Habitat: Kalmegh or Andrographis paniculata is a herbaceous plant in the family Acanthaceae,  native to India, China, and Southeast Asia.

It is widely cultivated in southern Asia, where it is used to treat infections and some diseases, often being used before antibiotics were created. Mostly the leaves and roots were used for medicinal purposes .

Description of the plant:

A. paniculata is an erect annual herb. The square stem has wings on the angles of new growth and is enlarged at the nodes, while the small flowers are borne on a spreading panicle. It is widely cultivated in Asia. The above-ground parts are collected in the fall. The genetic variability of the species has been examined.
It grows erect to a height of 30-110 cm in moist shady places with glabrous leaves and white flowers with rose-purple spots on the petals. Stem dark green, 0.3 – 1.0 m in height, 2 – 6 mm in diameter, quadrangular with longitudinal furrows and wings on the angles of the younger parts, slightly enlarged at the nodes; leaves glabrous, up to 8.0 cm long and 2.5 cm broad, lanceolate, pinnate; flowers small, in lax spreading axillary and terminal racemes or panicles; capsules linear-oblong, acute at both ends, 1.9 cm x 0.3 cm; seeds numerous, sub quadrate, yellowish brown.

Cultivation
It prefers a sunny situation. The seeds are sown during May-June. The seedlings are transplanted at a distance of 60 cm x 30 cm.

Pharmacology
Andrographis paniculata plant extract is known to possess a variety of pharmacological activities. Andrographolide, the major constituent of the extract is implicated towards its pharmacological activity. A study has been conducted on the cellular processes and targets modulated by andrographolide treatment in human cancer and immune cells. Andrographolide treatment inhibited the in vitro proliferation of different tumor cell lines, representing various types of cancers. The compound exerts direct anticancer activity on cancer cells by cell cycle arrest at G0/G1 phase through induction of cell cycle inhibitory protein and decreased expression of cyclin dependent kinase 4 (CDK4). Immunostimulatory activity of andrographolide is evidenced by increased proliferation of lymphocytes and production of interleukin 2. Andrographolide also enhanced the tumor necrosis factor α production and CD marker expression, resulting in increased cytotoxic activity of lymphocytes against cancer cells, which may contribute for its indirect anticancer activity. The in vivo anticancer activity of the compound is further substantiated against B16F0 melanoma syngenic and HT 29 xenograft models. These results suggest that andrographolide is an interesting pharmacophore with anticancer and immunomodulatory activities and hence has the potential for being developed as a cancer therapeutic agent.

The herb is the well-known drug Kalmegh ‘green chiretta’, and forms the principal ingredient of a reputed household medicine (‘alui’), used as a bitter tonic and febrifuge.
Clinical Overview

Andrographis paniculata Nees (Acanthaceae), the Kalmegh of Ayurveda is an erect annual herb extremely bitter in taste in each and every part of the plant body. The plant is known in north-eastern India as  Maha-tita, literally  king of bitters  and known by various vernacular names (Table below). It is also known as   Bhui-neemâ, since the plant, though much smaller in size, shows similar appearance and has bitter taste as that of Neem (Azadirachta indica). Incidentally, the genus Andrographis consists of 28 species of small annual shrubs essentially distributed in tropical Asia. Only a few species are medicinal, of which A. paniculata is the most popular.

Uses of Kalmegh
Kalmegh has been used for liver complaints and fevers and as an anti-inflammatory and immunostimulant. In clinical trials, Andrographis extract shortened duration and reduced symptoms of colds.

History
The herb has been used primarily for liver complaints and to reduce fevers in the traditional medicine of India and China, as well as for its bitter tonic properties. A large variety of Indian herbal patent medicines are available in which A. paniculata is a prominent ingredient.

Chemistry
The diterpene lactone andrographolide was first isolated as a major constituent and later characterized as a lactone. Its full structure was determined by Cava’s group in the 1960s, while x-ray crystallography later confirmed the structure. A number of related minor diterpenes and their glycosides have since been identified. Methods of analysis including high pressure liquid chromatography (HPLC), and nuclear magnetic resonance (NMR) have been published. A method for rapid isolation of andrographolide also is available. When callus cultures of the plant were investigated, it was found that andrographolide and the other diterpenes were not produced. Instead, the sesquiterpenes paniculides A-C were found. Other constituents of the plant include various flavones.

