathery leaves that are narrow and lance-shaped.

FLOWERS:

The attractive scarlet, white or variegated flowers are over an inch across and have 5 to 8 crumpled petals and a red, fleshy, tubular calyx which persists on the fruit. The flowers may be solitary or grouped in twos and threes at the ends of the branches. The pomegranate is self-pollinated as well as cross-pollinated by insects. Cross-pollination increases the fruit set. Wind pollination is insignificant.

FRUITS:
The nearly round, 2-1/2 to 5 in. wide fruit is crowned at the base by the prominent calyx. The tough, leathery skin or rind is typically yellow overlaid with light or deep pink or rich red. The interior is separated by membranous walls and white, spongy, bitter tissue into compartments packed with sacs filled with sweetly acid, juicy, red, pink or whitish pulp or aril. In each sac there is one angular, soft or hard seed. High temperatures are essential during the fruiting period to get the best flavor. The pomegranate may begin to bear in 1 year after planting out, but 2-1/2 to 3 years is more common. Under suitable conditions the fruit should mature some 5 to 7 months after bloom.

Cultivation :
An easily grown plant, it prefers a well-drained fertile soil and succeeds in a hot dry position[166]. Requires a sheltered sunny position. Not very hardy in Britain, the pomegranate tolerates temperatures down to about -11°c, but it is best grown on a south facing wall even in the south of the country because it requires higher summer temperatures than are normally experienced in this country in order to ripen its fruit and its wood. The wood is also liable to be cut back by winter frosts when it is grown away from the protection of a wall[11]. Trees do not grow so well in the damper western part of Britain. Most plants of this species grown in Britain are of the dwarf cultivar ‘Nana’. This is hardier than the type but its fruit is not such good quality. This sub-species fruited on an east-facing wall at Kew in the hot summer of 1989. The pomegranate is often cultivated in warm temperate zones for its edible fruit, there are many named varieties. In Britain fruits are only produced after very hot summers. Plants often sucker freely. Flowers are produced on the tips of the current years growth. Plants in this genus are notably resistant to honey fungus. Special Features:Not North American native, Attractive flowers or blooms.
Propagation :
Seed – sow spring in a greenhouse, preferably at a temperature of 22°c. Prick out the seedlings into individual pots when they are large enough to handle and grow them on in the greenhouse for at least their first 2 growing seasons. Plant out in late spring or early summer. Cuttings of half-ripe wood, 4 – 5cm with a heel, June/July in a frame. Good percentage. Cuttings of mature wood, 20 – 25cm long, November in a warm greenhouse. Layering. Division of suckers in the dormant season. They can be planted out direct into their permanent positions, though we prefer to pot them up first and plant them out when they are growing away well in late spring or early summer

HEALTH BENEFITS AND MEDICAL USES:

One pomegranate delivers 40% of an adult’s daily vitamin C requirement. It is also a rich source of folic acid and of antioxidants. Pomegranates are high in polyphenols. The most abundant polyphenols in pomegranate are hydrolysable tannins, particularly punicalagins, which have been shown in many peer-reviewed research publications to be the antioxidant responsible for the free-radical scavenging ability of pomegranate juice.

Many food and dietary supplement makers have found the advantages of using pomegranate extracts (which have no sugar, calories, or additives), instead of the juice, as healthy ingredients in their products. Many pomegranate extracts are essentially ellagic acid, which is largely a by-product of the juice extraction process. Ellagic acid has only been shown in published studies to absorb into the body when consumed as ellagitannins such as punicalagins.

In several human clinical trials, the juice of the pomegranate has been found effective in reducing several heart risk factors, including LDL oxidation, macrophage oxidative status, and foam cell formation, all of which are steps in atherosclerosis and heart disease. Tannins have been identified as the primary components responsible for the reduction of oxidative states which lead to these risk factors. Pomegranate has been shown to reduce systolic blood pressure by inhibiting serum angiotension converting enzyme (ACE).

Research suggests that pomegranate juice may be effective against prostate cancer and osteoarthritis.

The juice can also be used as an antiseptic when applied to cuts[citation needed].

Researchers at the University of Wisconsin – Madison recently discovered the potential benefits of pomegranate juice in stopping the growth of lung cancer.

The juice of wild pomegranates yields citric acid and sodium citrate for pharmaceutical purposes. Pomegranate juice enters into preparations for treating dyspepsia and is considered beneficial in leprosy.

The bark of the stem and root contains several alkaloids including isopelletierine which is active against tapeworms. Either a decoction of the bark, which is very bitter, or the safer, insoluble Pelletierine Tannate may be employed. Overdoses are emetic and purgative, produce dilation of pupila, dimness of sight, muscular weakness and paralysis.

