Dates are an important traditional crop in Turkey, Iraq, Arabia, and north Africa west to Morocco and are mentioned more than 50 times in the Bible. Dates (especially Medjool and Deglet Noor) are also cultivated in southern California, Arizona and southern Florida in the United States.

Description:
The date palm is dioecious, having separate male and female plants.It is a medium-sized plant, 15–25 m tall, growing singly or forming a clump with several stems from a single root system. The leaves are 3–5 m long, with spines on the petiole, and pinnate, with about 150 leaflets; the leaflets are 30 cm long and 2 cm wide. The full span of the crown ranges from 6 to 10 m.

The fruit is known as a date. The fruit’s English name (through Old French), as well as the Latin species name dactylifera, both come from the Greek word for “finger,” dáktulos, because of the fruit’s elongated shape. Dates are oval-cylindrical, 3–7 cm long, and 2–3 cm diameter, and when unripe, range from bright red to bright yellow in colour, depending on variety. Dates contain a single seed about 2–2.5 cm long and 6–8 mm thick. Three main cultivar groups of date exist: soft (e.g. ‘Barhee’, ‘Halawy‘, ‘Khadrawy’, ‘Medjool’), semi-dry (e.g. ‘Dayri’, ‘Deglet Noor’, ‘Zahdi’), and dry (e.g. ‘Thoory’). The type of fruit depends on the glucose, fructose and sucrose content.

Cultivation & Propagation:
Dates are naturally wind pollinated but in both traditional oasis horticulture and in the modern commercial orchards they are entirely pollinated manually. Natural pollination occurs with about an equal number of male and female plants. However, with assistance, one male can pollinate up to 100 females. Since the males are of value only as pollinators, this allows the growers to use their resources for many more fruit producing female plants. Some growers do not even maintain any male plants as male flowers become available at local markets at pollination time. Manual pollination is done by skilled labourers on ladders. In some areas such as Iraq the pollinator climbs the tree using a special climbing tool that wraps around the tree trunk and the climber’s back to keep him attached to the trunk while climbing. Less often the pollen may be blown onto the female flowers by a wind machine.

They can be easily grown from seed, but only 50% of seedlings will be female and hence fruit bearing, and dates from seedling plants are often smaller and of poorer quality. Most commercial plantations thus use cuttings of heavily cropping cultivars. Plants grown from cuttings will fruit 2–3 years earlier than seedling plants.

A date palm cultivar, known as Judean date palm is renowned for its long-lived orthodox seed, which successfully sprouted after accidental storage for 2000 years. This particular seed was presently reputed to be the oldest viable seed until the sprouting of over 30,000 year old silene stenophylla seeds, but the upper survival time limit of properly stored seeds remains unknown.

Date palms can take 4 to 8 years after planting before they will bear fruit, and produce viable yields for commercial harvest between 7 to 10 years. Mature date palms can produce 80–120 kilograms (176–264 lb) of dates per harvest season, although they do not all ripen at the same time so several harvests are required. In order to get fruit of marketable quality, the bunches of dates must be thinned and bagged or covered before ripening so that the remaining fruits grow larger and are protected from weather and pests such as birds.

Edible Uses:
Dates fruit  have been a staple food of the Middle East for thousands of years. They are believed to have originated around the Persian Gulf, and have been cultivated since ancient times from Mesopotamia to prehistoric Egypt, possibly as early as 4000 BCE. The Ancient Egyptians used the fruits to be made into date wine, and ate them at harvest. There is archaeological evidence of date cultivation in eastern Arabia in 6000 BCE. (Alvarez-Mon 2006).

In later times, traders spread dates around South and South West Asia, northern Africa, and Spain and Italy. Dates were introduced into Mexico and California by the Spaniards by 1765, around Mission San Ignacio.

Dates ripen in four stages, which are known throughout the world by their Arabic names kimri (unripe), khlal (full-size, crunchy), rutab (ripe, soft), tamr (ripe, sun-dried). A 100 gram portion of fresh dates is a source of vitamin C and supplies 230 kcal (960 kJ) of energy. Since dates contain relatively little water, they do not become much more concentrated upon drying, although the vitamin C is lost in the process.

In Islamic countries, dates and yogurt or milk are a traditional first meal when the sun sets during Ramadan.