Kalmegh Uses and Pharmacology:

It is chiefly used in viral hepatitis, diminished appetite and drug induced liver damage. It is used in loss of appetite in infants.  Andrographis paniculata has been shown to reduce liver damage due to toxins such as alcohol.  It has been demonstrated that Andrographis paniculata can protect the liver from the effects of alcohol if taken prior to consumption.  Research has also linked Andrographis paniculata to increases in immune system activity.  When supplemented with Andrographis paniculata, animals had an increase activity of both their specific and non-specific immune systems.  Andrographis paniculata may be effective in both the prevention and treatment of ailments that range from the common cold to cancer. It has also been shown to help alleviate atherosclerotic narrowing of arteries induced by high cholesterol diets.  This can, in turn, reduce the risk of heart disease and heart attacks, as well as helping the recovery of patients who already suffer from these conditions.  It is useful in burning sensation, wounds, ulcers, chronic bronchitis, leprosy, pruritis, flatulence, colic and diarrhea.

Liver :The aqueous extract of A. paniculata protected mice from liver damage induced by hexachlorocyclohexane, while andrographolide protected rat hepatocytes from damage by acetaminophen. Several isolated Andrographis diterpenes protected mice from liver damage by carbon tetrachloride or tert-butylhydroperoxide. Both the extract and andrographolide induced hepatic drug metabolizing enzymes in rats, although the extract was more effective than the isolated compound. An increase in bile flow was noted with administration of andrographolide to rats and guinea pigs, while it blocked the decrease in bile flow induced by acetaminophen.

Animal data:  Both antigen-specific and nonspecific immune responses in mice were stimulated by andrographolide and an ethanolic extract, although the extract was more potent than andrographolide, suggesting that other constituents also were immunostimulants. 23 Inhibition of passive cutaneous anaphylaxis and mast cell stabilization was observed in studies of the purified diterpenes in rats.

Clinical data: Research reveals no clinical data regarding the use of kalmegh to treat liver complaints.Immunostimulant and anti-infective. A small clinical study found the extract to shorten the duration of common colds and to reduce symptoms. Extracts of Andrographis have shown modest activity in vitro against HIV; however, a phase Ι study of andrographolide showed no effect on viral replication, while adverse effects required interruption of the trial after 6 weeks. Succinoylated derivatives of andrographolide have been studied for their protease inhibitory properties, which were suggested to be involved in the anti-HIV activity in vitro. Activity in antimalarial screens has also been noted for Andrographis extracts.

Other uses

The extract of A. paniculata has been shown to block E. coli enterotoxin-induced secretion in rabbit and guinea pig models of diarrhea. Andrographolide and 3 other related diterpenes were responsible for this action. An ethanol extract of Andrographis reversed elevation in blood glucose caused by streptozotocin in rats. Two purified Andrographis diterpenes stimulated nitric oxide release from cultured human endothelial cells, an effect linked to their hypotensive effect in rats. Several fractions of Andrographis were shown to reduce mean arterial blood pressure in rats, although andrographolide was not active in this model.

A water soluble extract of the plant was reported to delay death from cobra venom in mice, in line with its folk use for snakebite in India. Andrographolide has demonstrated anti-inflammatory effects in several cellular systems, including prevention of phorbol ester-induced reactive oxygen species and N -formyl-methionyl-leucyl-phenylalanine (fMLP)-induced adhesion in rat neutrophils and inhibition of TNF-induced upregulation of intercellular adhesion molecule-1 (ICAM-1) expression and monocyte adhesion. Additionally, Andrographis extract blocked rat vas deferens voltage-gated calcium channels 41 and induced cell differentiation in mouse myeloid leukemia cells, as did several diterpenes from the extract. The diversity of pharmacologic activities observed for extracts of Andrographis and its diterpenes begs the question of pharmacologic specificity, which more studies will clarify.

Toxicology
Kalmegh extracts are not acutely toxic, but the male reproductive toxicology of Andrographis has been studied. Reported infertility in rats led to a subchronic 60-day study in male rats that showed no changes in testicular weight, histology, or testosterone levels. However, detailed studies with purified andrographolide in rats over 48 days have shown decreases in sperm counts and motility, linked to disruption of spermatogenesis.