Because of their tannin content, extracts of the bark, leaves, immature fruit and fruit rind have been given as astringents to halt diarrhea, dysentery and hemorrhages. Dried, pulverized flower buds are employed as a remedy for bronchitis. In Mexico, a decoction of the flowers is gargled to relieve oral and throat inflammation. Leaves, seeds, roots and bark have displayed hypotensive, antispasmodic and anthelmintic activity in bioassay.

Constituents: The chief constituent of the bark (about 22 per cent) is called punicotannic acid. It also contains gallic acid, mannite, and four alkaloids, Pelletierine, Methyl-Pelletierine, Pseudo-Pelletierine, and IsoPelletierine.

The liquid pelletierine boils at 125 degrees C., and is soluble in water, alcohol, ether and chloroform.

The drug probably deteriorates with age.

The rind contains tannic acid, sugar and gum.

Pelletierine Tannate is a mixture of the tannates of the alkaloids obtained from the bark of the root and stem, and represents the taenicidal properties.
Medicinal Uses:
The seeds are demulcent. The fruit is a mild astringent and refrigerant in some fevers, and especially in biliousness, and the bark is used to remove tapeworm.

In India the rind is used in diarrhoea and chronic dysentery, often combined with opium.

It is used as an injection in leucorrhoea, as a gargle in sore throat in its early stages, and in powder for intermittent fevers. The flowers have similar properties.

As a taenicide a decoction of the bark may be made by boiling down to a pint 2 OZ. of bark that has been macerated in spirits of water for twenty-four hours, and given in wineglassful doses. It often causes nausea and vomiting, and possibly purging. It should be preceded by strict dieting and followed by an enema or castor oil if required.It may be necessary to repeat the dose for several days.

A hypodermic injection of the alkaloids may produce vertigo, muscular weakness and sometimes double vision.

The root-bark was recommended as a vermifuge by Celsus, Dioscorides and Pliny. It may be used fresh or dried.

A red dye is obtained from the flowers and also from the rind of unripened fruits. The dye can be red or black and it is also used as an ink. It is coppery-brown in colour . No mordant is required. A fast yellow dye is obtained from the dried rind. The dried peel of the fruit contains about 26% tannin. The bark can also be used as a source of tannin. The root bark contains about 22% tannin, a jet-black ink can be made from it. Plants are grown as hedges in Mediterranean climates. Wood – very hard, compact, close grained, durable, yellow. Used for making agricultural implements. A possible substitute for box, Buxus spp.

Known Hazards: Take recommended doses. Overdose symptoms include: gastric irritation, vomiting, dizziness, chills, vision disorders, collapse and death.

Description:
Asparagus  is a spring vegetable, a flowering perennial plant species in the genus Asparagus. It was once classified in the lily family, like its Allium cousins, onions and garlic, but the Liliaceae have been split and the onion-like plants are now in the family.

It is a herbaceous, perennial plant growing to 100–150 centimetres (39–59 in) tall, with stout stems with much-branched feathery foliage. The “leaves” are in fact needle-like cladodes (modified stems) in the axils of scale leaves; they are 6–32 mm (0.24–1.26 in) long and 1 mm (0.039 in) broad, and clustered 4–15 together. The root system is adventitious and the root type is fasciculated. The flowers are bell-shaped, greenish-white to yellowish, 4.5–6.5 mm (0.18–0.26 in) long, with six tepals partially fused together at the base; they are produced singly or in clusters of two or three in the junctions of the branchlets. It is usually dioecious, with male and female flowers on separate plants, but sometimes hermaphrodite flowers are found. The fruit is a small red berry 6–10 mm diameter, which is poisonous to humans.

This well-known table delicacy may be found wild on the sea-coast in the South-west of England, especially near the Lizard, in the Isle of Anglesea, otherwise it is a rare native. In the southern parts of Russia and Poland the waste steppes are covered with this plant, which is there eaten by horses and cattle as grass. It is also common in Greece, and was formerly much esteemed as a vegetable by the Greeks and Romans. It appears to have been cultivated in the time of Cato the Elder, 200 years B.C., and Pliny mentions a species that grew near Ravenna, of which three heads would weigh a pound.

White asparagus is cultivated by denying the plants light and increasing the amount of ultraviolet light exposed to the plants while they are being grown. Purple asparagus differs from its green and white counterparts, having high sugar and low fibre levels. Purple asparagus was originally developed in Italy and commercialised under the variety name Violetto d’Albenga. Since then, breeding work has continued in countries such as the United States and New Zealand.