Dry or soft dates are eaten out-of-hand, or may be pitted and stuffed with fillings such as almonds, walnuts, candied orange and lemon peel, tahini, marzipan or cream cheese. Pitted dates are also referred to as stoned dates. Partially dried pitted dates may be glazed with glucose syrup for use as a snack food. Dates can also be chopped and used in a range of sweet and savory dishes, from tajines (tagines) in Morocco to puddings, ka’ak (types of Arab cookies) and other dessert items. Date nut bread, a type of cake, is very popular in the United States, especially around holidays. Dates are also processed into cubes, paste called “‘ajwa”, spread, date syrup or “honey” called “dibs” or “rub” in Libya, powder (date sugar), vinegar or alcohol. Recent innovations include chocolate-covered dates and products such as sparkling date juice, used in some Islamic countries as a non-alcoholic version of champagne, for special occasions and religious times such as Ramadan.

Dates can also be dehydrated, ground and mixed with grain to form a nutritious stockfeed. Dried dates are fed to camels, horses and dogs in the Sahara. In northern Nigeria, dates and peppers added to the native beer are believed to make it less intoxicating.

The finely ground seeds are mixed with flour to make bread in times of scarcity. The flowers of the date palm are also edible. Traditionally the female flowers are the most available for sale and weigh 300–400 grams. The flower buds are used in salad or ground with dried fish to make a condiment for bread.

Dates provide a wide range of essential nutrients, and are a very good source of dietary potassium. The sugar content of ripe dates is about 80%; the remainder consists of protein, fiber, and trace elements including boron, cobalt, copper, fluorine, magnesium, manganese, selenium, and zinc. The glycemic index for three different varieties of dates are 35.5 (khalas), 49.7 (barhi) and 30.5 (bo ma’an).

In India and Pakistan, North Africa, Ghana, and Côte d’Ivoire, date palms are tapped for the sweet sap, which is converted into palm sugar (known as jaggery or gur), molasses or alcoholic beverages. In North Africa the sap obtained from tapping palm trees is known as l?gb?. If left for a sufficient period of time (typically hours, depending on the temperature) l?gb? easily becomes an alcoholic drink. Special skill is required when tapping the palm tree so that it does not die.

In Southeast Spain (where a large date plantation exists including UNESCO protected Palmeral of Elche) dates (usually pitted with fried almond) are served wrapped in bacon and shallow fried.  It is also used to make Jallab.
Medicinal Uses:
The fruit, because of its tannin content, is used medicinally as a detersive and astringent in intestinal troubles. In the form of an infusion, decoction, syrup or paste, is administered as a treatment for sore throat, colds, bronchial catarrh. It is taken to relieve fever, cystitis, gonorrhea, edema, liver and abdominal troubles. And it is said to counteract alcohol intoxication.  The seed powder is an ingredient in a paste given to relieve ague. A gum that exudes from the wounded trunk is employed in India for treating diarrhea and genito-urinary ailments. It is diuretic and demulcent. The roots are used against toothache. The pollen yields an estrogenic principle, estrone, and has a gonadotropic effect on young rats.  One traditional belief is that it can counteract alcohol intoxication. The seed powder is also used in some traditional medicines. Because of their laxative quality, dates are considered to be good at preventing constipation..

Other Uses Of the Plant :
Date seeds are soaked and ground up for animal feed. Their oil is suitable for use in soap and cosmetics. They can also be processed chemically as a source of oxalic acid. The seeds are also burned to make charcoal for silversmiths, and can be strung in necklaces. Date seeds are also ground and used in the manner of coffee beans, or as an additive to coffee.

Stripped fruit clusters are used as brooms. In Pakistan, a viscous, thick syrup made from the ripe fruits is used as a coating for leather bags and pipes to prevent leaking.

Date palm sap is used to make palm syrup and numerous edible products derived from the syrup.

Date palm leaves are used for Palm Sunday in the Christian religion. In North Africa, they are commonly used for making huts. Mature leaves are also made into mats, screens, baskets and fans. Processed leaves can be used for insulating board. Dried leaf petioles are a source of cellulose pulp, used for walking sticks, brooms, fishing floats and fuel. Leaf sheaths are prized for their scent, and fibre from them is also used for rope, coarse cloth, and large hats. The leaves are also used as a lulav in the Jewish holiday of Sukkot.

Date palm wood is used for posts and rafters for huts; it is lighter than coconut and not very durable. It is also used for construction such as bridges and aqueducts, and parts of dhows. Leftover wood is burnt for fuel.

Where craft traditions still thrive, such as in Oman, the palm tree is the most versatile of all indigenous plants, and virtually every part of the tree is utilized to make functional items ranging from rope and baskets to beehives, fishing boats, and traditional dwellings.

When Muslims break fast in the evening meal of Ramadan, it is traditional to eat a date first.

Habitat : Acacia tortilis is native primarily to the savanna and Sahel of Africa (especially Sudan), but also occurring in the Middle East.