Black Cohosh: An Effective Natural Remedy for Menopausal Symtpoms

Black cohosh, Black bugbane or Black snakeroot; syn. Actaea racemosa and Cimicifuga racemosa is a member of the family Ranunculaceae, native to eastern North America from the extreme south of Ontario south to central Georgia, and west to Missouri and Arkansas.

It is a glabrous herbaceous perennial plant, growing 0.75-2.5 m tall. The basal leaves are up to 1 m long and broad, tripinnately compound, the leaflets with a coarsely toothed margin. The flowers are produced in late spring and early summer on a tall stem in racemes up to 50 cm long; they have no petals or sepals, only a tight cluster of 55-110 white stamens 5-10 mm long surrounding the white stigma. The flowers have a distinctly sweet smell. The fruit is a dry follicle 5-10 mm long containing several seeds.

Although Blue Cohosh (Caulophyllum thalictroides) is similarly named, it is actually a plant in a separate genus.

Uses:
Black cohosh has been included in herbal compounds or dietary supplements marketed to women as remedies for the symptoms of premenstrual tension, menopause and other gynecological problems. However, a recent study published in Annals of Medicine (December 19, 2006)casts serious doubt on its efficacy. The researchers actually found black cohosh slightly less effective than a placebo and concluded that the herb “shows little potential as an important therapy for relief of vasomotor symptoms.” However, that study used a product that contained 5 mgs of the active component a day whereas the current daily recommended dose of the long-used standard Remifemin contains 2 mgs. The American Botanical Council discusses that study.

It was thought that black cohosh contained estrogen-like chemicals, but recent research suggests that it works by binding to serotonin receptors. Native Americans used black cohosh to treat gynecological disorders and other disorders as well, including sore throats, kidney problems, and even depression.

Black cohosh has been used as an abortifacient.

History and Claims
This herbal goes by many names. These include: Black Cohosh, Cimicifuga Racemosa, Squaw Root, Rattle Snake Root and Black Snake Root. It does NOT go by the name Snake Root, this is an unrelated herbal–Aristolochia Serpentaria. If a woman chooses to use it, she will most likely buy it under its brand name of Remifemin. This comes in drops or tablets.

Black Cohosh has been used by Native Americans, Europeans, and Chinese for centuries.

Native Americans used it for a wide variety of female problems. They used it to restore normal menstrual function, to return a woman to her pre-pregnancy state after birth, and for menopause. It has been described as “hormone-like” and a mild euphoric by some. It has scientific evidence to support its effect on improving blood pressure. In addition, it has many claims that were not investigated for the purposes of this article. These claims include: its use as an astringent, an anti-diarrheal, a water pill, and a cough suppressant/expectorant. It is also believed to improve heart rate, increase sweating, and be an antidote to rattlesnake poison.

Garden use:
Cimicifuga racemosa grows in dependably moist, fairly heavy soil. It bears tall tapering racemes of white midsummer flowers on wiry black-purple stems, whose mildly unpleasant, medicinal smell at close range gives it the common name ‘Bugbane’. The drying seed heads stay handsome in the garden for many weeks. Its burgundy, deeply cut leaves add interest to American gardens, wherever summer heat and drought do not make it die back, which make it a popular garden perennial.
Chemistry and Pharmacology of Black Cohosh (Cimicifuga Racemosa or Reminfemin):
It is classified as a phytoestrogen. It is from the plant family N.O. Ranunculaceae. The active components of the natural form include: acetin, cimicifugioside, acetylacteal, 27-deoxyactin, cimigenol, deoxyacetylateal. The processed forms also include isoterulic and salicylic acid (the main ingredient is aspirin).

It is not known exactly how it works. But studies on animals and women have shown that its various components act on the hormonal system in at various levels. Some do bind to estrogen receptors in the body. It causes LH, but not FSH suppression. (Estrogens cause both to be suppresed, when they both rise they are signs of menopause) . Some studies have found it to cause an increase in vaginal epithelium that is superior to estrogen replacment.