Prussian Asparagus, which is brought to some English markets, is not a species of Asparagus at all, but consists of the spikes of Ornithogalum pyrenaicum, which grows abundantly in hedges and pastures

In their simplest form, the shoots are boiled or steamed until tender and served with a light sauce like hollandaise or melted butter or a drizzle of olive oil with a dusting of Parmesan cheese. A refinement is to tie the shoots into sheaves and stand them so that the lower part of the stalks are boiled, while the more tender heads are steamed. Tall cylindrical asparagus cooking pots have liners with handles and perforated bases to make this process foolproof.

Unlike most vegetables, where the smaller and thinner are the more tender, thick asparagus stalks have more tender volume to the proportion of skin. When asparagus have been too long in the market, the cut ends will have dried and gone slightly concave. Meticulous cooks scrape asparagus stalks with a vegetable peeler, stroking away from the head, and refresh them in ice-cold water before steaming them; the peel is often added back to the cooking water and removed only after the asparagus is done, this is supposed to prevent diluting the flavor. Small or full-sized stalks can be made into asparagus soup. Cantonese restaurants in the United States often serve asparagus stir-fried with chicken, shrimp, or beef, also wrapped in bacon. Asparagus may also be quickly grilled over charcoal or hardwood embers, for an infusion of smoke flavor. Asparagus is one of few foods which is considered acceptable to eat with the hands in polite company, although this is more common in Europe.

Chemical Constituents:
Certain compounds in asparagus are metabolized to yield ammonia and various sulfur-containing degradation products, including various thiols and thioesters, which give urine a characteristic smell.

Medicinal Action and Uses:—The virtues of Asparagus are well known as a diuretic and laxative; and for those of sedentary habits who suffer from symptoms of gravel, it has been found very beneficial, as well as in cases of dropsy. The fresh expressed juice is taken medicinally in tablespoonful doses.

Asparagus is one of the more nutritionally valuable vegetables. It is the best vegetable provider of folic acid. Folic acid is necessary for blood cell formation and growth, as well as liver disease prevention. Folic acid is also important for pregnant women as it aids in the prevention of neural tube defects such as spina bifida in the developing fetus. Asparagus is very low in calories, contains no fat or cholesterol, and is very low in sodium. Asparagus is a great source of potassium, fiber, and rutin, a compound that strengthens the walls of capillaries.

Asparagus rhizomes and roots are used ethnomedically to treat urinary tract infections, as well as kidney and bladder stones.

It is called  in Hindi, Boodagumbala in Kannada or Kumbalanga in Malayalam, Upo in Tagalog), also called white gourd or ash gourd or petha, is a vine grown for its very large fruit, eaten as a vegetable. In Bengali “Chal Kumro“The fruit is fuzzy when young, giving rise to the name fuzzy melon . By maturity, the fruit loses its hairs and develops a waxy coating, giving rise to the name wax gourd, and providing a long shelf life. The melon may grow as large as 1-2 metres in length. The word “melon” in the name is somewhat misleading, as the fruit is not sweet.

Habitat : Originally domesticated in Southeast Asia, the winter melon is now widely grown in East Asia and South Asia as well. In North India it is cut into rectangular pieces and boiled in a sugar syrup to create a translucent, almost clear candy or sweet, and is often flavored with rose water. In this form it keeps and cans well allowing it to be sold in canned form around the world. In South India it is used to make curries.

The winter melon requires very warm weather to grow but can be kept through the winter much like winter squash. The winter melon can typically be stored for 12 months. The melons are used in stir fry or to make winter melon soup, which is often served in the scooped out melon, which has been intricately decorated by scraping off the waxy coating.

Occasionally, it’s used to produce a fruit drink which has a very distinctive taste. It is usually sweetened with caramelised sugar, which enhances the taste.

The shoots, tendrils, and leaves of the plant may also be eaten as greens.

Winter melon is a common name for the inodorus cultivar group of the muskmelon (Cucumis melo L), or one of its members alternatively known as casaba, honeydew, or Persian.

Description:
Benincasa hispida is an annual plant growing to 6 m (19ft 8in).
It is hardy to zone 10 and is frost tender. It is in leaf 10-Jun It is in flower from Jul to September, and the seeds ripen from Aug to November. The flowers are monoecious (individual flowers are either male or female, but both sexes can be found on the same plant) and are pollinated by Bees.The plant is self-fertile.