Description:
Acacia tortilis is a medium to large canopied tree.In extremely arid conditions, it may occur as a small, wiry bush. It grows up to 21 m (69 ft) in height. The tree carries leaves that grow to approx. 2.5 cm (1 in) in length with between 4 and 10 pair of pinnae each with up to 15 pairs of leaflets. Flowers are small and white,ball shaped , highly aromatic, and occur in tight clusters. Seeds are produced in pods which are flat and coiled into a springlike structure.

The plant is known to tolerate high alkalinity, drought, high temperatures, sandy & stony soils, strongly sloped rooting surfaces, and sand blasting. Also, plants older than 2 years have been observed to be somewhat frost resistant.

Propagation:
A. tortilis is a pioneer species easily regenerated from seed. Pods are best collected by shaking them from the canopy. In East Africa, a mature tree can produce over 6000 pods in a good year, each with 8-16 seeds (10,000 – 50,000/kg depending on the subspecies).

Seeds are often extracted by pounding pods in a mortar followed by winnowing and cleaning. The hard-coated seeds remain viable for several years under cool, dry conditions. They require pretreatment for good germination.    Mechanical scarification works best for small seed lots. Soaking seeds either in sulfuric acid for 20-30 minutes, or in poured, boiled water allowed to cool, are both effective treatments (Fagg and Greaves 1990).

Seed are planted in the ground in 1 cm deep holes or in the nursery in 30 cm long tubes. Rapid tap root growth requires frequent root pruning. Seedlings are ready to be planted out after 3-8 months. On marginal sites, initial seedling growth is often slow but quickens once roots have reached a water source. For best growth, plants should be weeded and protected from browsing animals for the first three years. At Jodhpur, India (320 mm annual rainfall) average height of 20 selected 2.5-yr-old plants was 3.8 m.

Limited seed supplies are available from natural populations in a number of countries, primarily in Sahelian Africa, and from landraces in India. A broader range of germplasm is available From the Oxford Forestry Institute (South Parks Road, Oxford OXI 3RB, LTK) for establishment of field trials. Small quantities of seed from Kenyan provenances are also available from NFTA

Medicinal Uses:
Leaves, bark, seeds, and a red gum are used in many local medicines. Two pharmacologically active compounds for treating asthma have been isolated from the bark. The stem of the tree is also used to treat diarrhea.  The gum is used like that of gum arabics in folk remedies. The dried, powdered bark is used as a disinfectant in healing wounds; in Senegal it serves as an anthelmintic. In Somalia the stem is used to treat asthma. Seeds are taken to treat diarrhea. In French Guinea, the bark is used as a vermifuge and dusted onto skin ailments.

Other Uses: In semi-arid areas, Acacia tortilis provides a staple browse especially for camels and goats.This tree provides shade for animals. Some of the most palatable grass species grow beneath its canopy (Walker 1979). In Turkana, Kenya, soil nutrients and herbaceous plant productivity and diversity were significantly greater under than away from the tree canopy (Weltzin and Coughenour 1990).

Wood use :The dense, red wood of A. tortilis makes very good charcoal and fuelwood (4360 Cal/kg) (BOSTID). It burns slowly and produces little smoke when dry. Poles are commonly used in hut construction and for tools. The wood of
ssp. heteracantha is durable if water-seasoned. The tree resprouts vigorously when coppiced and is managed for fuelwood in natural woodlands in Sudan. In plantations in India, trees are planted at 3 x 3 m spacing and coppiced for fuelwood. After 10-12 years over 50 tons/ha wood can be harvested. In other areas the trees are not cut, to avoid reducing pod yields.

In traditional pastoral societies every part of Acacia tortilis is used. The high value held by local people for the tree is reflected in the detailed nomenclature given to its cycles of development. In Oman, for example, local people call A. tortilis by more than a dozen different names in Dhofari arabic.

Flowers provide a major source of good quality honey in some regions. Fruits are eaten in Kenya, the Turkana make porridge from pods after extracting the seed, and the Masai eat the immature seeds. The bark yields tannin and the inner bark cordage. Thorny branches are used for enclosures and livestock pens; roots are used for construction of nomad huts (Somali and Fulani). Leaves, bark, seeds, and a red gum are used in many local medicines. Two pharmacologically active compounds for treating asthma have been isolated from the bark (Hagos et al. 1987).