The Scientific Evidence For Black Cohosh (Cimicifuga Racemosa or Reminfemin) For Menopausal Symptom Relief:
Most of the studies done used the Remifemin version of the herb. Many of the studies were done by the manufacturer of Remifemin.

Studies compared Black Cohosh to Estrogen Replacement (for physical and psychological symptoms) and valium (for psychological only), and to women not taking anything. In more than one study, black cohosh has been found to improve a myriad of physical and mood symptoms in the menopausal women who took it. Women who took it did as well as those who took estrogen or valium, and better than those who took nothing.

Black Cohosh was not found to cause any of the side effects commonly associated with hormone replacement. While it is reported that nausea and vomiting can be due to overdose, no evidence of discontinuation due to side effects was found. Over 93% of women in one study reported no side effects.

Black Cohosh is not associated with increased breast cancer rates, nor dysfunctional uterine bleeding. It is not habit-forming. It does not interact with other medications. It is considered non-toxic.
Side effects:
Black cohosh should not be used during pregnancy or lactation. There is a case report of neurological complications in a postterm baby after labor induction with a mixture of black cohosh and blue cohosh (Caullophylum thalictroides) during a home birth. Other cases of adverse outcomes experienced by neonates born to women who reportedly used blue cohosh to induce labor have been published in peer-reviewed journals.

Black cohosh produces endometrial stimulation. Since black cohosh increases blood flow to the pelvic area, its use is not recommended during menses as it may increase or prolong bleeding. Because of the possible estrogenic action, it should be used with caution after six months. Additionally, black cohosh contains tannin, which inhibits iron absorption. This, considered with possible effects of enhancing menstrual bleeding, gives good cause to monitor iron stores when taking black cohosh.

No studies have been published on long-term safety in humans. However concerns arise that, in humans, because of its estrogen-like effects, long-term use may promote metastasis of estrogen-sensitive cancer tissue via stimulation of cells in the endometrium or breast. Black cohosh increased metastasis of cancer to the lungs (but did not cause an increased incidence of breast cancer) in an experiment done on mice (which was never published and the lung tumors were never biopsied, just observed.)

The liver damage reported in a few individuals using black cohosh has been severe, but large numbers of women have taken the herb for years without reporting adverse health effects. While studies of black cohosh have not proven that the herb causes liver damage, Australia has added a warning to the label of all products containing black cohosh, stating that it may cause harm to the liver of some individuals and should not be used without medical supervision.

Aside from pregnancy complications, increased menstrual bleeding, anemia, and rare but serious hepatic dysfunction, reported direct side-effects also include dizziness, diarrhea, nausea, and occasional gastric discomfort. Additional possible side effects include headaches, seizures, vomiting, sweating, constipation, low blood pressure, slow heartbeats, weight gain, and loss of bone mass (leading to osteoporosis).

Using Black Cohosh (Cimicifuga Racemosa or Reminfemin) For Menopausal Symptom Relief:
As mentioned Remifemin is the processed and packaged version and the one most studied. It comes in liquid (take 40 drops, two times a day) or tablets (take 2 tablets twice a day). Other regimens include: the fluid extract U.S.P — 15 to 30 drops, the fluid extract B.P. — 5 to 30 drops, tincture U.S.P. — 1 drachm, tincture B.P. — 15 to 60 drops, Cimicifugin — 1 to 6 grains, and powdered extract, U.S.P. — 4 grains.

Results have been found in as little as four weeks of use, but six to eight was more common. Twelve weeks is the point were a woman might discontinue the herb if it hasn’t worked by that time. While there is no documentation of adverse effects with long-term use, this practice has not been closely studied. Therefore, some have suggested a 6 month limit on its usage.

Habitat :The laurel tree grows all over the Mediterranean region, with Turkey one of the main exporters. Due to poor frost-resistance, laurel is not generally native to more Northern regions, although cultivars are frequently found in cities and other warmer locations.
Used Part: Leaves. Industrially, laurel oil is prepared from the fruits, which may also be used as a spice.