Cultivation:   
Requires a warm sunny position in a rich well-drained soil and plenty of moisture in the growing season[1, 200, 238]. Established plants are reasonably drought tolerant[206]. Tolerates a pH in the range 5.8 to 6.8. This species is not very frost hardy, it is best grown in a greenhouse in Britain[86] but can succeed outdoors in good summers if started off in a greenhouse and planted out after the last expected frosts. Plants require stable temperatures in excess of 25°c if they are to do well. Short daylengths and lower temperatures stimulate female flower development, higher temperatures stimulate male flower production. Plants take 5 months from seed to produce a mature crop, though the fruits can be eaten when immature. The wax gourd is frequently cultivated for its edible fruit in the tropics, there are many named varieties. One group, sometimes classified as B. hispids chieh-gua, is known as the hairy melon or jointed gourd. This form is grown for its immature fruit in much the same way as courgettes are used. Mature fruits of this form do not develop a waxy coating. The fruit can be harvested about 3 months after sowing.

Propagation:  
Seed – sow March/April in a greenhouse. Germination should take place within 3 weeks. When they are large enough to handle, prick the seedlings out into individual pots and grow them on fast in a rich compost in the greenhouse. Try to maintain a minimum night temperature of at least 10°c for the seedlings first few weeks. Plant out in May/June after the last expected frosts

A juicy texture with a mild flavour, the flavour is somewhat stronger in younger fruits. Because of its waxy coating, it will store for several months, sometimes as long as a year. The wax gourd has been used as a food and medicine for thousands of years in the Orient. All parts of the fruit are used medicinally. The rind of the fruit is diuretic. It is taken internally in the treatment of urinary dysfunction, summer fevers etc. The ashes of the rind are applied to painful wounds. The seed is anthelmintic, anti-inflammatory, demulcent, diuretic, expectorant, febrifuge, laxative and tonic. A decoction is used internally in the treatment of vaginal discharges and coughs. In combination with Rheum palmatum it is used to treat intestinal abscesses. In Ayurvedic medicine the seed is used in the treatment of coughs, fevers, excessive thirst and to expel tapeworms. The oil from the seed is also used as an anthelmintic. The fruit is antiperiodic, aphrodisiac, diuretic, laxative and tonic. It is used in Ayurvedic medicine in the treatment of epilepsy, lung diseases, asthma, coughs etc. The fruit juice is used in the treatment of insanity, epilepsy and other nervous diseases. Recent research has shown that the fruits contain anti-cancer terpenes. An infusion of the root is used in the treatment of gonorrhoea. Demulcent, salve. Facilitates pus drainage.

Asafoetida is extensively used in the treatment of nervous disorders of children.It is useful for alivating toothache.

It is useful for treating Respiratory disorders, Impotency,Hysteria,Spermatorrhoea and Stomac Disorders.

It is considered to be very useful in the treatment of several problems concerning premature labour, unusual pain,leucorrhoea,sterility,unwanted abortion and excessive manstruation. It excites the secretion of progesterone hormone.The herb is very useful for women after child birth.It can be taken with beneficial results during the post delivery period. It is also used as an antidote of opium.It counteracts the effect of the drug.

A wax that coats the fruit is used to make candles. The roots have considerable resistance to soil-borne diseases and they are sometimes used as a rootstock for melons and other cucurbits

Habitat :  Momordica charantia is a tropical and subtropical vine of the family Cucurbitaceae, widely grown for edible fruit, which is among the most bitter of all vegetables. English names for the plant and its fruit include bitter melon or bitter gourd (translated from Chinese: ??; pinyin: kugua). The original home of the species is not known, other than that it is a native of the tropics. Bitter melon is commonly used as a vegetable in tropical areas such as East Africa, Asia, the Caribbean, and South America. The plant gets its name from the bitter taste of its fruit and juice; however, cooking it with the appropriate spices can reduce the bitterness. In addition to being a food source, bitter melon is employed as an herbal remedy in many parts of the world. While the seeds, leaves and vines of bitter melon may all be used, the fruit is used most often for medicinal purposes.

At lease three types of compounds in bitter melon are believed to lower blood sugar, which can benefit people with diabetes mellitus. It is still unclear whether these compounds work together or individually, but several controlled clinical studies have confirmed that bitter melon is beneficial in controlling the symptoms of diabetes.

Test-tube studies have also shown that two proteins found in bitter melon — alpha-momorcharin and beta-momorcharin — inhibit the AIDS virus. However, these studies have not been conducted in humans.

Culinary uses:
Bitter melons are seldom mixed with other vegetables due to the strong bitter taste, although this can be moderated to some extent by salting and then washing the cut melon before use.

Bitter melon is often used in Chinese cooking for its bitter flavor, typically in stir-fries (often with pork and douchi), soups, and also as tea.