Due to ongoing ethnic and religious conflicts in the Middle East, the Israeli side of Mount Haramoun is not a safe or secure source of zallouh. On the Lebanese side, indiscriminate harvesting of the wild plant has reduced its occurence. As a result, the Lebanese government has made efforts to limit zallouh harvesting. In Syria, a nation under military rule, zallouh trade is overseen by the Syrian Army, and the harvesting of zallouh is conducted in a controlled, sustainable fashion. The root is typically harvested from August to October.

Medicinal Uses:
Zallouh(Ferulis harmonis) has a long tradition of use by men with erectile problems and for men and women with low libido.  But the root has also enjoyed even broader use for sexual enhancement among health men and women, to increase sexual frequency and to increase pleasure.  It is rich in antioxidants and it helps to retard the aging process.    The plant has also undergone scientific clinical study.  An extract of the root is made in a combination of alcohol and water.  The taste is quite bitter and it’s best to put it in milk or fruit juice.

Habitat : Pistacia terebinthus is native to the Canary Islands, and the Mediterranean region from the western regions of Morocco, and Portugal to Greece and western Turkey. In the eastern shores of the Mediterranean sea – Syria, Lebanon, Kurdistan and Israel – a similar species, Pistacia palaestina, fills the same ecological niche as this species and is also known as terebinth.

Description:
It is a species of flowering plant belonging to the family Anacardiaceae. It is a small deciduous tree or large shrub growing to 10 m tall. The leaves are compound, 10-20 cm long, odd pinnate with five to eleven opposite glossy oval leaflets, the leaflets 2-6 cm long and 1-3 cm broad. The flowers are reddish-purple, appearing with the new leaves in early spring. The fruit consists of small, globular drupes 5-7 mm long, red to black when ripe. All parts of the plant have a strong resinous smell.

It is a dioecious tree, ie exist as male and female specimens. For a viable population should have copies of both genders. His oblong leafs are bright green, leathery, with 10 cm long or more with 3-9 leaflets. Leafs alternate, leathery and compound paripinnate (no terminal leaflet) with 3 or 6 deep green leaflets. They are generally larger and rounder than the leaves of the mastic, reminding the leaves of carob tree. The flowers range from purple to green, the fruit is having the size of a pea and turns from red to brown, depending on the degree of maturation. The whole plant emits a strong smell of bitter, resinous or medication. In the vegetative period they develop “galls” in a goat’s horn shaped (of what the plant gets its common name cornicabra, the common spanish name), that occur in the leaves and leaflets after the bite of insects. The species is multiplied by seeds and shoots. Although marred by the presence of galls, is a very strong and resistant tree which survives in degraded areas where other species have been eliminated. Pistacia terebinthus is a plant related to Pistacia lentiscus, with which hybridizes frequently in contact zones. The cornicabra is more abundant in the mountains and inland and the mastic is usually found more frequently in areas where the Mediterranean influence of the sea moderates the clima. Mastic tree does not reach the size of the Pistacia terebinthus, but the hybrids are very difficult to distinguish. The mastic presented winged stalks of the leaflets, ie, they are flattened and side fins. These stems in Cornicabra are simple. In the Eastern Mediterranean Coast, Syria, Lebanon and Israel, a similar species,pistacia Palaestina , fills the same ecological niche of this species and is also known as turpentine. On the west coast of the Mediterranean, Canary Islands and Middle East, Pistacia terebinthus can be confused with Pistacia atlantica .

Medicinal Uses:
The resin is taken internally in the treatment of chronic bronchial infections, streptococcal, urinary and renal infections, hemorrhage, gallstones, tapeworm and rheumatism. Externally, it is used to treat arthritis, gout, sciatica, scabies and lice. It has also been used in the treatment of cancer. It is a stimulant to kidney function and was sometimes used in mild doses as a diuretic; in larger doses, it is dangerous to the kidneys.  It was also used as a carminative, and was considered one of the most valuable remedies in cases of flatulent colic.  Terebinth was also used to treat chronic diarrhea and dysentery, typhoid fever, purpureal fever and bleeding, helminthiasis, leucorrhea, and amenorrhea.Turpentine baths, arranged in such a way that the vapors were not inhaled by the patient, were given in cases of chronic rheumatism.  It was also administered in enema form to treat intractable constipation.  Applied externally as a liniment or ointment, it has been used in rheumatic ailments such as lumbago, arthritis, and neuralgias.  It was also used as a local application to treat and promote the healing of burns and to heal parasitic skin diseases. The gall-like bodies found on the Turpentine Tree are the result of the stings of a hemipterous insect. They have been used for treatment of asthma attacks. For this purpose they are coarsely pulverized and burned in the bowl of a pipe, or in a dish, using a small funnel attached to a rubber tube for inhaling the fumes. Preparations should be made beforehand, so that the smoke may be inhaled at the commencement of the attack. They appear to act by exciting free secretion, probably through the turpentine with which they are saturated. They are said to be useful in chronic bronchitis. The use of Chian turpentine by Paracelsus as a cancer remedy was revived in 1880 by Mr. Clay, of England, who strongly recommended it for uterine cancer, others, however, declared it wholly inefficient. It is yellowish, greenish, or bluish-green, translucent, viscid, and thick like molasses. Its odor is rather pleasant and suggestive of fennel, and its taste less acrid than most of the turpentines. It gradually hardens by age, and is often adulterated with the cheaper turpentines.