Etymology: The botanical genus name laurus and English laurel are derived from the Latin name of the tree, laurus. Almost all languages of Europe have related names, e.g. German lorbeer, Swedish lager, Italian alloro and Portuguese louro. The origin of laurus is not known with certainty but it is neither related to Latin laus “praise” nor loaned from Greek.
In the Ancient Greek tongue, the plant was named daphn? after the nymph Daphne who turned into a laurel shrub to escape the persecution of Apollo. Bay leaves are called dafin in Romanian, dafni in Modern Greek and defne in Turkish. There are also names meaning “leaves of Daphne”, such as Hebrew aley Daphna and Bulgarian Dafinov list.
Species name nobilis is Latin for “noble”. The English term bay leaf (Middle English baye, Old French baie) derives from the Latin bacca “berry”, referring to the fruits.

The bay tree is indigenous to Asia Minor, from where it spread to the Mediterranean and then to other countries with similar climates. According to legend the Delphi oracle chewed bay leaves, or sniffed the smoke of burning leaves to promote her visionary trances. Bay, or laurel, was famed in ancient Greece and Rome. Emperors, heroes and poets wore wreaths of laurel leaves. The Greek word for laurel is dhafni, named for the myth of the nymph Daphne, who was changed into a laurel tree by Gaea, who transformed her to help her escape Apollo’s attempted rape.

Description
The bay leaf is oval, pointed and smooth, 2.5 – 8 cm (1 to 3 in) long. When fresh, the leaves are shiny and dark green on top with lighter undersides. When dried the bay leaf is a matte olive green.
Bouquet: Warm and quite pungent when broken and the aromatic oils are released.
Flavour: Slightly bitter and strongly aromatic.

Preparation and Storage:    Dried leaves should be whole and olive green. Brown leaves will have lost their flavour. Whole leaves are often used in cooking and crushed or ground leaves can be used for extra strength. Kept out of light in airtight containers the whole leave will retain flavour for over two years.

Uses:  Bay leaves are widely used throughout the world. It may be best known in bouquets garnis or used similarly in soups, sauces, stews, daubes and courts-bouillon’s, an appropriate seasoning for fish, meat and poultry. Bay leaf is often included as a pickling spice.

Bay leaves were considered holy and were associated with Apollo in Ancient Greece. Winners of the Olympic Games were originally decorated with a wreath of olive twigs, but this changed to laurel after the Pythian Games, conducted in honour of Apollo. Roman Emperors made use of laurel wreaths as a symbol of Apollo and bay leaves were a popular spice in Roman cookery.
Today, bay leaves are a common flavouring in all Western countries and are used for soups, stews, sauces, pickles and sausages. In addition, several fish dishes profit greatly from bay leaves. In contrast to the majority of leaf spices, bay leaves can be cooked for prolonged time without much loss of aroma. Fresh or dried bay leaves frequently appear in bouquet garni.
Fresh bay leaves are very strongly aromatic but also bitter. The bitterness is significantly reduced and flavour improved by quick drying, after plucking and sorting without exposure to sunlight. High-quality bay leaves are recognised by their strong aroma and their bright green colour. Bay leaves can be stored for a year, after which they lose their fragrance, turn brown and taste bitter.
The laurel fruits are less known, although they appear as part of commercial spice mixtures. Because of their robust taste, they fit best to strong sauces and gravies and are excellent with venison (together with juniper). Because of the popularity of bay leaves in the West, many exotic leaf spices are commonly known as “bay leaves” although not botanically or culinarily related. In Asia, the Indian bay leaf comes from a relative of cinnamon native to the Himalayas and Indonesian bay leaves stem from a tree of the myrtle family.
There are other “bay leaves” in the West including the aromatic Californian bay leaf, which is rarely found because of potential health hazards, and Mexican bay leaf which has little commercial value. West Indian bay leaves, which stem from a close relative of allspice, yield West Indian bay oil.

Medicinal Properties
In the Middle Ages it was believed to induce abortions and to have many magical qualities. It was once used to keep moths away, owing to the leafs lauric acid content which gives it insecticidal properties. Bay leaf has many properties which make it useful for treating high blood sugar, migraine headaches, bacterial and fungal infections, and gastric ulcers. Bay leaves and berries have been used for their astringent, carminative, diaphoretic, digestive, diuretic, emetic and stomachic properties. Bay Oil, or Oil of Bays (Oleum Lauri) is used in liniments for bruising and sprains. Bay leaf has been used as an herbal remedy for headaches. It contains compounds called parthenolides, which have proven useful in the treatment of migraines. Bay leaf has also been shown to help the body process insulin more efficiently, which leads to lower blood sugar levels.It has also been used to reduce the effects of stomach ulcers. Bay Leaf contains eugenol, which has anti-inflammatory and anti-oxidant properties. Bay leaf is also an anti-fungal and anti-bacterial. Bay Leaf has also been used to treat rheumatism, amenorrhea, and colic.