It is also a popular vegetable in Indian and Pakistani cooking, where it is often prepared with potatoes and served with yogurt on the side to offset the bitterness. Bitter melon fried in oil and then stuffed with other spicy ingredients is very popular in Andhra Pradesh, a south Indian state.

Bitter melon is rarely used in mainland Japan, but is a significant component of Okinawan cuisine.

In Vietnam, raw bitter melon slices consumed with dried meat floss and bitter melon soup with shrimp are popular dishes.

It is prepared into various dishes in the Philippines, where it is known as ampalaya. Ampalaya may also be stir-fried with ground beef and oyster sauce, or with eggs and diced tomato. A very popular dish from the Ilocos region of the Philippines, pinakbet, consists mainly of bitter melons, eggplant, okra, string beans, tomatoes, lima beans, and other various regional vegetables stewed with a little bagoong-based stock.

The young shoots and leaves may also be eaten as greens; in the Philippines, where bitter melon leaves are most commonly consumed, they are called dahon (leaves) ng ampalaya. The seeds can also be eaten, and give off a sweet taste, but have been known to cause vomiting and stomach upset.

Medicinal uses:
Bitter melons have been used in various Asian traditional medicine systems for a long time . Like most bitter-tasting foods, bitter melon stimulates digestion. While this can be helpful in people with sluggish digestion, dyspepsia, and constipation, it can sometimes make heartburn and ulcers worse. The fact that bitter melon is also a demulcent and at least mild inflammation modulator, however, means that it rarely does have these negative effects, based on clinical experience and traditional reports.

Perhaps the best substantiated use to date is that of bitter melon for people with diabetes mellitus. Several preliminary (non-randomized, non-blinded) clinical trials suggest this benefit, though controlled trials are necessary for confirmation . In the Philippines, bitter melon tea is used in blood sugar control for poor people as exemplified in the very successful Operation Diabetes . In ayurvedic medicine, bitter melon is popularly seen as a “plant-insulin.” It has been demonstrated that bitter melon contains a protein similar to bovine insulin, sometimes referred to as p-insulin or polypeptide-p (Baldwa, et al. 1977). When purified and injected subcutaneously into patients with insulin-dependent diabetes mellitus (IDDM), it acted very similar to slow-acting animal insulins and was able to sustain patients . One child in this small study who previously had many side effects from bovine insulin was able to use p-insulin exclusively for 5 months with no sign of problems. This represents the potential for a vegetarian alternative to animal insulin for patients with IDDM, as well as a potentially more sustainable source of insulin, and should be further developed. It is not possible to substitute eating bitter melon for taking insulin.

Though it has been claimed that bitter melon’s bitterness comes from quinine, no evidence could be located supporting this claim. Bitter melon is traditionally regarded by Asians, as well as Panamanians and Colombians, as useful for preventing and treating malaria. Laboratory studies have confirmed that various species of bitter melon have anti-malarial activity, though human studies have not yet been published .

Laboratory tests suggest that compounds in bitter melon might be effective for treating HIV infection . As most compounds isolated from bitter melon that impact HIV have either been proteins or glycosproteins (lectins), neither of which are well-absorbed, it is unlikely that oral intake of bitter melon will slow HIV in infected people. It is possible oral ingestion of bitter melon could offest negative effects of anti-HIV drugs, if a test tube study can be shown to be true in people . In one preliminary clinical trial, an enema form of a bitter melon extract showed some benefits in people infected with HIV (Zhang 1992). Clearly more research is necessary before this could be recommended.

The other realm showing the most promise related to bitter melon is as an immunomodulator. One clinical trial found very limited evidence that bitter melon might improve immune cell function in people with cancer, but this needs to be verified and amplified in other research . If proven correct this is another way bitter melon could help people infected with HIV


How much bitter melon should I take?

For those who can withstand the bitter taste, many herbalists recommend eating one small melon; 100 millileters of a bitter melon decoction; or two ounces of fresh bitter melon juice per day. For people who cannot stand the taste, some practitioners recommend bitter melon tinctures (five millileters, two or three times per day).

What forms of bitter melon are available?

Fresh bitter melon and bitter melon juice can be found at many specialty stores and Asian markets. Bitter melon extracts and tinctures can be found at some health food stores.

What can happen if I take too much bitter melon? Are there any interactions I should be aware of? What precautions should I take?

Excessive amounts of bitter melon juice may cause abdominal pain and diarrhea. In addition, patients with hypoglycemia should avoid bitter melon, because it could theoretically worsen their condition.

At present, there are no well-known drug interactions with better melon. However, make sure to consult with a health care provider before taking bitter melon (or any other dietary supplement).