Other Uses:
It is used as a source for turpentine, possibly the earliest known source. The turpentine of the terebinth is now called Chian, Scio, or Cyprian turpentine.
The fruits are used in Cyprus for baking of a specialty village bread. In Crete, where the plant is called tsikoudia, it is used to flavor the local variety of pomace brandy, also called tsikoudia. In the Northern Sporades the shoots are used as a vegetable (called tsitsírava).The plant is rich in tannin and resinous substances and was used for its aromatic and medicinal properties in classical Greece. A mild sweet scented gum can be produced from the bark, and galls often found on the plant are used for tanning leather. Recently an anti-inflammatory triterpene has been extracted from these galls. In Turkey, where it is known as menengiç or b?tt?m, a coffee-like beverage known as menengiç kahvesi is made from the roasted fruit and a soap is made from the oil. Terebinth resin was used as a wine presevative in the acient Near East.

Habitat ;Celtis australis is native to Southern Europe.This tree is also widely found in the Middle-East. It grows in the hedges, banks and sandy places.

Description:
Celtis australis is a deciduous tree that can grow 20 or 25 meters in height.Leaves are Simple, alternate, and sharp-toothed are rough on top, and furry underneath, 5 to 15 cm long and dark grey/green throughout the year fading to a pale yellow before falling in autumn.

Fruit is Small, dark-purple berry-like drupes, 1 cm wide hang in short clusters and are extremely popular with birds and other wildlife.

Bark is Smooth, gray bark develops picturesque corky warts and ridges as it matures.

Cultivation:
Succeeds in any reasonably good soil, preferring a good fertile well-drained loamy soil. Succeeds on dry gravels and on sandy soils[200]. The trees have deep spreading roots and are very drought resistant once established. This species requires mild winters if it is to succeed[3]. Trees prefer hotter summers and more sunlight than are normally experienced in Britain, they often do not fully ripen their wood when growing in this country and they are then very subject to die-back in winter. A hardier form, from seed collected in the Caucasus, is in cultivation in Britain. The fruit and the seed are sometimes sold in local markets in the Balkans. This plant is said to be the lotus fruit of the ancients. It is mentioned in the story of Odysseus returning from Troy and the story relates that if a person should eat the fruit they will never leave that area. Coppices well. A good shade tree. Propagation:
Seed – best sown as soon as it is ripe in a cold frame. Stored seed is best given 2 – 3 months cold stratification and then sown February/March in a greenhouse. Germination rates are usually good, though the stored seed might take 12 months or more to germinate. The seed can be stored for up to 5 years. As soon as they are large enough to handle, prick the seedlings out into individual pots. The leaves of seedlings often have a lot of white patches without chlorophyll, this is normal and older plants produce normal green leaves. Grow the seedlings on in a cold frame for their first winter, and plant them out in the following late spring or early summer. Give them some protection from the cold for their first winter outdoors. Edible Uses: The fruit of this tree is sweet and edible, and can be eaten raw or cooked.
A mealy pleasant taste. Small and insipidly sweet. Of little value. The fruit is about 10mm in diameter  with a single large seed. Seed – raw or cooked. An oil is obtained from the seed.

Medicinal Uses:
The leaves and fruit are astringent, lenitive and stomachic.Due to their astringent properties, both the leaves and fruit may be used as a remedy. Decoction of both leaves and fruit is used in the treatment of amenorrhoea, heavy menstrual and intermenstrual bleeding and colic. The decoction can also be used to astringe the mucous membranes in the treatment of diarrhoea, dysentery and peptic ulcers.

Other Uses:
It is often planted as an ornamental as it is resistant to air pollution and long-living. A yellow dye is obtained from the bark. Wood – very tough, pliable, durable. Widely used by turners. The flexible thin shoots are used as walking sticks.
A fatty oil is obtained from the seed. No more information is given. Wood – very tough, pliable, durable.  Used for the handles of agricultural implements.  An excellent fuel.

In the north of Iran this tree has a sacred aspect.