Bay LeafAqueous extracts of bay laurel can also be used as astringents and even as a reasonable salve for open wounds.

In massage therapy, the essential oil of bay laurel is reputed to alleviate arthritis and rheumatism, while in aromatherapy, it is used to treat earaches and high blood pressure. Description Of Plant :   Grown successfully in Mediterranean-like climates, the Bay is a hardy evergreen shrub that grows wild or cultivated. In warm areas it can grow as high as 18 m (60 ft). Inconspicuous white flowers arrive in clusters, in May. The fruits are small, red-blue single-seeded berries that later turn black about 12 mm (1/2 in) in size. Common Names: The word liquorice / licorice is derived (via the Old French licoresse) from the Greek   name  glukurrhiza, meaning “sweet root”,  glukus means “sweet”   and rhiza   means “root”.   It is called as adhimadhuram  in Tamil, irattimadhuram  in Malayalam, yastimadhu  in Sanskrit and in Bengali, mulethi  in Hindi, Vel Mee  in Sinhalese and jethimadh  in Gujarati language.

Description:
It is a herbaceous perennial, growing to 1 m in height, with pinnate leaves about 7–15 cm (3–6 in) long, with 9–17 leaflets. The flowers are 0.8–1.2 cm (1/3 to 1/2 in) long, purple to pale whitish blue, produced in a loose inflorescence. The fruit is an oblong pod, 2–3 cm (1 in) long, containing several seeds. The roots are stoloniferous.

Other herbs and spices of similar flavour include Anise, star anise, tarragon, and fennel.The taste of licorice is similar to that of aniseed and fennel, and thus licorice can be considered to be a spice. However, it has a long history as being of value as an herbal remedy, and it is therefore often considered to be an herb rather than a spice. The licorice plant is a member of the bean family, but its seed pods are hair free in contrast to similar plants. Its roots contain the very sweet, characteristic juice, and as a tribute to this, the plant is named Glycyrrhiza glabra   meaning the sweet root with hairless seed pods. Corruption of the Greek name glyrrhiza led to the other official name, Liquiritra officinalis; the medieval name was gliquiricia from which the name licorice or liquorice is obtained. The sweetest sources of licorice come from plants growing in Spain and Italy, although it is probable that the original plant came from Russia or China. Spanish licorice was brought to England, and it became an important product in the town of Pontefract.
Cultivation and uses
Liquorice is grown as a root crop mainly in southern Europe. Very little commercial liquorice is grown in North America, where it is replaced by a related native species, American Licorice (G. lepidota), which has similar uses.

Liquorice extract is produced by boiling liquorice root and subsequently evaporating most of the water (in fact, the word ‘liquorice’ is derived from the Ancient Greek words for ‘sweet root’). Liquorice extract is traded both in solid and syrup form. Its active principle is glycyrrhizin, a sweetener more than 50 times as sweet as sucrose which also has pharmaceutical effects. The related Chinese Liquorice (G. uralensis), which is used extensively in traditional Chinese medicine, contains this chemical in much greater concentration.
The pleasant quality of true licorice led to it being incorporated into many traditional Chinese remedies, where it was credited with harmonizing the body’s response when it was exposed to the contrasting actions of other herbs in the formula. It has also been utilized in Chinese spice mixtures, and is often incorporated in desserts, confectionaries, candies and alcoholic drinks. Further uses include its addition to tobaccos and snuff. Currently, it is included in many simple medications, especially for pharyngitis and cough. Traditionally, the list of indications is very extensive, and includes infections, aphthous ulcers, skin disorders, rheumatic and other inflammatory diseases, asthma, hepatic and gastroduodenal diseases.

There is no doubt that glycyrrhizin has an aldosterone like effect, and excessive intake of licorice can cause hypokalemia and hypertension. However, the claimed value of licorice products in treating hypo-adrenal states is disputed. Other hormonal effects have been suggested, including impairment of gonadal function.

Thus, this ancient herbal spice has dubious medical values that are complemented by its undoubted toxic potential. It may surprise many people in the U.S. to know that familiar licorice candy is usually not true licorice, since the flavor is generally provided by aniseed, molasses and corn syrup. Eaters of typical U.S. licorice products may put on weight, but this will not be explainable by the hormonal effects of the compounds found in true licorice.
Liquorice flavour is found in a wide variety of liquorice candies. The most popular in the United Kingdom are Liquorice allsorts. In continental Europe, however, far stronger, saltier candies are preferred. It should be noted, though, that in most of these candies the taste is reinforced by aniseed oil, and the actual content of liquorice is quite low. Additionally, liquorice is found in some soft drinks (such as root beer), and is in some herbal teas where it provides a sweet aftertaste. The flavour is common in medicines to disguise unpleasant flavours.

Liquorice is popular in Italy, particularly in the South, in its natural form. The root of the plant is simply dug up, washed and chewed as mouth-freshener. Throughout Italy unsweetened liquorice is consumed in the form of small black pieces made only from 100% pure liquorice extract; the taste is bitter and intense. Liquorice is also very popular in Syria where it is sold as a drink. Dried liquorice root can be chewed as a sweet. According to the US Department of Agriculture Food Database, black licorice contains approximately 100 calories per ounce Chinese cuisine uses liquorice as a culinary spice for savoury foods. It is often employed to flavour broths and foods simmered in soy sauce.

Medicinal Properties:Licorice contains several active phytomedicines. The main one is the saponin-like triterpene glycoside, glycyrrhizin (also called glycyrrhizic acid and glycyrrhizinic acid), which is much sweeter than sugar. This compound is hydrolyzed in the bowel to glycyrrhetic (or glycyrrhetinic) acid, which is also called enoxolone. The latter has been marketed as a succinate derivative, carbenoxolone, which is prescribed in Europe and Japan as a treatment for gastric ulcers, although its value is uncertain. Licorice flavonoids are believed to have antioxidant properties. Additional effects of glycyrrhizin include the surprising finding in Japan that this agents helps improve liver function in hepatitis C. Similarly, some reports demonstrate improvement in AIDS. All such studies raise unanswered questions as to the true value of licorice in the modern era.
Liquorice plays an important part in unani as well as Ayurvedic system of medicines. It is mentioned as one of principal drugs by ‘Sushruta’ one of the prominent Sage physician of Vedic times. Liquorice has been used for its rejuvenating properties especially for longer periods. In earlier times, it was used to quench thirst, alleviate feverishness, pain, cough & distress of breathing. Liquorice is also a popular flavouring agent. It is tall erect herb growing upto about 1.5 metres in height. It has compound leaves lilac or violet flowers flat fruit & and is densely covered with small apineous out growths. The dried roots & under ground stems or rhizomes of the plant constitute the drug. Liquorice is cultivated in southern Europe, Syria, Iraq, Turkey, Greece & Russia. In India, it is cultivated in northwest parts of the country and large quantities are imported for medicinal purposes.

CURATIVE PROPERTIES: –
The root of the plant is a laxative & expectorant. When externally used it has a soothing effect on the skin. Powdered liquorice is very popular in allopathic medicine.

STOMACH DISORDERS:
Liquorice is an excellent remedy for relieving pain discomfort & other symptoms caused by acrid matter in the stomach. It should be taken in powder form.

SORE THROAT: –

The herb is a recognised home remedy for sore throat. A small piece of raw liquorice if chewed or sucked provides relief by soothing the inflammation.
Historical View : Liquorice root possesses demulcent properties: and hence is useful to allay cough, and in catarrhal affections. It has also been found serviceable in irritable conditions of the mucous membrane of the urinary organs, etc.”

Other Uses:
Tobacco:
Most liquorice is used as a flavouring agent for tobacco. For example, M&F Worldwide reported in 2011 that about 63% of its liquorice product sales are to the worldwide tobacco industry for use as tobacco flavour enhancing and moistening agents in the manufacture of American blend cigarettes, moist snuff, chewing tobacco, and pipe tobacco  American blend cigarettes made up a larger portion of worldwide tobacco consumption in earlier years,  and the percentage of liquorice products used by the tobacco industry was higher in the past. M&F Worldwide sold approximately 73% of its liquorice products to the tobacco industry in 2005.  A consultant to M&F Worldwide’s predecessor company stated in 1975 that it was believed that well over 90% of the total production of liquorice extract and its derivatives found its way into tobacco products.

Liquorice provides tobacco products with a natural sweetness and a distinctive flavour that blends readily with the natural and imitation flavouring components employed in the tobacco industry. It represses harshness and is not detectable as liquorice by the consumer. Tobacco flavourings such as liquorice also make it easier to inhale the smoke by creating bronchodilators, which open up the lungs.  Chewing tobacco requires substantially higher levels of liquorice extract as emphasis on the sweet flavour appears highly desirable

For many people in countries where quality ice cream is readily available, vanilla is the most popular of the non-pungent spices. It has been regarded as one of the most expensive spices along with saffron, cardamon and green peppercorns. The cost of vanilla reflects its historic importance as a flavor used in the royal drinks of the Mayans and Aztecs that were based on chocolate. The Aztecs called vanilla tlilxochitl, and they used it with chile peppers to flavor their drink.

Vanilla is found in the seeds of the orchid vine, Vanilla planifolia (V. fragrans), which is native to Mexico. The Spaniards likened the bean pods to a little sheath or vaina, which is derived from the similar Latin word, vagina! Obtaining the flavor can be a several month long process, resulting from slowly fermenting the beans, which contain many small seeds; the ground-up bean is then used in similar fashion to coffee. People who enjoy the strong vanilla taste want to use freshly cured bean, while others accept the commercial extract. True vanilla in ice cream contains tiny dark flecks resulting from the presence of the seeds. However, the vanilla flavor, which is mainly due to vanillin, can be readily chemically synthesized from eugenol or guaiacol, or from lignin derived from tar, wood, or tonka beans. This product lacks the quality of the natural vanilla flavor that develops during the curing of the best beans when glucosides are converted to vanillic aldehyde, which is vanillin, since other aromatic chemicals are also produced.

Vanilla trees are grown in Mexico, Central America (Guatemala and especially Costa Rica), and in some Caribbean islands (especially Jamaica). However, it is difficult to grow since it is only pollinated by native bees and hummingbirds. It requires artificial fertilization outside its natural habitat, but it can be cultivated through the use of cuttings. Following its introduction to the French island of Reunion in the Indian Ocean, a method of hand pollination was introduced in 1841. Reunion is still an important site of vanilla production; the variety is called Bourbon vanilla, after the former name of the island. Madagascar is now the major producer of Bourbon vanilla.

When vanilla became popular in 17th century Europe, it was used for many indications, varying from stomach ulcers to sedation. As was the case with many spices, it was extolled as an aphrodisiac. Today, it may fulfill its latter function when used in high quality baked goods, confectionary and desserts, although most users regard it more prosaically as a delicious flavor that may help digestion. Vanilla is used to flavor tobacco and as a fragrance in the cosmetic industry. It is of interest that sensitive workers in the vanilla industry may develop vanillism, resulting in headaches and skin rashes.

Artificial vanilla (containing vanillin and ethylvanillin) is acceptable to most tastes, and therefore the export of true vanilla may continue to decline, since the culture and manufacture of the quality product is expensive and relatively non-competitive. Moreover, its value as an exotic medicine is no longer accepted. Thus the role of the vanilla bean has declined in significance, with over 95% of the world’s supply of vanilla flavor being synthetic.

Medicinal Properties:
Vanillin is in the class of vanilloids, that includes – surprisingly – capsaicin (8-methy-N-vanillyl noneamide) from chile pepper and eugenol from cloves, cinnamon and other spices, and zingerone from ginger. The vanilloid receptors of the central and peripheral nervous systems bind with these compounds, resulting in different sensory effects. Thus, capsaicin can cause a burning sensation while eugenol results in mild anesthesia; vanillin itself is neutral.
